BLACKBERRY COBBLER
Pie is nice, but it's not as easy as cobbler. This shortcut method comes together in less than 5 minutes. It is also a cinch to personalize. You can substitute peaches, or combine stone fruits and berries. Serve with ice cream instead of whipped cream. The possibilities are endless! From Real Simple Magazine September 2006.

Steps:
- Heat oven to 375 degrees.
- Butter an 8-inch square baking dish. Add the berries and 1-1/2 T. of the sugar to dish and toss.
- In a large bowl, combine the pancake mix, milk, and eggs until no lumps remain. Pour the batter over the berries.
- Bake until the crust is golden and a toothpick inserted in the center comes out clean, about 30 minutes. Remove from oven. Let cool for 5 minutes.
- Sprinkle with the remaining sugar and serve with a dollop of whipped cream.

- Spray bottom of slow cooker with cooking spray.
- Peel and slice apples. Place them in the bottom of a slow cooker.
- In a bowl, add the pancake mix, oats, brown sugar, cinnamon, nutmeg, ground cloves, salt, and lemon juice, and stir to combine.
- Pour pancake and oat mixture over apples.
- Drizzle the melted butter over the top of the pancake and oat mixture.
- Cook on high for 2½ hours. For a crispy top, crack the lid for the last 15-30 minutes of cooking.
- Serve with ice cream, if desired.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.
