2 (6 ounce) Yellowfin tuna steaks (about 1inch thick)
1/4 teaspoon salt
1/8 teaspoon black pepper
4 cups napa (Chinese) cabbage, thinly sliced
1 cup cucumber, thinly sliced
1/2 cup matchstick-cut carrots
1/3 cup red onion, thinly sliced
1 navel orange, sectioned and chopped
1 tablespoon sugar
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice
2 tablespoons rice vinegar
1/2 teaspoon dark sesame oil
1/4 teaspoon Sambal oelek (ground fresh chile paste) or Sriracha (hot chile sauce, such as Huy Fong)

Steps:

  • Heat a grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper. Add fish to pan; cook 2 minutes on each side or until desired degree of doneness. Transfer to a cutting board. Combine cabbage and next 4 ingredients (through orange) in a large bowl. Combine sugar and remaining ingredients in a small bowl, stirring well with a whisk. Reserve 1 tablespoon dressing. Drizzle remaining dressing over salad; toss gently to coat. Divide salad mixture evenly between 2 plates. Cut each tuna steak across the grain into 1/4-inch slices; arrange over salad mixture. Drizzle 1 1/2 teaspoons reserved dressing over each serving.

1/2 pound tuna steaks
1 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
3 cups fresh baby spinach
1/2 cup grape tomatoes
1/3 cup frozen shelled edamame, thawed
1/4 cup frozen corn, thawed
CITRUS VINAIGRETTE:
1 tablespoon olive oil
1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons white wine vinegar
1-1/2 teaspoons honey
1-1/2 teaspoons lime juice
1-1/2 teaspoons lemon juice
1-1/2 teaspoons orange juice
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Brush tuna with oil; sprinkle with salt and pepper. Grill, covered, over high heat or broil 3-4 in. from the heat for 3-4 minutes on each side for medium-rare or until slightly pink in the center. Let stand for 5 minutes. , Meanwhile, in a large bowl, combine the spinach, tomatoes, edamame and corn. 1 ahi tuna steak, 6 ounces
2 teaspoons five-spice powder, available on spice aisle
1 teaspoon grill seasoning, such as Montreal Steak Seasoning, or salt and coarse pepper
Cooking spray or vegetable oil, for brushing the grill pan
5 ounces, half a sack, mixed prewashed baby salad greens
2 radishes, sliced
1/4 European cucumber, thinly sliced
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar or rice vinegar
1 tablespoon soy sauce
3 tablespoons -virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
  • Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.

2 tuna steaks, 8 ounces each
1 tablespoon olive oil, plus 1/2 cup
Salt and freshly ground pepper
1/2 small red onion, finely chopped
1/2 cup chopped Sweet 100 tomatoes, or very small grape tomatoes
1 tablespoon anchovy paste
1/4 cup fresh lemon juice
3 to 4 tablespoons Dijon mustard
Pinch red pepper
3 tablespoons capers, drained
12 basil leaves, cut into chiffonade
1 French baguette

Steps:

  • Heat grill to high. Brush the tuna steaks with the 1 tablespoon of oil and season and salt and pepper. Grill for 3 to 4 minutes on both sides or until just cooked through. Let rest for 5 minutes then flake with a fork. Transfer to a bowl with the red onion and tomatoes.
  • Whisk together the anchovy paste, lemon juice, mustard, red pepper, and 1/2 cup olive oil in a small bowl. Add the capers and then season with salt, to taste, if necessary. Pour the dressing over the tuna, add the basil, and gently mix to combine.
  • Place the baguette on the grill, close the cover and let heat through, about 3 to 4 minutes. Remove from the grill and slice lengthwise. Remove some of the inside of the bread. Spread the tuna mixture evenly over the bottom half of the bread, place the top bread on, and press down firmly on the sandwich. Wrap the sandwich in foil and place a heavy pan on top. Let stand 30 minutes before serving and then cut into 4 pieces.

2 line-caught yellowfin tuna steaks , about 140g/5oz each
1 tbsp olive oil
2 lemons wedges
2 handfuls (50g/2oz) flat-leaf parsley , very roughly chopped
2 shallots , finely sliced
1 tbsp capers , roughly chopped
small handful green olives , stoned and roughly chopped
6 tbsp olive oil
1 tbsp Dijon mustard
juice of half a lemon

Steps:

  • First make up the parsley salad by mixing all the ingredients together and stirring until completely combined. Set aside while you cook the tuna.
  • Heat a griddle or frying pan until practically smoking. Rub the tuna with the olive oil and season with salt and pepper. Griddle the tuna steaks for 1 min on each side, turning them 90 degrees after 30 secs if you want criss-cross patterns. This will give you tuna that is medium-rare, but if you like it well-cooked give it a few more mins on each side. It's important not to move the fish around the pan before it's seared as it will stick and break up. The steak will release itself from the pan once it's ready to be turned.
  • Serve each steak with half the salad, a lemon wedge for squeezing over and a few new potatoes, if you like.

¼ cup soy sauce
¼ cup extra-virgin olive oil
2 tablespoons lemon juice
2 teaspoons Asian (toasted) sesame oil
2 teaspoons molasses
1 teaspoon cayenne pepper, or more to taste
6 thin slices fresh ginger, minced
2 cloves garlic, minced
2 1-inch-thick tuna steaks, thawed

Steps:

  • Mix soy sauce, olive oil, lemon juice, sesame oil, molasses, cayenne pepper, ginger, and garlic together in a bowl.
  • Place tuna steaks in a large resealable bag or airtight container; pour marinade over steaks. Marinate steaks at room temperature for 20 minutes.

2 fresh tuna steaks, about 175g/6oz each
1 tbsp olive oil
1 tbsp lemon juice
1 large garlic clove , crushed
1 tbsp chopped rosemary leaves
410g can cannellini bean , drained and rinsed
8 cherry tomatoes , quartered
½ small red onion , thinly sliced
50g bag rocket
2 tbsp extra-virgin olive oil
1 tbsp lemon juice
1 tsp wholegrain mustard
1 tsp clear honey

Steps:

  • Put the tuna in a shallow dish, drizzle over the oil and lemon juice, scatter over the garlic and rosemary. Turn the tuna so it's well coated. Cover and put in the fridge for 30 minutes (you can leave it for longer if convenient).
  • Tip the beans into a large bowl. Toss in the tomatoes, onion and rocket. Put the oil, lemon juice, mustard, honey and salt and pepper in a screw top jar. Seal and put aside.
  • Heat a cast iron ridged grill pan or frying pan until very hot. Cook the tuna on a moderately high heat for 2 minutes each side - don't overcook or it will be dry.
  • Shake the dressing. Pour over the salad. Mix. Serve the salad with the tuna on top.

2 tablespoons peanut oil
1 tablespoon sesame oil
1 tablespoon fish sauce
2 teaspoons soy sauce
1 lime, juice of
1/2 cup fresh basil, torn
2 tablespoons mint leaves, chopped
2 small fresh red chilies, deseeded and chopped
2 garlic cloves, roughly chopped
2 stalks lemongrass
5 cm piece fresh ginger, peeled and chopped
4 tuna steaks

Steps:

  • Combine all ingredients except tuna in a non-metal bowl and mix well.
  • Add tuna and coat with marinade.
  • Chill 2 hours or overnight.
  • Remove tuna from marinade and cook over hot coals or gas barbecue on high 1-2 minutes on each side (for rare) or until desired done-ness. Serve immediately.
