Here's what you need: boneless, skinless chicken breasts, olive oil, salt, pepper, garlic powder, oregano, fresh mozzarella cheese, tomato, fresh basil leaf, dark balsamic vinegar, honey

2 boneless, skinless chicken breasts
olive oil, to taste
salt, to taste
pepper, to taste
garlic powder, to taste
oregano, to taste
1 ball fresh mozzarella cheese
1 tomato, medium
5 leaves fresh basil leaf
1 cup dark balsamic vinegar, inexpensive
⅓ cup honey

Steps:

  • Preheat oven to 400°F (200°C).
  • On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano.
  • Bake for 30 minutes, or until cooked through and juices run clear.
  • While the chicken is in the oven, combine the balsamic vinegar and honey in a sauce pot and simmer, stirring occasionally.
  • NOTE: It should take about 20 minutes for the mixture to reduce.
  • Once the glaze has reached your desired thickness, remove it from the heat and set aside.
  • Remove the chicken from the oven and top with slices of mozzarella and tomato.
  • Broil for 8-10 minutes, or until the cheese is melty and the tomatoes are slightly charred.
  • While the chicken is broiling, you can chiffonade (cut into thin strips) the basil.
  • Drizzle the balsamic glaze over the chicken and top with basil.

1 package (6 ounces) instant long grain and wild rice mix
4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt

2 tablespoons balsamic vinegar
1 tablespoon honey
2 teaspoons dried basil

Steps:

  • Prepare rice according to package directions. Meanwhile, sprinkle chicken with salt and pepper. In a large skillet, cook chicken in oil over medium-high heat for 5 minutes on each side or until a thermometer reads 170°., Combine the vinegar, honey and basil; pour over chicken. 4 (4 ounce) boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons chopped fresh basil or 2 teaspoons dried basil

Steps:

  • Preheat broiler and set rack six inches from heat.
  • Sprinkle both sides of chicken with salt and pepper.
  • Spray a broiler pan with cooking spray.
  • Add chicken; broil 5 minutes or until lightly browned.
  • Turn chicken over; broil an additional 6 minutes or until chicken is done through.
  • Meanwhile, in a small saucepan, stir together vinegar, honey and basil and heat through.

1 teaspoon coriander seeds, cracked with a mortar and pestle or the flat side of a chef's knife (optional)

Steps:

  • Heat oven to 425 degrees. Pat chicken dry with paper towels, and season all over with 1 teaspoon salt and 1/2 teaspoon black pepper. Place zucchini on a rimmed sheet pan, and season with a little more salt and pepper.
  • In a small bowl, combine garlic, mint or oregano, coriander (if using) and red-pepper flakes. Whisk in oil. I was just about to post this recipe and one other came up as nearly the same, although that one is broiled and missing the olive oil. It is a very good dish and the sauce works well with rice. I should try it broiled too, but I don't know if the pan sauce would be as good without the catch from the chicken. The original WW recipe is this one, plus 2 tbs olive oil.
