A new twist on stuffed peppers! In this version, bell pepper rings are filled with a tasty meatloaf mixture, browned in a pan, then baked until cooked through.

Number Of Ingredients 16

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 pound ground beef
2 slices white bread, cubed
OR
15 saltine crackers
2 cloves garlic, minced
1 egg
1 small onion, chopped
1 dash Worcestershire sauce
1 dash hot sauce
salt and freshly ground black pepper
1 tablespoon oil
vegetable oil, for frying
ketchup or tomato sauce

Steps:

  • Preheat oven to 400 degrees F. Remove core and seeds from peppers. Slice into 1 inch rings and place on nonstick baking sheet. You should get about 3 rings per pepper. In a large bowl, mix together beef, bread or crackers, garlic, egg, onion, Worcestershire sauce, hot sauce, and season with salt and pepper. Press meatloaf mixture evenly into pepper rings. In a skillet over medium-high heat, add oil. Saute meatloaf rings on both sides until golden brown, about 5 minutes per side. Transfer the meatloaf rings to a baking sheet. Add your ketchup or tomato sauce on top of your meatloaf rings and bake until cooked through, 20-25 minutes.

Number Of Ingredients 20

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon cumin
1 egg
1/4 cup milk
Four 3/4-inch-thick slices cold meatloaf, such as Turkey Meatloaf
Coconut oil, for frying
8 slices raisin-pecan bread
2 tablespoons mayonnaise
Iceberg lettuce leaves, for serving
6 tablespoons Green Tomato Jam, recipe follows
1 pound green tomatoes, quartered and cored
4 cloves garlic
1 1/2 cups sugar
1/2 cup rice wine vinegar
3 tablespoons soy sauce
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger

Steps:

  • You will need two 8-by-8-inch pans or similar. In the first, combine the flour, baking powder, pepper, salt and cumin. In the second, whisk together the egg and milk.
  • Dip each meatloaf slice into the egg mixture; shake off any excess. Then coat in the flour mixture; again, shake off the excess. Place on a wire rack.
  • Fill a large cast-iron skillet with 1/4 inch of coconut oil. Heat over medium heat until the oil reaches 325 degrees F. Add the dredged meatloaf; cook until golden brown on both sides, about 4 minutes per side. Drain on a wire rack and let cool.
  • Build the sandwich in this order: bread, mayonnaise, meatloaf, lettuce, green tomato jam, bread, smile! Just kidding¿a smile isn't in the recipe; however, if you make it to this step, you will surely provide the smile!
  • Add the green tomatoes and garlic to a food processor. Blend to a paste, then transfer to a medium saucepan along with the sugar, rice wine vinegar, soy sauce, cardamom and ginger. Stir to combine. Cook over medium-low heat until the mixture begins to look thick and glossy, about 35 minutes; stir frequently with a heat-resistant spatula to keep the jam from scorching on the bottom. Remove from the heat and let cool. Store, covered, in the refrigerator for up to 2 weeks.

1 green bell pepper
1 red bell pepper
1 orange or yellow bell pepper
1/2 lb ground beef
1/2 lb ground veal or, ground chicken or turkey
2 slice white bread cubed
1 can(s) 28 oz crushed tomatoes with basil
2 clove minced garlic
1 egg
1 small onion choppped
1 Tbsp dried sage
1 tsp worcestershire sauce
1 dash(es) red pepper flakes
1 tsp hot sauce
salt and pepper to taste
1 tsp smoked paprika
left over tops and bottoms of peppers
2 c cheddar cheese, shredded
1/4 c parmigiano-reggiano, grated
olive oil

Steps:

  • 1. Preheat oven to 400 degrees
  • 2. Wash peppers. Cut top and bottom of each pepper off and set aside. Remove core and seeds.
  • 3. Cut each peppers into 3 (1") rings, place aside.
  • 4. In large bowl, add all ingredients (except crushed tomatoes - only put in 1/2 cup in bowl and set the rest aside.) Add pepper tops & bottoms (chopped)in bowl.
  • 5. Heat about 1-2 tbsps of olive oil in frying pan. (Must be a pan that can be put in oven at 400 degrees)
  • 6. Take one ring of pepper and stuff with meat. Continue till all rings are stuffed.
  • 7. Add to heated oil and cook for 5 minutes on each side till browned. All rings should fit in this pan.
  • 8. Put in remaining crushed tomatoes now and bring to boil.
  • 9. Add salt & pepper. (If sauce too thick, add a little water) Do not want soupy
  • 10. Put in oven covered for 20-30 minutes till heated thru and cooked
  • 11. Serve over mashed potatoes, rice, or pasta.
  • 12. If reheating as leftovers, you may want to add a 14 oz can of diced or crushed tomatoes

Delicious individual slices of meatloaf panfried inside pepper rings then finished in a rich tomatoe sauce. From Cooking for Real with Sunny Anderson. I've posted the recipe as found on the website, but I usually use pork, beef and turkey, make a larger amount and need more peppers. I also zip up the sauce with some red pepper flakes as well. I have not tried the fried sage leaves yet but it is still a Great meal and even better leftovers!

  • In a skillet over medium-high heat, add oil. Saute meatloaf rings on both sides until golden brown, about 5 minutes per side.
  • Add remaining tomatoes to skillet and bake in the preheated oven until cooked through, 20 to 25 minutes.
  • Meanwhile, in a small saucepan, heat 1-inch vegetable oil until a deep-fry thermometer reaches 325 degrees F. Drop sage leaves into oil and fry until golden, 1 to 2 minutes.
  • Garnish meatloaf rings with fried sage leaves.

If you enjoy the crispy part of the meatloaf , you will love my Mom's fried meatloaf. You can basically do this frying process with your own favorite meatloaf recipe and it would be just to your liking I'm sure , I hope you will give it a try!

2 lb lean hamburger
1/2 c quick oats
2 large eggs
1 medium onion ; chopped
1 Tbsp worcestershire sauce
1 1/2 tsp garlic powder
1 Tbsp italian seasoning
salt & pepper

Steps:

  • 1. In a large mixing bowl combine all the ingredients.
  • 2. Mix with your hands.
  • 3. Mix thoroughly until all the spices are combined together with the hamburger.
  • 4. Shape into an oblong shape in your hands.
  • 5. Place in heavy skillet and cover with a lid.
  • 6. Fry on medium heat until crispy brown and turn onto their sides ; you may need to prop them against each other to hold them on their sides , you can remove the lid at this point if so desired to so you can watch it closer so they don't burn.
  • 7. Continue browning until all four sides are fried crispy.
  • 8. Serve along side a favorite side dish and enjoy!!
