Quick lunch treat for unexpected guests or just a reason to spoil ones self! Use brie cheese if you do not find the Camembert at your store. Use a really nice rustic bread for best results.

2 ounces Camembert cheese
2 thick slices white bread
1 tablespoon whole cranberry sauce
1 dash balsamic vinegar
1 tablespoon butter, softened

Steps:

  • Spread the Camembert cheese evenly onto one slice of bread. Spread a thin layer of cranberry sauce over the cheese. Drizzle with a few drops of balsamic vinegar, and top with the remaining slice of bread. Spread butter on the outer sides of each slice of bread.
  • Heat a skillet over medium heat. Fry the sandwich for a few minutes on each side, just until golden brown. Slice in half, and eat straight away!

Filet Mignon Sandwich with Onions, Camembert, Fried Egg and Chimichurri image

1/3 cup extra-virgin olive oil
3 cloves garlic, smashed and finely chopped
1 Fresno chile, stemmed, seeded and finely chopped
1/2 bunch fresh cilantro, leaves finely chopped
1/2 white onion, finely diced
1/2 bunch fresh Italian parsley, leaves finely chopped
Couple stems fresh oregano, leaves finely chopped
Kosher salt
1/2 cup distilled white vinegar
1 cup red and yellow grape or cherry tomatoes, halved
1/2 red onion, sliced
High-quality olive oil, for drizzling
Splash red wine vinegar
Kosher salt
Couple basil leaves, cut into chiffonade
Extra-virgin olive oil, for sauteing
1 Spanish onion, cut into 1/2-inch slices
Kosher salt
Pinch crushed red pepper
Two 10-ounce filets mignons, each cut into 5 or 6 thin rounds
4 kaiser rolls
8 ounces Camembert cheese, cut into 8 slices
4 large eggs

Steps:

  • For the chimichurri: In a blender combine the oil, garlic, chiles, cilantro, onions, parsley and oregano. Season with salt, then stir in the vinegar. Just before serving, taste and season with more salt if needed.
  • For the salad: Add the tomatoes and onions to a bowl. Toss with some olive oil and the vinegar. Season with salt and garnish with the basil.
  • For the sandwiches: Coat a large saute pan set over medium heat with olive oil and toss in the onions. Season with salt and the crushed red pepper, and increase the heat to medium-high. Cook the onions until soft, aromatic and lightly browned, 12 to 15 minutes. Transfer to a small bowl and reserve. Wipe out the pan with a paper towel, but don't wash it.
  • Preheat the broiler.
  • Sprinkle the steaks generously with salt. Coat the pan used for the onions with olive oil and place over high heat. You want to get it really hot; the oil should almost be smoking. Working in batches so you don't crowd the pan, cook the steak slices for about 1 minute on each side. Reserve the cooked slices and repeat until all the steak is cooked.
  • Cut the rolls in half, scoop out the middle and toast under the broiler.
  • Divide the steak evenly among the rolls. Arrange the sauteed onions in an even layer on top of the steak, then drizzle the meat with the chimichurri. Place 2 slices of Camembert on each sandwich and heat under the broiler until the cheese is really nice and melty, 1 to 2 minutes.
  • While the cheese melts, coat a nonstick saute pan with olive oil and heat over medium heat. Crack the eggs into the pan and fry until the whites are cooked through but the yolks are still runny.
  • Top each sandwich with a sunny-side up egg and finish with a big drizzle of the chimichurri. Close the sandwich, squish it, get lots of napkins, and eat the deliciousness. Serve with the tomato and onion salad.

PAN FRIED CUBAN SANDWICH

Recently I threw a few parties with "miniature" sandwiches and was attempting to find new unique ways to change up traditional classics like Ruben, Philly Cheesesteak, Grilled Cheese, Po-Boys, etc. I personally a good traditional Cuban sandwich, so I experimented a bit and got this recipe to work. My portion measurements may be slightly off, so don't get mad if my portions are slightly off (too much meet, not enough biscuits, etc.)

1 (16 ounce) can refrigerated biscuits, I like to use the small ones for mini sandwiches, but you can pick any size preferred
1 cup mayonnaise
1/4 cup yellow mustard
2 tablespoons dill relish
2 cups pork, shredded
1/2 cup diced genoa ham
1 garlic clove, minced
3 tablespoons olive oil
8 ounces swiss cheese slices, cut to the size of your biscuit
salt
pepper

Steps:

  • Whisk together the Mayonnaise, Yellow Mustard, Dill Relish, minced Garlic, and Olive Oil. Season with salt and pepper to your liking. Mix about 1/3 to 1/2 of this mixture into a large bowl with the Shredded Pork. Add Ham and stir. You want the sauce to coat the meat well, but not be overly wet. Taste and season again if necessary with Salt, Pepper, and (if preferred) a touch of ground cumin. Reserve any remaining sauce for dipping later.
  • Note - You can purchase shredded Pork or do your own in the oven or a crockpot. Use Pork that is lightly seasoned with no sauces.
  • Roll out each biscuit into 3-5 inch rounds.
  • Place a spoonful of the meat and sauce mixture in the center of each round. Add some of the cheese. Do not overfill. Fold the round over and seal with wet fingers and a fork. It is similar to making empanadas.
  • Heat a deep fryer or oil in a large pan on the stove to 375 degrees. Fry each biscuit pouch until golden brown on each side. Drain, cool and serve with the remaining mustard mayonnaise sauce.

"Gebackener Camembert" (literally baked Camembert even though the cheese is breaded and fried) can be found on many German bar menus. It's a great appetizer or snack with a glass of beer. Serve with buttered toast.

2 tablespoons all-purpose flour
1 egg, beaten
2 tablespoons dry bread crumbs
vegetable oil for frying
1 pinch salt and freshly ground black pepper to taste
2 sprigs fresh parsley
2 ounces whole berry cranberry sauce

Steps:

  • Unwrap Camembert wheel. Dredge in flour, then in beaten egg, and then in breadcrumbs to coat completely.
  • Heat 1 inch oil in a small, deep saucepan over medium heat. Lower Camembert carefully into the hot oil and fry until breading is browned, 1 to 2 minutes per side. Transfer to a paper towel-lined plate to drain. Set on a plate and season with salt and pepper.
  • Fry parsley sprigs for 5 seconds in the hot oil. Serve on top of Camembert and garnish with cranberry sauce.

10 1/4 inches slice bread
1/4 cup olive oil
2 teaspoons freshly cracked pepper
16 1/4 inches slice camembert cheese or 16 1/4 inches brie cheese

Steps:

  • Heat olive oil and cracked pepper over low heat. Turn off heat and let infuse for 10 minutes.
  • Place sliced cheese on half of the bread slices (making sure the cheese comes to the edge of the crust). Place top slice on each sandwich and put them together so they are crust to crust. Cover all the sandwiches with a layer of plastic wrap and place a medium cutting board on top of sandwiches to gently weigh them down for 15 minutes.
  • Using a pastry brush, thoroughly brush surface of both faces of the sandwich with the pepper oil.

DEEP-FRIED CAMEMBERT AND CRANBERRY SAUCE

2 (8 ounce) rounds Camembert cheese
oil for frying
1 cup all-purpose flour
2 eggs
ΒΌ cup milk
1 cup bread crumbs
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Freeze Camembert cheese for 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Pour flour into a bowl. Beat eggs and milk together in a separate bowl. Pour bread crumbs into a third bowl.
  • Remove cheese from the freezer and cut each round into 6 wedges. Roll each wedge in flour and dip into the egg-milk mixture. Press each wedge into bread crumbs until evenly coated.
