2 (14 ounce) cans hearts of palm
lettuce leaf
1 lime, juice of, fresh
salt
fresh ground black pepper
1 large vine ripened tomatoes, chopped (optional)
1 red bell peppers, chopped (optional) or 1 yellow bell pepper (optional)
mayonnaise (posted separately) (optional)

Steps:

  • Cut the heart of palm into small bite sized pieces and place on lettuce lined plates. Squeeze lime juice over the hearts of palm. Add a tiny dash of salt and fresh pepper.
  • The optional ingredients can be added together or individually. Mayonnaise can be substituted for the lime, salt, and pepper as is common in restaurants.

2 large, ripe, juicy tomatoes, sliced into thin slices
1 14-ounce can of hearts of palm
1 small onion

Steps:

  • For the salad dressing, use the traditional olive oil and vinegar, salt and pepper with lemon juice, garlic powder and cayenne. Drain the hearts of palm and cut them into ΒΌ" slices. Peel the onions and slice them into very thin slices. Separate the slices into rings. Place the onions in a bowl and cover them with ice cubes and water. Refrigerate for 2 hours. An alternative is to sprinkle the slices with sugar (2 Tbsp) and refrigerate for 2 hours. When you are ready to serve them, drain the onion slices and rinse under cold water. Toss with dressing, sprinkle with salt and grind some fresh pepper over it. Serve on bed of lettuce.

I love hearts of palm so I made up a salad. Hearts of Palm are usually packed in salted water so this recipe is for ones packed in salted water.

2 (14 ounce) cans hearts of palm, drained and sliced
1 (8 ounce) container grape tomatoes, cut in half
2 large fresh jalapenos, seeded and chopped
2 large garlic cloves, crushed and chopped
1 (2 1/4 ounce) can sliced black olives, drained
1 tablespoon canola oil
2 teaspoons rice wine vinegar
1 teaspoon honey
1/2 cup large shred mozzarella cheese
1 teaspoon fresh lime juice
2 teaspoons capers, drained

Steps:

  • In a large bowl; place hearts of palm, tomatoes, black olives, and jalapeno.
  • In a little bowl; mix oil, honey, lime juice, rice vinegar, capers, and garlic.
  • Pour caper mix and cheese into the hearts mix and toss to coat.
  • Chill then enjoy!

1 cans palmito
0.5 cups mayonnaise
1 units lemon
1 units crackers

Steps:

  • First, chop into small pieces: the onion, red bell pepper, cilantro, and palmito from the can.
  • Place all of these ingredients in a bowl. Add the mayonnaise and the lemon juice and mix well.
  • Serve as an appetizer with crackers.
