I love pecan-crusted fish. This is a light recipe, but you can serve it with a kicked-up tartar sauce as well.

1/2 cup dry breadcrumbs
2 tablespoons finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup low-fat buttermilk
1/2 teaspoon hot sauce
3 tablespoons flour
4 (6 ounce) tilapia fillets
1 tablespoon oil, divided
lemon wedge

Steps:

  • Combine breadcrumbs, pecans, salt, garlic, and pepper in a shallow dish.
  • Combine buttermilk and hot sauce (such as Tabasco) in a medium bowl.
  • Place flour in a third dish.
  • Dredge 1 fillet in flour, dip into buttermilk mixture, then into breadcrumb mixture. Repeat with remaining fillets.
  • Heat 1 1/2 tsp oil in a large skillet (non-stick works best) over medium-high heat.
  • Cook 2 fillets for 3 minutes on each side or until fish flakes easily.
  • Add remaining oil and cook additional 2 fillets.
  • Serve with lemon!

This is my wife's favorite recipe for Tilapia. It is simple to prepare and the fish remains moist and riddled with flavor. A five star favorite when I entertain guests for dinner. I found the recipe somewhere on the internet, but not sure where.

4 tilapia fillets
1/2 cup mayonnaise (not low fat)
1/4 cup Dijon mustard
1 teaspoon butter (or Pam Spray)
1/4 cup finely chopped pecans

Steps:

  • Spread butter on metal baking pan (or spray with olive oil Pam).
  • Place filets on pan.
  • Combine mayo and Dijon and spread on filets.
  • Sprinkle with pecans.
  • Preheat oven to 375 and bake about 10 minutes unless filets are extra large, then add about 2 minutes.

3 tablespoons reduced-fat mayonnaise
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1 teaspoon prepared horseradish
2 tablespoons grated Parmesan cheese, divided
4 tilapia fillets (5 ounces each)
1/4 cup dry bread crumbs
2 teaspoons butter, melted

Steps:

  • Preheat oven to 425°. Mix first 4 ingredients and 1 tablespoon cheese. Place tilapia on a baking sheet coated with cooking spray; spread evenly with mayonnaise mixture. , Toss bread crumbs with melted butter and remaining cheese; sprinkle over fillets. Bake until fish just begins to flake easily with a fork, 12-15 minutes.

1/4 cup Dijon mustard
1/4 cup finely chopped pecans
balsamic vinegar

Steps:

  • 1. Spread pam on metal baking pan or foil. 2. Place filets on pan. 3. Spread balsamic vinegar on fish then spread mustard on filets. Generously spread crush pecans on fish. 4. Bake at 375 for about 10-20 minutes.
