Steps:
- Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add garlic, coriander, turmeric, garam masala, red pepper flakes, curry powder, cumin, and salt; cook and stir until fragrant, about 1 minute.

Steps:
- Cut spinach into shreds and cook in 3 tablespoons water until tender; remove from heat.
- Saute onion, cinnamon, cardamom, and ginger in 1-2 tablespoons ghee or oil until onion is translucent.
- Then add garlic and chopped tomatoes, and reduce heat.
- Cook this briefly and slowly blend in yogurt a little at a time to prevent curdling.
- Add coriander, garam masala, paprika, and salt, mixing well.
- Add cooked spinach with liquid, cover and simmer on low heat for approximately 20-30 minutes.
- Remove from heat.
- Take half of spinach mixture and puree in food processor or blender, and return to mixture and stir.
- Slowly stir in heavy cream, and heat through on low heat.
- Add paneer cubes.
- Serve.

- Heat a skillet coated with cooking spray over medium heat; fry paneer cubes until lightly browned on each side, about 5 minutes. Transfer paneer to a bowl.

I LOVE PALAK PANEER (SPINACH AND CHEESE CURRY)
This luscious spinach and cheese dish comes from Northern India, the home of paneer, a fresh cow-milk cheese similar to ricotta. It's sold near the feta and haloumi in supermarkets, either of these two cheeses can replace paneer here, but the results wont be exactly the same. When I made this, I did use a soft feta, which melted into the spinach and gave me the most creamy rich curry you can imagine. I also upped the amount of the garam masala, to give a hotter result, and I sauteed some shrimps in garlic and butter, and served them with the curry, we enjoyed an excellent meal! The recipe is taken from Australian Womens Weekly, New Curries UPDATED to add ( thank you Peggy :) ), that previously step 2 said to add half the spinach at that step, I've changed it to say, add all the spinach.

- Heat oil in a large pot over medium heat. Add onion and garlic; cook and stir until lightly browned, about 8 minutes. - Remove the stems from the spinach,blanch them in hot water and grind them into a fine paste.
- Add butter in a heavy bottomed vessel and add cumin seeds and let them splutter. Add finely onions and green chili saute them till light brown. Don't burn them.Mean while shallow fry cottage cheese cubes in 1 tbsp of oil slightly brown.
- Add ginger garlic paste and fry further for 3 minutes. Add red chili powder and coriander powder and combine well.
- Blend the tomatoes,add the tomato paste and let it cook for 5-6 min on medium heat. Add the spinach paste and let it cook further for another 4-5 minute.
- Add the fried cottage cheese(paneer) cubes and combine. Cook covered on low heat for 3 minute Add the spinach water and salt and cook on medium heat for 10-12 minute.
- Add heavy cream, garam masala powder and chopped cilantro and mix well.
- Reduce flame, cover and cook for 2 mts.
- Serve hot with flat breads or white rice.
INDIAN CREAMED SPINACH - PALAK NOT PANEER
This is a cross between palak paneer without the cheese, and creamed spinach. Note that the fenugreek will add a nice nutty flavor to the concoction. Use the leaves, not the seeds. I've also omitted the salt since the spinach will already be salted. If you decide to add salt, do it sparingly and towards the very end of the cooking process.

- Boil about a quart of water and add salt liberally. Once the water comes to a rolling boil, add the spinach and reduce heat to medium . Cook for 8 minutes, then drain and set aside. Chop when cooled.
- In a medium saucepan, add 1 tablespoon butter or ghee. Sautee shallots and garlic until soft, about 5 minutes.
- Add the spinach and cook for two minutes or until the juices release. Then add the spices and the rest of the butter and stir, allowing about 30 seconds to a minute for them to begin releasing their flavor into the mixture. Add the cream and raise the heat, continuing to stir. Reduce the liquid to half so the mixture has a creamy rather than soupy consistency.
- Allow to cool, pour into bowls and sprinkle with the cheese. Then enjoy. Or just throw it in the trash or see if your dog will eat it.

- Bring a saucepan with water to boil and blanch the spinach for 1 minute, drain and cool down in ice water. This will keep the bright green colour on the spinach.
- Heat up 2 tbsp of oil in a pan, when hot add the cumin seeds they should sizzle immediately, add the onion, garlic, ginger and chillies, cook on medium flame until onion gets golden brown. Add the chopped tomatoes and cook until soft, turn off the flame and let it cool down.
- Blend this mixture together with the blanched spinach, you can add a touch of water if required to get a thick and smooth paste.
- Heat up 2 tbsp of oil in a pan, add the turmeric, red chilli powder, cumin and coriander and fry for some seconds until spices release their aroma, add the spinach paste cook for 2 minutes on a medium-high flame, then add water and cook for 5 minutes more, taste and add salt.
- Add the paneer to the gravy, mix well to coat the cheese cook for 5 minutes, then add the garam masala and the fresh cream, stir and cook on low flame for 2 minutes, then garnish it with chilli flakes and serve with hot naan or roti.

Palak Paneer made easy so so so so good! I broke it down so it is as easy as possible. Get a stack of bowls handy for your chopped ingredients! I substitute the heavy cream with whole milk unless for a special occasion and it still turns out fine.

- chop up spinach. chop it up well and toss it in a big pot with a little water to shrink it.cook it on med high for about 3 minutes
- while the spinach is shrinking, cut up your onion and put it in a bowl.
- dump your spinach into a collander in the sink after it shrinks down and let it be.
- steam two tomatoes on high until the skin cracks (blanched) should take about 5-7 minutes
- while the tomatoes are blanching, seed and chop up your chile and chop up your ginger. cut em up really small. this is a cheat for mincing!
- put the ginger and chiles chopped up into a bowl together and set it near the spinach.
- pour paprika, cumin, turmeric, coriander and garam masala into a bowl together and have it handy.
- Tomatoes should be blanched by now so peel off the skin and chop them into about four pieces each.
- Get a big pan and heat some (apx 2 tbs) oil on high. when it's hot add your onion and cook for about two minutes.
- dump in you ginger/ chile mix and stir up. Savor that aroma and turn heat down to medium immediately.
- add your spices and stir it up. keep stirring until your onions are evenly coated with spices.Stir it around for about two or three minutes.
- Add your spinach to the pot and stir it all together.
- add your tomatoes. stir it up.
- I know it doesn't look like much right now, but it will be great, I promise!
- Give it about 5 minutes keeping it on med- med high.
- take this time to chop up your paneer cheese (which I get from whole foods) but can be made from scratch if need be. I cut my paneer into small cubes.
- Check on your pan -- add a little water if you need to and turn heat down to med low.
- give your mixture a good stir and add paneer cheese.
- let it simmer on med low for about 10-15 mins -- make sure your mixture doesn't stick by adding a little more water if you need to. Sometimes I need to, sometimes I don't- go figure!
- add your cream/ milk and let it simmer for 10 more mins on low.
- ENJOY! serve with rice or naan.

- Blanch the spinach in salted, boiling water for one minute, then drain and transfer to a bowl with cold water.
- Once cooled, puree in a blender until smooth and remove.
- Heat some salted water and once it comes to a boil, switch off the gas and add the cubed paneer. Let it soak in the water till the time to be added to the gravy.
- Add all the ingredients of the gravy base to a blender and mix until smooth.
- Add the butter to a hot pan with some oil (optional) to stop it from burning. Once foaming, add the cashews, cumin seeds, finely chopped garlic, and bay leaves. Fry for a minute till aromatic.
- Add the blended gravy, along with all the powders and stir well. Simmer on low heat for 15 minutes till you see oil seeping from the sides. The onion-tomato gravy must smell fragrant by this point without any raw smell.
- Add the spinach puree and stir well to combine along with salt. Simmer on low heat for another 15 minutes until the rawness of the puree goes away and there is an intense gravy left.
- Add the cream and water as required to make it velvety along with the drained paneer cubes and fenugreek leaves. Simmer on low heat for another 5 minutes.
- Garnish with coriander leaves, sliced ginger, and a dollop of cream.
- Enjoy with naan bread or fluffy rice!

PALAK PANEER - VEGANIZED!
This is the result of combining the best of two great recipes for Palak Paneer (Spinach with Paneer). I wanted to "veganize" a tried and trusted recipe from Madhur Jaffrey's World of the East Vegetarian Cooking....and then I came across a really good looking vegan version on a blog: http://earthvegan.blogspot.com/2008/01/. I felt like the latter version could be improved by using some of the techniques and spices from the other. I have to say, the end result was amazing! Making this dish is simple but there are lots of steps, and lots of dishes to wash up. Hope that doesn't scare you off! You could take care of quite a bit of it the day before. I think at the end of the day the effort is worth it and I hope you will too.

- Prepare the tofu beforehand by pressing out some of the moisture. The easiest way to do this is to place the block of tofu in a colander, placing a plate on top and then weighing it down with a tin of soup or a heavy skillet. It takes about 1/2 an hour, but you could leave this for however long you need to in the fridge.
- Cut the pressed tofu into one inch cubes.
- Combine the next 7 ingredients, (grated ginger, lemon juice, oil, turmeric, garam masala, sea salt and chili powder if using). Toss in the tofu and leave to marinate for about 30 minutes, or longer if need be. Try to turn a couple of times so that the marinade gets evenly distributed.
- Final step with the tofu is to saute it in about 1 tbsp of the oil. Try to get each side lightly golden. You can use more oil if you want to -- I'm just trying to keep the calories as low as possible. Set aside once done.
- Next step - the spinach. In a dutch oven or large saute pan, heat up about an inch of water. While that's boiling, chop the spinach roughly and then add to the boiling water, steaming until tender (a matter of a few minutes). Once done, turn off the heat and then drain out about 1/4 cup of the liquid into a measuring cup. Once you've taken that 1/4 cup out, there shouldn't be a whole lot left. Set the 1/4 cup of spinach water aside and then puree what's left in the pot together with the steamed spinach. I like to just use an immersion blender right there in the pot -- or you could move to a blender or something similar. Set the spinach aside (I move mine to a bowl and clean out the same pot).
- Next step -- putting it together. Using a mini-blender or food processor, combine the onion, ginger, garlic, fresh chili if using, and the 1/4 cup of spinach water - puree into a smooth paste.
- Heat the remaining tbsp of oil in a large pan over medium heat. Once hot, add in the paste (watch out, it will splatter) and fry it for about 30 seconds. Then add your other spices and diced tomatoes. Lower the heat and let that cook gently for about 5 minutes, watching it doesn't burn.
- Add in your pureed spinach and season to taste with salt.
- Next combine the arrowroot powder with the soy milk in a small dish. Once you've removed the lumps, gently stir it in and let the sauce thicken up for a few more minutes. Lastly, add in the tofu and let it warm through, about 10 more minutes.
- Done! Serve with rice or naan etc -- garnish with fresh cilantro if you like, or some more diced fresh tomato.
PALAK (SPINACH) PANEER

- 1. If using frozen spinach, thaw and blend just enough to get a creamy texture, but without allowing it to become pasty.
- 2. Blend tomatoes and ginger to make a puree.
- 3. Mix coriander, turmeric and red chili with tomato puree and set aside.
- 4. Mix whole wheat flour with cream and set aside.
- 5. Heat oil to hot but not smoking.
- 6. Add cumin and asafetida to oil, allow to crack.
- 7. Add tomato puree and let cook until it reduces by half.
- 8. Add spinach and cook, covered, over med-low heat for 10 minutes.
- 9. Add cream mixture and paneer, let this cook another 4-5 minutes.
- 10. Transfer to serving dish and enjoy with naan or rice.

- Heat oil in a skillet, add chopped onions, and fry them until they are soft.
- Add ginger garlic paste, saute for 5 minutes, then add the spices.
- Saute for 5 minutes and then add chopped tomatoes.
- Mix tomatoes well, cover, and cook for 7 minutes until tomatoes are soft.
- Now, add potatoes and cook until potatoes are coated with the spices and tender (approximately 10 minutes).
- Add spinach puree (made with turmeric) and stir to mix well. Reduce the heat to low, cover, and cook for 10 minutes.
- Then, remove the lid and add chopped green chillies. Increase to medium-high heat and add milk. Cook for another 10 minutes, or until gravy begins to thicken. At this point, take off heat and set aside.

- Finally, garnish the gravy with fried cottage cheese, green chillies and coriander leaves.

- Melt ghee in a saucepan over medium-low heat. Stir in garlic and cumin seed; cook until the garlic softens, about 3 minutes. - Soak paneer in a bowl of water for atleast 15-20 minutes. This makes the paneer soft. Drain the water. Cut paneer into cubes.
- Set aside.
- Wash and chop palak finely.
- Cut onions into small pieces.
- Cut tomatoes into 2 inch cubes.
- Heat a little butter.
- Fry palak till it shrinks.
- Allow to cool.
- Grind to a smooth paste.
- Grind cashews and poppy seeds together to a smooth paste.
- Fry all the spices in little ghee and then powder.
- Heat rest of the butter with little oil and fry onions till crisp and golden.
- Add dhania powder, jeera powder(cumin powder), chilli powder and then tomatoes.
- Stir for a minute.
- Add whipped curds.
- Cook on reduced flame till oil floats on top.
- Add salt, sugar, ground palak leaves, turmeric powder and cook for a few minutes.
- Mix cashew-poppy paste and pour just enough water required for the gravy.
- Cook on medium flame till gravy becomes thick.
- Add paneer pieces.
- Remove from heat.
- Sprinkle garam masala powder.
- Serve hot with finely cut onions and lime.
CHARISHMA'S PALAK PANEER
This is a family favourite. I learnt this in Oman from a chef who used to come home part-time and cook for my family. He is no longer cooking for the family, but I have learnt this recipe well and make it on weekends. My husband adores the flavour.

Steps:
- Boil spinach in a pot of water. Drain the water.
- Soak the paneer in a bowl. Add water. Let it remain that way to de-frost for about 1 hour.
- Put the boiled spinach in a mixer and add a little water to prepare spinach puree.
- Heat oil in a pot.
- Add ginger and onion. Stir-fry until browned.
- Add all the spice powders.
- Fold in the tomato puree.
- Mix well and bring to a boil.
- Now, lower heat and add the spinach puree. Allow it to cook for a few minutes.
- Drain the paneer; remove all the water.
- Cut the paneer into cubes.
- Shallow fry the cubes of paneer in oil until lightly browned on either side. Add to the pot of spinach mixture.
- Mix lightly and serve hot with Indian flatbreads (rotis) or naan and/or pulao.

PALAK PANEER
Palak paneer is one of my favorite vegetable entrees that my Grandma would make. It was predominantly spinach with Indian cottage cheese, but she would use a variety of seasonal greens that would add more depth.

- Fill a large Dutch oven with water and bring to a boil. Add the spinach leaves, fenugreek leaves, mustard greens, grated garlic, grated ginger, garam masala, salt, green chiles and roughly chopped onion. Cover with the lid and boil until cooked, about 5 minutes. Strain the greens, keeping the water, then add the greens to a blender. Blend the greens to a coarse paste, adding a little water if required to move things along in the blender.
- Add the butter to a large Dutch oven and heat over medium-low heat until melted. Add the besan and cook on low heat until it starts turning brown and into a thick roux, about 3 minutes. Add the greens to this mixture and mix well. Cook for another 10 minutes.
- Heat the ghee in a medium saute pan over medium heat until hot and melted. Add the cumin seeds and cook until they start to sizzle, then add the remaining onion, chopped ginger and chopped garlic and saute until golden, about 3 minutes. Add half of the onion mixture to the greens pot. To the rest of the onion mixture, add the paneer triangles and saute until browned on all sides, about 5 minutes. Season with the dried fenugreek leaves.
- Add the greens mixture to a serving dish and top with the paneer.
PANEER PALAK KOFTA
Yummy Veggie Koftas! This recipe is from www.seattleguru.com. I love spinach, and paneer and koftas, so I am so happy about this recipe. Some people prefer to use tofu or cottage cheese instead of paneer, but I find that it's very easy to make my own with milk, lemon juice and cheese cloth, and TOTALLY worth it.

- Wash spinach in plenty of running water to get rid of any dirt, soil or impurities.
- Blanch spinach in boiling hot water and refresh in cold water.
- Chop and keep aside.
- Add chopped green chillies, salt, chopped garlic and corn flour.
- Mix well and divide into 12 equal portions.
- Grate paneer.
- Add salt and mash well.
- Divide it into 12 small balls.
- Take spinach, flatten it on your palm and stuff paneer balls in it.
- Shape it into a ball (kofta).
- Deep fry for 5 minutes in moderately hot oil.
- Heat butter in a pan.
- Add Whole garam masala.
- Let it crackle.
- Then add ginger paste, garlic paste and chopped green chillies.
- Cook for 2 minutes.
- Add tomato puree, red chilli powder, Garam masala powder, salt in one cup of water.
- Bring it to a boil.
- Reduce heat and simmer for 10 minutes.
- Add sugar or honey or both and kasoori methi.
- Stir in fresh cream.
- Serve koftas cut into halves on top of makhani gravy.
- Do not boil koftas in the gravy.
