Two soups in a bowl, make sure the soups are of a similar consistency so that they don't run together when ladled in the bowl. Had lunch at the Blue Mesa Grill in Addison, TX...some of the best Southwestern food I have eaten...I didn't get to try this, but it sounds delicious. This seems like it will take a long to time to get both soups done, so please let me know of any shortcuts you may come up with. 12 ears corn, leave in husks
3 cups chicken stock or 3 cups broth
2 cups heavy cream
12 ounces Velveeta cheese, cut up
2 tablespoons canned jalapenos, finely minced (no juice)
1 tablespoon salt
cornstarch, as needed
cold water, as needed
1/2 lb hickory smoked bacon
1/2 lb chopped yellow onion
1 tablespoon chopped garlic
4 cups uncooked black beans, rinsed and cleaned
water, as needed
1 cup chicken stock or 1 cup broth
2 teaspoons pureed chipotle chiles
1/2 cup brown sugar
1/2 cup cider vinegar
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • CORN CHILE CHOWDER:.
  • Preheat the oven to 400 degrees.
  • Place the corn (in the husk) on a cookie sheet and roast for 50 minutes.
  • Cool, remove husks from corn and cut corn off the cobs.
  • Take 70% of the corn and chicken stock and puree in blender.
  • Pour the puree into a double-boiler and heat over a medium heat until just hot.
  • Add the heavy cream and simmer for 15 - 20 minutes.
  • Add the remaining whole corn, Velveeta cheese, jalapenos and salt.
  • Continue cooking until cheese has completely melted, sirring often.
  • Mix corn starch and cold water in a separate bowl and add to soup as needed to thicken.
  • Cook on low heat about 8 minutes until it thickens.
  • BLACK BEAN SOUP:.
  • Smoke bacon and onions in an outside grill using mesquite wood chips fpr 25 minutes.
  • Saute smoked bacon and onions with garlic in a large pot until they begin to caramelize.
  • Add beans and enough water so that is is 1 1/2" above the level of the beans.
  • Bring to a boil and reduce to simmer until beans are cooked through, you may have to add more water as it cooks.
  • Add additional ingredients and simmer 30 more minutes.
  • Puree 3/4 of the soup and add back with remaining bean soup.
  • TO SERVE:.
  • Simultaneously ladle both soups on opposite sides of the bowl.
  • Drizzle with sour cream and a teaspoons of pico de gallo.

This is in between a soup and chili. I love it because it's relatively healthy (low-fat) and thinner than a lot of other chili recipes. Easy and delicious!!! You don't have to second-guess how the flavor will come out because it's always good.

2 lbs ground beef or 2 lbs ground chuck
1 onion, chopped
2 (1 ounce) packets ranch dressing mix
2 (1 1/4 ounce) packets taco seasoning
1 (14 ounce) can black beans
1 (14 ounce) can pinto beans
1 (14 ounce) can kidney beans
1 (14 ounce) can rotel
1 (14 ounce) can chopped tomatoes
2 (14 -21 ounce) cans corn (can mix white or yellow)
2 cups water
1 (6 ounce) can green chilies (optional)

Steps:

  • In a large pot, saute meat and onion together until meat it cooked through.
  • Stir in seasonings.
  • Add remaining ingredients (and juice from all cans) and simmer for 2 hours.
  • Garnish with sour cream, sliced green onion, chopped pickled jalapeno, shredded cheddar cheese, and either tortilla chips or Fritos.

2 tablespoons taco seasoning
2 tablespoons dried onion flakes
2 tablespoons taco seasoning
2 tablespoons cumin
2 tablespoons paprika
2 tablespoons white cornmeal
2 tablespoons taco seasoning
2 tablespoons garlic granules
2 tablespoons chili powder
2 tablespoons dried parsley
1 cup dried pinto bean
1/4 cup small dried white bean
1/4 cup small dried black beans
1 cup dried kidney beans
1 medium diced onion
4 (15 ounce) cans diced tomatoes
1 (8 ounce) can tomato paste
1/2 cup cider vinegar
1/2 cup brown sugar
49 ounces tomato juice
2 lbs ground beef or 2 lbs ground turkey, browned

Steps:

  • The ingredients are layered, like sand art. Don't worry about getting the layers even.
  • The desert effect comes from the rippled appearance of the spices. One tip is to carefully add each seasoning along the edges of the jar, then fill in the middle of the layer. This way all of the beautiful colors show along all of the edges.
  • Attach these instructions to the jar:.
  • Pour contents of jar into 12-quart pot.
  • Add:.
  • 1 medium diced onion.
  • 4 (15 ounce) cans diced tomatoes.
  • 1 large can of tomato paste.
  • 1/2 cup cider vinegar.
  • 1/2 cup brown sugar.
  • 49 ounces tomato juice.
  • 2 pounds ground beef or turkey, browned.

3 tablespoons chili powder
2 tablespoons dehydrated onion
1 tablespoon granulated garlic
1 teaspoon oregano
2 teaspoons salt
1/2 teaspoon cayenne pepper
1 (8 ounce) can tomato sauce
2 (14 ounce) cans diced tomatoes

Steps:

  • Put beans into a jar or large bag.
  • Combine spices into a small bag.
  • Place the cans of tomato sauce and diced tomatoes in your gift basket.
  • LABEL:.
  • Wash beans. Put into pot with spices.
  • Cook until done, about 1 to 1 1/2 hours.
  • Meanwhile, brown 1 pound of ground beef and drain.
  • Add meat, tomatoes and sauce to the beans.
  • Simmer to blend flavors.
