OVEN STEAK FRIES

Oven Steak Fries image

A basic steak fries recipe from Rachael Ray. Yummy served with steak (or with anything, really!).

Provided by Kathy D

Categories     Potatoes

Time 35m

Number Of Ingredients 5

5 russet potatoes, with skins, cut into thin wedges
3 Tbsp olive oil, extra virgin plus a little extra to brush onto the pan
1 tsp dried thyme
1 tsp dried oregano
1 Tbsp steak seasoning blend (i like montreal by mccormick) or salt and pepper, to taste

Steps:

  • 1. Preheat oven to 425 degrees F, with the cookie sheet in the oven to get it hot. Once hot: Take the cookie sheet out of the oven and brush on a thin coat of olive oil (not the 3 T).
  • 2. In a bowl, coat the potatoes with 3 T olive oil, dried herbs and the steak seasoning or salt and pepper, and mix well.
  • 3. Spread the potatoes to the corners of the cookie sheet and cook for about 25 minutes (*could be sooner or later - check them as they cook - See note in step 4), turning once halfway through cooking. Serve once they are nicely browned to your liking!
  • 4. Note: I find that if my wedges are thin, a total of 20-25 minutes is enough. If the wedges are thicker, a total of around 40 minutes works better.

STEAK-CUT OVEN FRIES WITH BLUE CHEESE DIP

Steak-Cut Oven Fries with Blue Cheese Dip image

Provided by Food Network Kitchen

Categories     appetizer

Time 1h

Yield 4 servings

Number Of Ingredients 14

1 cup mayonnaise
1 cup crumbled Maytag or other blue cheese (about 6 ounces)
1/2 cup buttermilk
1 shallot, minced
1 tablespoon freshly squeezed lemon juice
1 teaspoon finely grated lemon zest
1/2 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon celery seed
2 tablespoons minced flat-leaf parsley
Freshly ground black pepper
4 medium russet potatoes (about 2 pounds), scrubbed
1/4 cup extra-virgin olive oil
Kosher salt

Steps:

  • To make the blue cheese dip: In a food processor, combine the mayonnaise, blue cheese, buttermilk, shallot, lemon juice and zest, Worcestershire, salt, and celery seed. Pulse until evenly combined but still slightly chunky. Stir in the parsley and season with pepper, to taste. Transfer the dip to a bowl and refrigerate for the flavors to come together while you make the fries.
  • To make the fries: Position a rack in the center of the oven and preheat to 500 degrees F. Put a baking sheet on the center rack and preheat for 10 minutes.
  • Meanwhile, cut the potatoes lengthwise into wedges by eighths, leaving the skins on. In a large bowl toss the wedges with the olive oil.
  • Carefully remove the hot baking sheet from the oven and arrange the potato wedges cut-side down on it, keeping them evenly spaced. Using a rubber spatula, scrape the remaining oil in the bowl over the potatoes (it helps them get crispy). Bake until browned and crisp, about 30 minutes. Transfer the fries to a serving platter and season with salt, to taste. Serve immediately with the blue cheese dip.
