1/2 cup Gold Medal™ all-purpose flour, sifted
3 eggs
1/2 cup milk
2 tablespoons melted butter
1 tablespoon sugar
1/4 teaspoon of salt
fresh fruit of your choice, cut into bite-sized pieces
whipped cream

Steps:

  • Preheat oven to 450°F. If you have a convection oven, set it at 425°F (the pancakes rise even higher on the convection setting).
  • In a large bowl, lightly beat the eggs with a whisk or fork. Stir in the milk, melted butter, salt and sugar. Add the flour to the egg mixture, a big spoonful at a time as you continue to whisk. Be careful not to over-mix, to keep the pancake light and fluffy.
  • Lightly spray a 9"-11" oven-safe skillet with cooking spray.
  • Pour the batter into a heated skillet (this will yield a more golden brown, puffier pancake). Bake 12-18 minutes, just until the edges are golden. Check your pancake at the 12 minute mark. Top with the fresh fruit and whipped cream just before serving.

½ teaspoon ground cinnamon
⅓ cup butter
4 eggs
1 cup milk
1 cup all-purpose flour
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). In a small bowl, mix together white sugar and cinnamon; set aside.
  • Place butter in a 9 inch cake pan and heat in the oven until melted. In a blender or food processor, whip eggs and milk. Pour in flour and beat until well combined. Pour batter into hot pan. Sprinkle on sugar and cinnamon.
  • Bake in preheated oven for 20 to 25 minutes, or until puffed and golden. Dust with confectioners' sugar; serve warm.

4 medium Yukon gold potatoes
1 teaspoon olive oil
2 cloves garlic, minced
1/2 small onion, cut into 1/4-inch dice
1/2 red bell pepper, cut into 1/4-inch dice
1 celery stalk, peeled to remove strings, cut into 1/4-inch dice
2 tablespoons homemade or low-sodium canned chicken stock, skimmed of fat
1/4 cup skim milk
2 tablespoons roughly chopped fresh thyme, plus sprigs for garnish
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 large egg whites
3/4 cup plain bread crumbs, toasted
2 tablespoons vegetable oil
Sweet Red-Pepper Sauce

Steps:

  • Place potatoes in small stockpot, cover with water, and bring to a boil. Reduce heat to medium high; gently boil until tender, 40 to 45 minutes. Drain in a colander. Using a towel to hold potatoes, peel while still hot. Pass potatoes through a potato ricer or a food mill into a large bowl.
  • Heat oven to 450 degrees. Meanwhile, heat olive oil in skillet over medium-low heat. Add garlic, onions, red peppers, and celery; saute until vegetables are translucent, about 5 minutes. Add stock; saute 1 minute more. Add vegetable mixture to potatoes along with milk, thyme, salt, and black and cayenne peppers. Form 1/3 cup mixture into 3-inch round cake; transfer to platter. Repeat, making cakes with remaining mixture.
  • In a shallow dish, whisk egg whites until foamy. Place bread crumbs in a shallow dish. Coat cakes in egg whites, then in bread crumbs; transfer to a baking sheet.
  • Pour 1 tablespoon canola oil in a medium nonstick skillet; place over medium-high heat. Add half the cakes; cook until golden brown, 2 to 3 minutes on each side. Return to baking sheet; set aside. Repeat process with remaining tablespoon canola oil and cakes, wiping skillet with paper towel between batches.
  • Place cakes in oven; cook until deeply golden, about 20 minutes. Serve with Sweet Red-Pepper Sauce.

Steps:

  • Place an 11x13-inch baking pan into the oven. Preheat the oven to 425 degrees F (220 degrees C) with the pan in place.
  • Beat eggs in a large bowl with a wire whisk; add milk, lemon zest, white sugar, and salt and beat together. Add flour and beat until mixture is very smooth. Mix in lemon juice until incorporated.

This recipe came from a Crisco cookbook. It's especially great when you have guests and want to serve something nice without having to spend a lot of time in the kitchen. We serve this every Christmas morning (you know how hectic it can be); so I can enjoy the festivities, too. Scrambled eggs go nicely with this.

2 cups pancake mix (I use Aunt Jemima Buttermilk)
1 1/4 cups milk
2 eggs
2 tablespoons vegetable oil
1 (21 ounce) can pie filling (we like apple)

Steps:

  • Preheat oven to 350 degrees.
  • Combine pancake mix, milk, eggs and oil and mix until nearly smooth.
  • Pour into a 13 x 9" greased baking dish.
  • Top with the pie filling and bake 35 to 40 minutes or until nicely browned.
  • Remove from oven and cut into desired serving sizes.
  • CAUTION: the fruit stays very hot.
  • Serve with plenty of warm maple syrup.

1 cup whole milk

  • Heat the oven to 425°F and arrange a rack in the middle. Place a large, seasoned cast iron skillet in the oven as it preheats, at least 5 minutes. Combine flour and salt in a large bowl and whisk to break up any lumps and incorporate; set aside. Combine eggs and milk in a separate bowl and whisk until the eggs are broken up. Make a well in the center of the flour mixture, dump in the egg mixture, and mix until the batter is thoroughly moistened and slightly lumpy, about 1 minute. Using a dry kitchen towel or an oven mitt, remove the skillet from the oven and add the butter. Once the butter melts, tilt the skillet to coat the bottom and sides. Pour the batter into the skillet and bake in the oven until puffed and golden brown on the sides, about 20 minutes. Remove the pancake from the oven and serve immediately with pears or honey and a sprinkling of powdered sugar.

Steps:

  • Place butter in a 9x13 pan and slice into smaller pieces. Place the pan in the oven and then turn the oven on and let it heat to 425. While butter is melting mix other ingredients.
  • In a large mixing bowl wisk together eggs, milk, flour, and salt. For best results don't use an electric mixer. If it gets mixed too much it won't puff up. By hand is great and you don't need to worry about getting all of the lumps out. Check the butter!
  • By now your butter should be nice and melted and bubbly. Pour your egg mixture into the melted butter. DO NOT MIX. Just let them swish around together.
  • Place the pan back in the oven and let cook for 15-20 minutes. Don't forget to turn the oven light on and watch. When the batter is set and all puffy and the edges are starting to brown it's done. Another tip - don't open the oven while it's cooking, sometimes it will fall. The pancake will fall seconds after you remove it from the oven so have your audience waiting to enjoy.
  • Enjoy this pancake plain or top with syrup or fruit and powdered sugar. Our favorite is a simple raspberry sauce. Cut into 12 pieces. 4 very small children and 2 adults easily finish this off.

Number Of Ingredients 11

6-10 over-ripe bananas, with brown spots
6-10 eggs (use same number of eggs as bananas)
1/4 tsp salt
TO MELT IN PAN:
4 Tbsp coconut oil
sprinkle salt
cinnamon, sprinkled heavily across whole pan
SERVE WITH
pineapple canned in pineapple juice (crushed, tidbits or chunks)
scd yogurt made with half and half
OPTIONAL: 2.5 TBSP. OF CASHEW BUTTER WITH THE BLENDED INGREDIENTS CAN BE NICE, BUT NOT NECESSARY.

Steps:

  • 1. Preheat oven to 350°F. Add coconut oil to pan, and melt it in the oven. Lightly sprinkle oiled pan with salt.
  • 2. In a blender*, mix the over-ripe bananas, eggs and 1/4 tsp. salt, until frothy. Pour some into the bottom of pan. Sprinkle heavily with cinnamon. Pour remaining batter into pan. Should give cinnamon a nice swirly pattern. *(The eggs & bananas tend to separate if not puréed in a blender, which leads to an unpleasant scrambled egg texture & taste.)
  • 3. Bake until nicely browned across the top & no longer jiggles when pan is moved, about an hour to an hour and 15 minutes.
  • 4. Lightly sprinkle the top of the banana pancake tray with salt. Serve with layer of SCD yogurt topped with pineapple. Refrigerate leftovers. This is even better as reheated leftovers. It looses some of the initial eggy smell. But with the toppings, the eggy smell is usually not very noticeable, even when served the first day.

1 cup milk
1/4 cup sugar
4 eggs
1/4 cup butter

Steps:

  • Heat oven to 450 degrees. Place butter on 13x9 inch pan. Mix all ingredients together. Pour batter on top of boiling butter. Cook 15-17 minutes.

1/2 c milk
2 eggs
1 dash(es) nutmeg
1 cast iron skillet (works best) or baking dish

Steps:

  • 1. Preheat oven to 450 degrees. Place skillet in oven while mixing ingredients. It needs to be HOT!
  • 2. Place butter in skillet and let it melt. Mix remaining ingredients and pour into HOT skillet.
  • 3. Bake for 15-20 minutes. When done, sprinkle with powdered sugar and fold in half.
