I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

- Preheat oven to 450 degrees Fahrenheit.
- In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
- In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
- Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
- Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
- Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

PANNU KAKKU (FINNISH OVEN PANCAKE)
An eggy, buttery, oven pancake. This looks so good, I can't wait to try it. Putting the recipe hear for safe keeping. I got it off Erin's kitchen blog. Hope she doesn't mind. Update: Finally got to make this deliciously ooey, gooey pancake. I also added a dash of vanilla and would also recomend decreasing the butter to about 6 tbs from 8. I also preheated the oven to 400 degrees to melt the butter and then decreased the temp to 350 when I put the batter in. Oh so yummy! I will update the ingredients below so that the nutritional information is correct.

- Preheat oven to 375 degrees with rack in upper third. Place a 10-inch cast-iron skillet (or other nonstick ovenproof pan) in oven. Whisk together flour, 3 tablespoons granulated sugar, baking powder, and salt in a bowl. Whisk together milk, egg, and melted butter in another bowl. Whisk milk mixture into flour mixture until just combined.

- To remove saltiness of pork, cover it in water in a small saucepan and boil for 2 minutes. Drain and repeat.

FINNISH OVEN PANCAKE (PANNUKAKKU)
Posted for ZWT6 Scandinavian Region - Finland. I posted a similar recipe to this but it called for making your own "cream of wheat" first and then the pancake. This is similar in that it bakes in the oven but seems a bit simpler. I want to try both methods and thought it worth posting this one too. There are 3 other recipes for this recipe but they do not include all the ingredients I found on scandinavianfoods.com recipe site. Prepare to let the batter rest 30 minutes prior to baking (I included it in the prep time). Use any seasonal fresh fruit to top this warm pancake for a lovely dessert.

DELICIOUS PUFFY OVEN-BAKED APPLE PANCAKE!
This is a caramelized apple mixture that is prepared then baked in the pancake, and then baked in the oven in a 9-inch cake pan, then puffs up like a souffle. You can even pre-cook the apple mixture to use later, just store it in the fridge, although I have never tried this, I do think that you could likely make the apple mixture, then freeze it in small containers, to have handy when you make this pancake but I have only refrigerated the apple mixture... It is the perfect brunch, I have even served this for dinner too, this is one of my DH's favorites pancakes, he can eat a whole one all by himself LOL! - Set oven to 400°F.
- Prepare and grease one 9-inch round cake pan (prepare two if doubling recipe).
- TO make the apple filling: this step can be made well in advance and refrigerated.
- Sauté the apples in butter in a non-stick skillet over low heat.
- Add in lemon juice, brown sugar, vanilla and apple cider (or juice if using); cook about 7-8 minutes until soft.
- Cool for about 10-15 minutes, or refrigerate for later use.
- To make batter: Process ALL ingredients on a processor until smooth (can use a wire whisk also for this).
- Place the prepared slightly cooled apple mixture into the bottom of the prepared cake pan.
- Pour the pancake batter over the apple mixture (do not mix).
- Dot with butter bits.
- Bake for 15-17 minutes or until puffy.
- Dust with confectioners sugar.
- Serve with maple syrup if desired.

DUTCH BABY (OVEN BAKED) PANCAKE
Be sure to view all the photos I've included. This baked pancake really rises high! I tried to get a picture before it began collapsing, but wasn't quite quick enough. Regardless, it's very impressive when brought to the table, and tasty as well. My skillet is iron, and this seems to give the best results.

- Preheat oven to 450°F. If you have a convection oven, set it at 425°F (the pancakes rise even higher on the convection setting).
- In a large bowl, lightly beat the eggs with a whisk or fork. Stir in the milk, 2 tbsp melted butter, vanilla, salt and sugar. Add the flour to the egg mixture, a big spoonful at a time as you continue to whisk. Be careful not to over-mix, to keep the pancake light and fluffy.
- Melt remaining 1 tbsp butter in a 10-inch oven proof skillet. You can do this by placing it in the oven for about 5-7 minutes.
- Pour the batter into the heated skillet (this will yield a more golden brown, puffier pancake). Bake 12-18 minutes, just until the edges are golden. Check your pancake at the 12-minute mark. Top with the fresh fruit, powdered sugar, and whipped cream just before serving.
