GRANDMA'S OVEN BAKED MACARONI AND CHEESE
This is the Macaroni and Cheese that i grew up with. It is very easy to make and will add a delightful side dish to any meat such as Ham or Turkey. NOTE: When adding milk, do not make the noodles float.

Steps:
- Boil 4-6 cups of water in a pot on the stove.
- Add 2 tsp salt.
- Add in 1 cup Elbow Macaroni noodles.
- Boil for 7 minutes.
- Preheat oven to 400F.
- When finished boiling, pour macaroni into a strainer basket and then add to a 9"x9"x1.5" oven safe (preferably pyrex) dish.
- Scramble the egg, then add the egg to the 1 cup of milk.
- Add in salt and pepper, mix well.
- Add to macaroni the milk, egg, salt, pepper mixture (Ensure the noodles do not float).
- mix in 6-8 oz of cheese.
- Add the remaining cheese to the top. Try to cover all the noodles on top.
- Place dish in center rack in oven and bake for 30 minutes. Top layer of cheese should be slightly golden brown on the sides.
- Remove from oven and let cool slightly and serve. May be microwaved for enjoyment again and again.
DUTCH OVEN MACARONI AND CHEESE
This Dutch oven mac and cheese is a staple in my home. I sometimes add burger meat or bacon to it to liven it up but it's delicious enough on its own! Regularly served as the main course with just a veggie side, as it can be a bit heavy if you're a mac and cheese lover who can't resist seconds (like me).

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain and set aside.
- Heat an oven-safe Dutch oven over medium heat. Melt butter and flour in the hot pot, stirring, until blended; pour in milk and heavy cream, whisking continuously, until mixture comes to a boil. Continue to boil, stirring continuously, for 2 minutes. Reduce heat to medium-low; continue to stir until sauce thickens, about 10 minutes.
- Slowly fold in cheeses until melted and smooth. It is okay to raise the heat if you have to, just remember to keep stirring while the heat is on. Fold in cooked pasta until it is coated with cheese.
- Combine panko bread crumbs, salt, garlic salt, black pepper, onion powder, and taco seasoning in a bowl. Sprinkle macaroni mixture with just enough of the bread crumbs to coat most of the surface; you should still see some pasta underneath the bread crumbs.
- Bake in the preheated oven for 20 minutes. Turn on the oven's broiler and continue to cook until crust is golden brown and crisp, about 10 minutes. Remove from the oven and let sit for at least 15 to 20 minutes before serving.

ROASTER OVEN MACARONI AND CHEESE

- 1. Preheat 18-quart roaster oven to 425 degrees F.
- 2. Lightly spray Cookwell with oil. Add butter to preheated Cookwell. Cover; cook until melted.
- 3. Add remaining ingredients; stir until well mixed.
- 4. Cover; cook 45 to 55 minutes or until set. Stir once halfway through cooking time.
MACARONI AND CHEESE OVEN-BAKED CASSEROLE (WITH A DASH OF SPICY)
This is a warm, cheesy and delicious baked macaroni and cheese casserole. It is a little spicy (re: pepper and garlic), but it is easily modified to personal taste. My toddler loves this recipe! He gobbles it down, spices and all. This dish is great with a side of steamed, mixed veggies.

- Preheat oven to 350 degrees.
- Set aside an 8x11 glass casserole dish (spray with non-stick spray, if desired).
- Cook the pasta according to its instructions and remove from heat 2 minutes PRIOR to it being fully cooked. Drain the pasta and rinse with cold water (to halt further cooking of the pasta). Drain the pasta and return to saucepan.
- AS THE PASTA IS COOKING, warm all of the milk and the 2 tbsp butter over medium-low heat.
- In a small bowl combine the flour, salt, pepper, garlic powder, onion powder and ground mustard. After the milk is heated, whisk in 1/2-1 cup of the milk, whisking until combined and no clumps remain. Whisk this mixture back into the milk, reduce heat to a simmer and allow the sauce to thicken (about 2-3 minutes). Remove from heat.
- Layer ingredients in the 8x11 dish: Add 1/2 of the pasta and 1/2 of the sauce, stir. Sprinkle 1/2 of the Mozzarella over the pasta and arrange 1/2 of the sliced cheese over the mozzarella. Repeat the steps once more (DO NOT stir the second layer of pasta and sauce unless you stir very gently, working to avoid disturbing the layer below).
- Bake for 25-30 minutes or until the top is a golden color and the milk is bubbling (while not necessary, the dish may be covered for 1/2 of the baking time, if desired).
- The dish will continue to cook when removed from the oven. Letting it cool for 5-10 minutes will insure a delicious (and slightly cooled) meal.

I grew up on this recipe - it was a family favourite and I now make it for my husband and children and they all love it, too. We like things spicy, so I've added cayenne powder to my version.

- Cook and drain macaroni; rinse with cold water.
- Meanwhile, melt butter or margarine either in a pot on the stove or in a microwavable container in the microwave.
- Stir in flour.
- Add milk and cook, stirring frequently (5 - 6 minutes in the microwave, stirring every minute) until thickened.
- Add seasonings and continue cooking on stove or in microwave for 1 - 2 minutes longer.
- Add 1 1/2 cups cheese and stir until melted (may need to be cooked for 1 more minute to melt the cheese).
- Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. My dad always layered the noodles and sauce, so that's an option, too.
- Sprinkle the breadcrumbs on top, followed by the remaining 1/2 cup cheese.
- Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

- Cook macaroni according to package directions.
- Melt butter in large sauce pan.
- Saute onion in butter until soft.
- Add flour and mustard to butter and cook until bubbly.
- Turn off heat and stir in milk.
- Put back on heat and stir with wire whisk until sauce thickens.
- Turn off heat and stir in worcestershire and cheese.
- Stir until cheese has melted.
- Add salt to taste.
- Mix in macaroni.
- Pour into 11x15 inch pan.
- Top with parmesan cheese (it adds that extra kick).
