4 boneless skinless chicken breasts
4 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon black pepper
2 teaspoons garlic powder

Steps:

  • Preheat broiler.
  • Rinse and pat dry chicken.
  • Whisk olive oil and spices together in a small bowl. Add to chicken and coat. Let marinade 30 minutes.
  • Cook chicken 6-8 inches from broiler about 5-7 minutes.
  • Turn and cook an additional 5-7 minutes.

1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces

  • Preheat oven broiler.

1 bag (14 oz.) Birds Eye® Recipe Ready Grilling Blend
1 lb. boneless skinless chicken breast halves, cut into bite-sized cubes
2 Tbsp. olive oil
1 Tbsp. balsamic or red wine vinegar
1/2 tsp. salt
1/8 tsp. black pepper
2 Tbsp. shredded Parmesan cheese (optional)

Steps:

  • 1. Preheat oven broiler.
  • 2. Combine all ingredients, except Parmesan cheese, in large bowl; toss to coat.
  • 3. Transfer vegetables and chicken to broiler pan. Broil, stirring and turning vegetables once, 10 minutes or until chicken is done and vegetables are tender.* Sprinkle with parmesan cheese.
  • *Cook chicken to an internal temperature of 165°F as measured with a food thermometer.

1 chicken, 3 to 3 1/2 lbs., cut up
1 dash(es) salt
1 dash(es) black pepper
BASTING SAUCE
2 Tbsp oil or melted butter
3/4 c tomato ketchup or chili sauce
2 Tbsp lemon juice
2 clove garlic, minced or pressed
3 Tbsp fresh chopped basil or 2 tsp. dried basil leaves

Steps:

  • 1. Cut off excess fat from chicken pieces.
  • 2. Loosen the skin away from the meat (this helps the basting sauce to reach the meat underneath).
  • 3. Sprinkle chicken with salt and pepper.
  • 4. Mix together and blend well the oil, tomato ketchup or chili sauce, lemon juice, the garlic and the herbs used.
  • 5. Place chicken pieces on rack.
  • 6. Brush on both sides with basting sauce.
  • 7. Grill chicken for 12 to 15 minutes on one side, brushing with basting sauce from time to time.
  • 8. Turn chicken over.
  • 9. Brush again with sauce.
  • 10. Grill chicken for another 12 to 15 minutes or until chicken is done and juices run clear when pierced with a fork.
  • 11. Serve immediately with crusty bread and a tossed green salad, tomatoes and crispy baked potato wedges.

18 cooked mini chicken meatballs (page 12), prepared as 3/4-inch meatballs, roasted at 450°F for 15 to 20 minutes
2 bunches watercress, ends trimmed and discarded, the rest cut into 2-inch-long pieces
1 cup oven-dried cherry tomatoes (recipe follows), at room temperature
2 cups white beans (page 85) or rinsed canned white beans
1/2 red onion, halved and cut into 1/2-inch-thick slices
1/4 cup apple cider vinaigrette (page 112)
Oven-Dried Cherry Tomatoes
2 pints cherry tomatoes, halved
6 fresh thyme sprigs
4 garlic cloves, crushed
2 teaspoons salt
1/4 cup olive oil
(makes 1 cup)

Steps:

  • Prepare a hot grill. Soak wooden skewers for 5 minutes to prevent them from burning.
  • Skewer each ball in the center using 3 balls per skewer. Place the skewers on the hot grill and cook, turning them so that the balls are hot and charred on all sides, for about 5 minutes total.
  • Meanwhile, combine the watercress, cherry tomatoes, beans, and onions in a large bowl. Dress with the apple cider vinaigrette, making sure to lightly toss the salad mixture but thoroughly incorporate the dressing.
  • Transfer the salad to a large platter or individual bowls and top with the hot chicken balls.
  • Oven-Dried Cherry Tomatoes
  • Preheat the oven to 275°F.
  • Combine the cherry tomatoes, thyme, garlic, salt, and olive oil in a large mixing bowl and toss to thoroughly coat the tomatoes.
  • Spread out the tomatoes on a large rimmed baking sheet. Bake until the tomatoes are shriveled and sweet but not browned, about 1 1/2 hours. Rotate the pan every 30 minutes for even cooking.

4 large chicken breasts, boneless and skinless
2 Tbsp olive oil, extra virgin
1 Tbsp all purpose greek seasoning
1 tsp thyme, dried
1 tsp oregano, dried
1 Tbsp lemon zest, grated
ROASTED BROCCOLI
1 bunch broccoli fresh, florets
3-4 Tbsp olive oil, extra virgin
1 Tbsp all purpose greek seasoning
1 large garlic clove, grated
2 tsp lemon juice, fresh
CREAMY MUSHROOM SAUCE
8 oz cremini mushrooms, slides
1 small onion, sliced
2 large garlic cloves, grated
1 tsp thyme, dried
1 Tbsp chicken base
1 1/2 c water
1/4 c brandy/whiskey or dry sherry
1/2 pt half and half
1 1/2 pkg brown gravy packet
2 Tbsp canola oil

Steps:

  • 1. Add extra virgin olive oil to a large heated pan. Sauté mushrooms until golden brown. Add onions, garlic and thyme sauté until the onions are soft. Mix brown gravy mix and chicken base with the water. Add mixture to sautéed veggies. Add brandy and let simmer. Add a little more water if need to ensure a creamy consistency. Add cream and simmer. Let sauce reduce by half.
  • 2. In a large bowl, combine chicken, olive oil, greek seasoning, garlic cloves and lemon zest. Marinate for at least 2 hours. On a hot grill cook chicken for 12-15 minutes. Turn once. Internal temperture should read 160 degrees.
  • 3. Preheat oven to 375 degrees. Combine all ingredients for the roasted broccoli. On a large baking sheet arrange broccoli in a single layer. Roast for 10-15 minutes, or until broccoli florets are golden brown. Turn once.

1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/8 teaspoon ginger

2 whole chicken breasts, skin &,fat removed
1/3 cup plain low-fat yogurt
vegetable oil

Steps:

  • Mix the crumbs& seasoning.
  • Dip the chicken in the yogurt then into the crumb mixture.
  • Brush your broiler pan with oil and place the chicken flesh side down broil 7-9" from heat source (or bake at 450F if you prefer) Broil 15 minutes one side flip and cook another 10-15 minutes or until the chicken is cooked through.
