Steps:

  • Place fish in a greased 13-in. x 9-in. baking dish. Brush with butter. In a small bowl, combine the remaining ingredients; sprinkle over fish. , Bake, uncovered, at 425° for 10-15 minutes or until the fish flakes easily with a fork.

There is nothing fancy about this but if your looking for a crispy coating without any deep-frying this is about as good as it gets, If your skillet is not large enough to hold all of the fish, then transfer to a baking sheet that has been coated with oil, only dry breadcrumbs or the coating will not adhere to the fish --- cooking time is for oven only, if desired any large fish fillet can be replaced for the cod, all seasoning my be adjusted to taste

1 1/2 cups dry breadcrumbs
1 1/2 cups yellow cornmeal
2 1/2 teaspoons seasoning salt
1 1/2 teaspoons lemon pepper (or use 1 teaspoon black pepper or to taste)
1 1/2 teaspoons garlic powder (garlic lovers increase to 2 teaspoons if desired)
1/2 teaspoon cayenne pepper (more or less if desired)
6 (6 ounce) cod fish fillets (about 3/4-inch thick)
3 large eggs, slightly beaten
6 -7 tablespoons vegetable oil (more or less as needed)

Steps:

  • Preheat oven to 475 degrees (set oven rack to second-lowest position).
  • In a large heavy ziploc plasic bag combine bread crumbs, cornmeal, seasoning salt, lemon pepper, cayenne and garlic powder; shake the bag to mix (can use a shallow bowl).
  • In a shallow bowl slightly beat the eggs.
  • Adding one piece of fish at a time to the bag, coat well with the mixture, then remove and dip the fish in the eggs, then return to the bag to coat the fish again, repeat for all of the cod pieces; transfer to a plate.
  • Heat about 3 tablespoons oil in a large 12-inch ovenproof skillet (preferably cast-iron) over high heat until hot but not smoking.
  • Fry the fish until the undersides are golden brown (about 1 minute).
  • Turn over and add in another 3-4 tablespoons oil; cook another 1 minute more.
  • Place the skillet in the oven and bake for about 5-6 minutes or until JUST cooked through.

2/3 cup crushed crackers (I use Ritz)
1/4 cup grated Parmesan cheese (about 1-ounce)
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1 pound sole, scrod, perch or other mild-tasting fish fillets
Lemon wedges

Steps:

  • Preheat oven to 350 degrees F.
  • Melt the butter in a 9 by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan. Dip the fish around in the melted butter, dip each piece in the crumb mixture, and return it to the baking pan. Bake the fillets for 20 to 25 minutes, or until the fish flakes with a fork. 1/2 teaspoon coarsely ground pepper, divided

1/4 cup seasoned bread crumbs
4 cod fillets (4 ounces each)

  • For tartar sauce, in a small bowl, mix mayonnaise, relish and lemon zest. Refrigerate until serving., Preheat oven to 400°. Cut potatoes lengthwise into 1-in.-thick wedges; toss with oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread evenly in a greased 15x10x1-in. baking pan. This is very crispy fish without deep frying, no mushiness either. For oven-fried fish, this is as good as it gets. I make it in a cast iron skillet....

6 cod fish fillets
about 7 tablespoons corn oil for frying
DRY MIX IN SHALLOW BOWL #1
1 1/2 cups dry panko breadcrumbs.
1 1/2 cups yellow cornmeal
2 1/2 teaspoons seasoning salt
1 1/2 teaspoons lemon pepper
1 1/2 teaspoons garlic powder
1/2 teaspoon cayenne pepper
WET MIX IN SHALLOW BOWL #2
3 large eggs slightly beaten

Steps:

  • 1. Pre-heat oven to 475 degrees and set the oven rack to second-lowest position.
  • 2. Mix the cornmeal, bread crumbs, and seasonings in the first shallow bowl. Beat the eggs in the second shallow bowl. Add one piece of fish to the DRY bowl, coat well and remove and dip the fish in the WET bowl. Return to the DRY bowl and coat again. Do this with all the fish pieces. It is a 3-step process: dry, wet, finishing with dry. Transfer all breaded fish to a plate.
  • 3. Heat the oil in a large cast iron skillet, or any oven-proof skillet. Cast iron just browns better. Fry the underside of the fish until it is brown 1 or 2 minutes, then turn and fry the other side. When all of the pieces are browned, put the skillet and the fish in the hot oven. Bake about 5 or 6 minutes until just cooked through.
  • 4. Here is what it looks like. Serve immediately.

  • 6. Cook's tip: Pie plates make great shallow breading dishes. Next time I plan on using white cornmeal. I fry a lot of catfish using white cornmeal, and we prefer it over the yellow. It is not as coarse. I will let you know what happens when I do. Enjoy!

  • Coat the bottom of a jelly roll or baking pan with vegetable oil.
  • Combine flour, pepper, and garlic salt in a large bowl.
  • Add beer and stir well.
  • Beat egg whites until stiff peaks form.
  • Gently fold egg whites into flour mixture.
  • Combine breadcrumbs and parsley in a shallow dish.
  • Dip one fish strip into the flour mixture and then dredge in the breadcrumb mixture. Place on the prepared baking sheet.

The other day, my husband was asking for fish and chips but with my high cholesterol, I have to avoid things like that. I found in a magazine at the doctor's office this recipe for oven fried fish, which is nice and crispy like the deep fried kind but without all the fat. This is excellent served with evelyn/athens' Spicy Oven Fries and your favourite cole slaw recipe.

4 (6 ounce) tilapia fillets
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1/2 cup dried breadcrumbs
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 tablespoon vegetable oil

Steps:

  • Position rack on top shelf in oven.
  • Preheat oven to 500 degrees F.
  • Line a rimmed baking sheet with foil and set a wire rack on top.
  • Lightly spray or brush rack with vegetable oil.
  • Pat fish dry with paper towels.
  • Slice fillets in half lengthwise to form long pieces.
  • In a pie plate or wide shallow dish, whisk egg white with buttermilk.

4 (4 ounce) fish fillets
cooking spray
3 tablespoons seasoned bread crumbs
3 tablespoons cornmeal
1/4 teaspoon celery salt
1/8 teaspoon ground red pepper
1 tablespoon canola oil or 1 tablespoon peanut oil
1 egg white, slightly beaten
1/2 teaspoon water
4 lemon wedges

Steps:

  • Rinse and pat each fillet dry with paper towels. Measure the thickness (thickest place) of your fish fillets.
  • Pre-heat oven to 500 degrees.
  • Stir together the bread crumbs, corn meal, celery salt, and red pepper. Add the canola oil (or peanut oil) to this mix and blend with a fork. Set aside.
  • In a small bowl, beat the water and egg white together and then brush one side of each fillet with the egg white. Dip each fillet in the bread crumb mixture on the egg white side.
  • Spray a baking pan with the cooking spray and place the fillets, crumb side up, in the pan.

2 lb ocean perch fillets, mahi mahi, or your choice
2 large egg whites, room temperature
1 Tbsp lemon juice
1 tsp dill
1/2 tsp salt
1 tsp black pepper

non stick cooking spray
2 tsp paprika ( if using panko bread crumbs)

Steps:

  • 1. PREHEAT OVEN TO 400 DEGREES F. Coat a baking sheet with non stick cooking spray & set aside till needed.

1 small shallot , minced (about 2 tablespoons)

2 large eggs
2 teaspoons prepared horseradish (optional)
3 tablespoons mayonnaise
1/2 teaspoon paprika

1 1/4 pounds skinless cod fillet , or haddock fillet, or other thick white fish fillet (1 to 1 1/2 inches thick), cut into 4 pieces (see note)

Pulse bread, melted butter, 1/4 teaspoon salt, and 1/4 teaspoon pepper in food processor until bread is coarsely ground, eight 1-second pulses (you should have about 3 1/2 cups crumbs). This is a recipe handed down to me from a buddy who has ran a seafood restaurant on the waters of Marina Del Ray, California. I have never found a crunchier, juicier and flavorful but yet oven fried fish ever. Enjoy it, I have. To prevent overcooking, buy fish fillets at least 1 inch thick. The bread crumbs can be made up to 3 days in advance, cooled, and stored at room temperature in an airtight container.

This recipe came from BHG.com. It gives the fish a nice crunchy topping without being dried out. I also like to spritz lemon juice across the fillets the instant they come out of the oven.

4 (4 ounce) fish fillets (fresh or frozen, cod or even flounder works well)
nonstick cooking spray
3 tablespoons seasoned dry bread crumbs
3 tablespoons yellow cornmeal
1/4 teaspoon lemon-pepper seasoning
1 tablespoon vegetable oil
1 beaten egg white

Steps:

  • Preheat oven to 500.
  • Let fish thaw if it's frozen.
  • After thawing, rinse and pat dry.
  • Spray baking pan with nonstick spray.
  • Mix together bread crumbs, cornmeal and lemon pepper.
  • Add the oil, tossing mixture to combine.
  • Dip ONE side of fish fillet into the beaten egg white, then dredge through the bread crumb mixture (just the one side).
  • Place fish, coating side up, on the baking pan.
  • Bake, uncovered for 6 to 8 minutes for each 1/2 inch thickness of fish, or until it flakes easily with a fork.

Kosher salt
3 tablespoons buttermilk
3 tablespoons mayonnaise
4 teaspoons relish
2 stalks celery, thinly sliced, plus chopped celery leaves for topping
2 scallions, thinly sliced
Freshly ground pepper
3 large egg whites
1 1/2 cups panko breadcrumbs
1 1/4 pounds cod (preferably Pacific cod), cut into 8 pieces
1 teaspoon paprika
Cooking spray
Lemon wedges, for serving

Steps:

  • Preheat the oven to 450 degrees F. Put the potatoes in a saucepan and cover with cold water by 1 inch; season with salt. Bring to a boil; reduce the heat to medium low and simmer until tender, 10 minutes. Drain.
  • Combine the buttermilk, mayonnaise and relish in a large bowl. Add the potatoes, sliced celery, scallions, 1/4 teaspoon salt, and pepper to taste; toss. Refrigerate until ready to serve.
  • Whisk the egg whites in a large bowl. Put the breadcrumbs in another bowl. Season the fish with the paprika, 1 teaspoon salt and a few grinds of pepper. Dip each piece in the egg whites, then dredge in the breadcrumbs, pressing to coat. Transfer to a rack set over a baking sheet.

3 cups panko crumbs
1 tablespoon Old Bay or Szeged Fish spice (palmful)
1 tablespoon granulated onion(palmful)
1 tablespoon granulated garlic,(palmful)
1 lemon or lime, zested
2 generous tablespoons freshly chopped thyme leaves
2 generous tablespoons finely chopped chives
1 1/2 to 2 pounds cod, cut from the thickest part of fillets shaped into 8 rectangular batons
Salt
2 extra-large egg whites, beaten to frothy
Malt Vinegar
Mushy Peas
1 cup packed flat-leaf parsley
1 cup packed fresh mint
3 cups freshly shelled peas or frozen and defrosted organic peas, patted dry
1 tablespoon olive oil
1 tablespoon butter
2 large shallots, finely chopped
1-2 cups chicken stock
Freshly ground black pepper

Steps:

  • Heat the oven to 400 degrees F. Arrange a baking rack over the top of a baking sheet. Melt 4 tablespoons butter over low heat in small pot. Put the bread crumbs in a shallow dish and douse with the melted butter and toss to combine. Season with seafood seasoning, granulated onion powder, granulated garlic, citrus zest, thyme and chives. Clean and pat the fish dry, then season with salt, to taste. Coat the fish in egg whites, then gently press them into the bread crumbs to coat evenly, then arrange them on the baking rack. Bake on center rack of the oven until the fish is white and flaky and the crumbs are golden, about 20 minutes. Meanwhile, add the parsley and mint to a food processor and pulse to finely chop, then scrape into a bowl and set aside. Return the base to the processor; do not rinse the base. Add the peas and pulse until very finely chopped. In a medium saucepan, heat 1 tablespoon of extra-virgin olive oil, a turn of the pan, and the remaining butter over medium heat. Add the shallots and saute for 5 minutes, then add the stock and peas and bring to a bubble over medium-high heat. Cook the fresh peas for about 10 minutes, and about 6 to 7 minutes, if using frozen defrosted peas. When most of the liquid has evaporated, season with salt and pepper, to taste, and stir in the herbs. Remove from the heat. Spoon pools of not-so-mushy peas onto each dinner plate and top with crispy fish batons. Douse the fish with lots of malt vinegar and enjoy!

8 ounces plain low-fat yogurt
1 1/2 teaspoons mustard
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 tablespoon fresh thyme, chopped
1 cup Italian seasoned breadcrumbs
1/4 cup corn flakes, crushed
olive oil (to drizzle on fillets)

Steps:

  • Mix together yogurt, mustard, salt, pepper, and thyme.
  • Place each fillet in mixture to coat, place coated fillets in a resealable plastic bag. Pour remaining marinade in bags. Place bags in refrigerator for 8 hours or overnight.
  • Preheat oven to 400 degrees.
  • Mix together breadcrumbs and crushed cornflakes.
  • Remove fillets from bag & drain excess marinade. Dredge in in breadcrumb mixture until coated.
  • Place on cookie sheet. Drizzle with oil.
  • Cook 15-20 minutes until golden brown. Watch carefully to prevent burning of crust.
  • Serve plain, with tartar sauce, or with ketchup.
