CHEF JOHN'S GAZPACHO image

4 peeled tomatoes diced
1/2 English cucumber
1/2 c diced red bell pepper
1/4c minced green onion
1 lg jalapeno pepper minced
2 cloves garlic
1 tsp salt
1/2 tsp cumin
pinch oregano, cayenne pepper, black pepper
pint cherry tomatoes
1/4 c olive oil
1 lime juiced
1 tbspn balsamic vinegar
1 tsp worcestershire
2 tblspn fresh basil

Steps:

  • combine diced tomatoe, cucumber, bell pepper, green onion, jalapeno and garlic in lg bowl with salt oregano cumin cayenne and black pepper Place cherry tomatoes, olive oil, lime juice, balsamic and worchestire in blender. Puree until smooth, strain into tomato-cucumber mixture. Put 1/3 of the mixture into blender...puree until smooth..return to remaining mixture. stir to combine and refrigerate for up to 2 hours...salt&pepper to taste
