1 cup fat-free plain Greek yogurt
1 tablespoon Dijon mustard
2 garlic cloves, minced
8 chicken drumsticks (4 ounces each), skin removed
1/2 cup whole wheat flour
1-1/2 teaspoons paprika
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
Olive oil-flavored cooking spray

Steps:

  • In a large bowl or dish, combine yogurt, mustard and garlic. Add chicken and turn to coat. Cover and refrigerate 8 hours or overnight., Preheat oven to 425°. In another bowl, mix flour, paprika, baking powder, salt and pepper. Remove chicken from marinade and add, 1 piece at a time, to flour mixture; toss to coat. Place on a wire rack over a baking sheet; spritz with cooking spray. Bake 40-45 minutes or until a thermometer reads 170°-175°.

1/4 cup vegetable oil
1/2 cup baking mix
1 tablespoon paprika
2 teaspoons creole seasoning
1/2 teaspoon garlic powder
1/4 teaspoon italian seasoning
1/8 teaspoon black pepper
10 chicken drumsticks

Steps:

  • Preheat oven to 450°F Pour the vegetable oil evenly over the bottom of a 15- x 10- x 1-inch baking pan.
  • Combine the baking mix, paprika, Creole seasoning, seasoned salt, garlic powder, Italian seasoning and black pepper in a large bowl. Mix well. Pour into a paper bag.
  • Add the chicken drumsticks, a few at a time, to the bag. Shake the bag to coat drumsticks. Arrange on the prepared baking pan.
  • Bake the chicken, turning once, until juices run clear when pierced with the tip of a knife, about 30 minutes. Transfer to a serving dish. Serve immediately.

Fried chicken is my favorite food, but we all know that it's not the best thing in the world for you, so the next best is baked, boiled or broiled, yuk...This recipe makes it taste like fried chicken but you can sort of feel not guilty when eating it...I hope you like it.

3/4 c original bisquik baking mix
1 pkg ranch dressing mix, dry
1 tsp paprika
1 large egg, slightly beaten
1 Tbsp water
salt and pepper, to taste
3 lb chicken legs
1 c ranch dressing for dipping, if desired

Steps:

  • 1. Heat oven to 400 degrees. Line a 9x13 inch baking pan with non stick Reynolds wrap.
  • 2. In a shallow bowl, mix the biscuit mix, the dry ranch dressing and paprika together. In another shallow dish, mix the water and egg.
  • 3. Dip each leg in the egg mixture and then in the biscuit mix. Place in baking pan in a single layer
  • 4. Bake in 400 degrees oven for 35 minutes. Turn legs over and bake another 15 or 20 minutes. Serve with Ranch Dressing is desired.

This is a good recipe, breaks from having the same old fried chicken.

2 Tbsp spicy red seasoning
1 bay leaf
1 tsp hot sauce
1 qt buttermilk
8 chicken drunsticks
1 c flour
1/4 tsp salt
1 tsp ground pepper
2 Tbsp butter

Steps:

  • 1. In lidded plastic container large enough to hold drumsticks, combine seasoning, bay leaf, hot sauce, & buttermilk. Stir well. Add chicken, turning to coat, cover with lid & refrigerate several hours, or overnight. When ready to cook chicken, preheat oven to 400. Remove chicken from refrigerator. Drain chicken, ( do not rinse) pat dry with paper towels. Place flour. salt & pepper in plastic, sealable 1 gallon size bag. Add chicken drumsticks in batches & shake bag thoroughly to coat. Put butter in roasting pan & place in oven. When butter is melted & pan is hot,add chicken, SKIN side down,to pan. Place in oven & cook 20 minutes. Lower the temperature, to 350, turn drumsticks & cook another 20 minutes, or until cooked through. Remove coooked drumsticks to paper towel- lined plate to drain.

8 chicken drumsticks (3 1/2 pounds)
1 large egg

Steps:

  • Heat oven to 400. Line a jelly-roll pan or shallow roasting pan with foil. Coat with nonstick cooking spray.
  • Skin chicken by grasping skin with paper towels and pulling off.
  • In a pie plate or shallow bowl, slightly beat egg. Coat a few drumsticks in egg at a time.
  • Place desired crunchy coating (listed below) in plastic food bag. If using tortilla chips, stuffing mix, french fried onions, cheese crackers, or honey mustard pretzels, close bag and crush with a rolling pin. Put 1 or 2 drumsticks in the bag at a time and shake to coat chicken evenly.
