A healthy way to make french fries - once you try these you'll never go back to the old "frying" method! Enjoy!!

Steps:
- Wash potatoes and cut them into semi-thin strips.
- Place strips in a bowl and add cool water to cover the potatoes.
- Wash out some of the"starch" and then drain the potatoes well.
- Mix in the olive oil and sprinkle with salt.
- Mix all of the potatoes well so that they all get coated evenly.
- Spray a cookie sheet with PAM and then place the potatoes on top.
- Cook at 350F for approximately 20-25 minutes (more if you want them crunchy and brown) Serve and enjoy!
OVEN FRIED FROZEN FRENCH FRIES
These certainly don't taste as sinful as deep frying the fries, but it is an almost guilt-free alternative that tastes really good.

Steps:
- Place fries in a plastic bag and spray thoroughly with cooking spray.
- Shake for a minute or so to distribute the oil.
- Place on baking sheet (I find a baking stone works best) and sprinkle lightly with chili powder, salt and freshly ground pepper.
- Bake at 400 until slightly brown and sizzling.
- Serve immediately.

- Preheat the oven to 400 degrees F.
- Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
- Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
- When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

- Place potato strips into ice water, cover, and chill for 1 hour or longer.

- Set the oven to 400°F In a small bowl whisk the egg, egg white and Dijon mustard until smooth.
- Place the Melba toast, thyme, rosemary, oregano, garlic powder, salt, black pepper and cayenne pepper and blitz to create textured breadcrumbs (leave some pieces about the size of currants).
- Dip a chicken breast in the egg mixture, coating it thoroughly and then dredge in the breadcrumbs, patting and turning frequently until well coated.
- Place the chicken on a baking sheet and bake for three minutes, and then lightly spray the top of each chicken breast with oil.
- Bake for five minutes more then turn. Spray lightly with the oil again and bake for a further six minutes. This recipe works well with any piece of chicken (with or without the bone). Use skinless legs, thighs or breasts.

- Thursday, August 15, 2013 Oven Baked Parmesan French Fries Notes: you could cook without the rack but you will need a well oiled pan and will need to flip half way through. I just wouldn't do the Parmesan fries without the rack... Other potato types could be used but as with most French Fry recipes, russets are probably the best choice. Preheat oven to 425 convection. Convection is better here since we are cooking on a rack and not flipping. You can do 425 conventional if you need to. Peal potatoes. Cut into 1/4 inch fries. My cheap mandolin again earns it's keep. Place in cold water and soak for 10 minutes or so. Then rinse 2-3 times. Grate 1/2 cup of fresh parmesan. Prep a baking tray with foil and a rack. Spray with PAM. Pore onto dish towel and pat dry. Dry the bowl. Place fries into dried bowl. Add 1 T olive oil and 1 t kosher salt. Mix well. Add the Parmesan and mix well. Spread on the rack without overlapping. Bake until golden brown.
