This is a recipe that my grandmother made ever since I can remember (I'm 58). I bake the potatoes like she did and serve them with pork or chicken. It's a favorite of my father-in-law who always asks for them when he comes for dinner.

OVEN BAKED PORK CHOPS WITH POTATOES
I found this recipe by Nagi on a site called Recipetineats.com. "Made with ingredients you already have in your pantry.....slathered in a country style sauce then baked until sticky and golden. Also great with chicken". I used two pork chops and 4 Yukon gold potatoes. Kept the marinade amount the same. We were licking our plates.

Steps:
- Set oven to 400*.
- toss potatoes with 1T oil, salt and pepper. Place in roasting pan big enough to hold potatoes and chops. (I used an iron skillet) and roast for 15 minutes.
- Meanwhile mix marinade ingredients and slather on pork chops.
- When potatoes have cooked 15 minutes add pork chops to the pan. Cook 10-15 minutes depending on size. Stir potatoes.
- Turn chops and baste with pan juices. Stir potatoes. Return to oven for another 10-15 minutes.
- turn on broiler. Baste chops again and broil for a few minutes until carmelized and golden.
- Serve, scraping the juices onto the chops and potatoes. Garnish with parsley if desired.

- Preheat oven to 350 degrees Fahrenheit.
- Spray a baking dish with cooking spray (Pam) until well coated.
- Place cut up potatoes, onions, and kielbasa in the baking dish.
- Place baking dish in the oven.
- Cover with foil.
- After 30 minutes remove baking dish from the oven.
- Remove foil and stir the vegetables and meat.
- Return the baking dish back to the oven, without the foil, and continue to bake for another 30 minutes.
- Remove from oven; stir and serve.

- FLAVORED OIL: In a small bowl, whisk together olive oil, liquid smoke and garlic. Set aside.
- SEASONING MIX: In a small dish mix kosher salt, garlic powder and black pepper. Set aside.
- Wash, scrub and dry potatoes well. With a sharp paring knife, cut out a nice wedge from the potato's middle. Remove the wedge and place 1 teaspoon of butter in the hollow. Sprinkle with seasoning mix. Replace the wedge pressing down gently.
- Place each potato on its own sheet of foil. Rub the potato with the olive oil mixture making sure to get some of the crushed garlic on the potato. Sprinkle with additional seasoning mix and roll up tightly in aluminum foil.
- OVEN: Place potatoes in a 350 degree oven for 60 minutes.
- GRILL: Place potatoes on the grill away from the coals, close the lid and grill for 40-60 minutes depending on the temperature of your grill.

- Place 1/4 of potatoes in greased oven dish. Sprinkle 1/4 teaspoons of salt and 1/4 teaspoons pepper. - Put baggies w/potatoes in microwave for 10 minutes.

- Preheat the oven to 350 degrees. Remove the porcini stems from their caps. Shave the dirt from the stems with a small, sharp knife until you reach the clean flesh. Wipe the caps clean using a damp paper towel. Working in two batches, place the stems in a food processor and pulse until coarsely chopped.
- Brush 1/2 teaspoon of olive oil on the bottom of an 8-by-11-inch shallow baking dish. Arrange the potatoes in the dish in a slightly overlapping layer. Sprinkle 1 clove of garlic evenly over the potatoes and season with 1 teaspoon of salt and pepper. Place the stems in an even layer over the potatoes.

CRISPY OVEN BAKED POTATOES
These are a little labor intensive, but worth the effort. I used Yukon Gold potatoes because they are my favourites! Make sure you keep an eye on them so they don't over cook.

- 1. Preheat oven to 450'F. Put a large metal baking tray into the oven and let it heat up while the oven heats up. This ensures the crispness of the potatoes. Put the rack on the bottom section of your stove.
- 2. Slice your potatoes 1/2" thick. Put 1" of water in a large metal pot and add some seas salt, then put the potatoes in the water and boil then simmer until the potatoes are slightly done, about 5 minutes.
- 3. Test the potatoes for doneness. They should still be somewhat hard inside. Drain well once they are done.
- 4. In a large bowl, add 2 tablespoons of oil with the sea salt. Add the hot potato slices and toss. Add two more tablespoons of oil and toss again. The tossing is important. You want to rough up the outside of the potatoes a little to ensure they get crisp.
- 5. Once the oven is heat to the desired temperature, remove the baking pan and put a tablespoon of oil on it and roll it around to ensure the whole pan is oily. This keeps the potatoes from sticking and ensures crispiness.
- 6. Place the potatoes in a single layer on the hot baking tray and put in the oven for 15-25 minutes.
- 7. Once that is done remove the potatoes and flip them over to the other side and bake for another 10-20 minutes.
- 8. These are best served immediately as they will dry out.
- 9. Enjoy!
OVEN-BAKED CHICKEN AND POTATOES WITH LEMON AND ROSEMARY
This isn't a "traditional" German recipe, but I got it from a German woman who invented it. This recipe uses legs, but you can use any part of the chicken you want. This recipe is also good with any white fish (I used halibut). I hope you enjoy this as much as I do.

- Preheat oven to 450°F.
- Slice potatoes in half length-wise. Set aside.
- Squeeze lemons into a medium size bowl. Add olive oil to the lemon juice. Mix well.
- Cut small slits in chicken legs.
- Break apart rosemary sprigs and stuff into the cuts in the chicken legs.
- Place chicken legs and potatoes, cut side down, on a baking sheet, with small bits of rosemary underneath the potatoes.

- Preheat oven to 450 F degrees.
- If you are using young potatoes or potatoes with a clean skin, DO NOT PEEL, just scrub well; otherwise peel potatoes.
- Slice potatoes lengthwise to about 1/2 inch thick slices.
- Place in a large bowl; cover with cold water and let sit for about 5 minutes.
- Drain and pat slices dry with paper towelling.
- DO NOT RUB POTATOES WITH ANY OILS OR BUTTER.
- Place directly on middle rack in oven and bake for 20 minutes in preheated 450 F oven.
- Turn potatoes over and continue to bake for an additional 15 minutes or until cooked.
- Remove potatoes into a large bowl.
- Drizzle melted butter or margarine over potatoes; gently turn slices to coat.
- Serve with additional melted butter or margarine, a dollop of yogurt or sour cream and a sprinkling of chopped green onions or chives.
- If desired, you may wish to sprinkle sliced potatoes before baking with garlic powder or your choice of a spice.
- The slices will puff up and turn a nice medium-dark brown when baked.

- 1. Preheat oven to 375F. Heat the oil and butter in a Dutch oven over medium heat. Add the bacon and cook, stirring occasionally, until just beginning to brown.
- 2. Slice onions and potatoes thinly (peel potatoes, if desired). Wash and slice leek, white part and some of the light green part.
- 3. Add onion slices to bacon and cook 5-10 minutes, stirring occasionally, until onions have softened and turn golden brown.
- 4. Add potatoes and leeks and stir well. Pour in broth. Season with pepper. Bring to a boil, cover, and put pot into oven and bake 30-40 minutes, or until potatoes are soft.
