This following Greek fries recipes works very well and is less labor intensive than the pan-fried version which is included. Grilled gives the fries an extra layer of flavor and crispness. These fries are golden to brown, crisp outside and flaky soft inside.

3 lbs russet potatoes, peeled and cut into thick pieces finger sized slices
1/4-1/2 cup good quality olive oil, plus
oil, to coat baking sheet
salt
1 lemon, to serve

Steps:

  • Preheat the oven to 400°F.
  • Oven fried:.
  • Pour the oil in to a large bowl, add the potatoes and toss to coat.
  • Oil a baking sheet with a little more olive oil, and arrange the potatoes in the sheet. Bake for 50 minutes or until potatoes are golden brown and cooked.
  • Sprinkle with the salt and serve with the lemon for squeezing.

  • Blot the potato pieces dry with a paper towel. Heat approximately an inch of olive oil in a large heavy frying pan over low heat and add sufficient potatoes to make one layer. Cover and cook until the potatoes begin to turn golden. Remove the lid, increase the heat to medium-high, and frequently turn the potatoes one fry at a time, until they are golden brown. Remove the fries with a slotted spoon to a paper towel lined plate and repeat until all the potatoes are fried. Season to taste.

  • Prepare grill heating to 400 degrees. Oil grates well. Place fries on grill lower to 350. Close lid.
  • After 15 minutes turn, Close lid.

6 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Peel potatoes and cut lengthwise into quarter-inch thick slices. Cut again into 1/4-inch thick fries. Place the potatoes into a bowl with cold water; this will help keep the fries crisp. Just before cooking, drain water and place on paper towel, pat dry.
  • Put the potatoes in a bowl; add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown. Cook for approximately 30 to 40 minutes, turning frequently until golden brown.
  • Remove from oven, allow to cool for 1 or 2 minutes and serve.

The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

6 Yukon Gold potatoes, cut into thick fries
1 tablespoon white sugar
¼ cup extra-virgin olive oil
1 teaspoon garlic powder, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
  • Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
  • Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.

1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat oven to 450 degrees. Place two baking sheets in oven. Peel potatoes; cut into 1/4-inch sticks. Place in a bowl; toss with olive oil, salt, and pepper.
