1 1/2 - 2 pounds large shrimp (31 to 40 per pound, peeled and deveined)
Salt and pepper
1 cup chopped onion (about 1 medium yellow, white or red onion)
1 teaspoon extra virgin olive oil or coconut oil
1 teaspoon dried oregano
1/2 teaspoon salt
6 garlic cloves (finely minced or pressed)
1 pound orzo pasta
4 cups low-sodium chicken broth
1 cup water
1 (28-ounce) can diced tomatoes, drained
1 cup frozen peas
1 cup feta cheese, crumbled
Lemon wedges for serving

Steps:

  • Preheat the oven to 400 degrees F. Pat the shrimp dry with a few paper towels and lightly season with salt and pepper. Set aside while preparing the rest of the ingredients. Lightly grease a 9X13-inch baking pan with cooking spray and also set aside.
  • In a 4- or 5-quart pot, combine the onion, oil, oregano and 1/2 teaspoon salt over medium-low heat. Cover the pot and cook, stirring occasionally, until the onions have started to turn translucent, 7-8 minutes. Check often so the mixture doesn't burn. Stir in the garlic and cook for about 30 seconds.
  • Stir in the orzo, increase the heat to medium, and cook, stirring often, until the orzo is coated with the mixture and is lightly browned, 3-4 minutes.
  • Stir in the broth and water and cook, stirring every once in a while, until the orzo is slightly tender but still has some firmness (it will continue to cook in the oven), about 10-12 minutes. Stir in the tomatoes, peas and shrimp.
  • Pour the mixture into the prepared pan. Sprinkle the feta cheese evenly over the top. Bake the casserole until the shrimp are cooked through and the cheese is lightly browned, 18-20 minutes.
  • Serve with lemon wedges.

6 slices lean bacon
3 scallions, finely chopped
1 -2 garlic clove, minced
3 cups chicken broth
1 1/2 cups orzo pasta
1 cup freshly grated parmesan cheese
salt
black pepper
1 lb fresh small shrimp, peeled and deveined
1 1/2 cups frozen thawed peas (or fresh)
1 cup sour cream

Steps:

  • In a skillet, fry bacon over medium heat until almost crisp; drain on paper towels.
  • Pour off all but about 1 tablespoon of fat; add in scallions and garlic; stir/saute until softened and set aside.
  • Crumble bacon.
  • Preheat oven to 350°; butter a 2 quart casserole and set aside.
  • In a large saucepan, bring the broth to a boil; add in the orzo; decrease heat to low; cover, and cook until all the liquid is absorbed, about 15 minutes.
  • Transfer the orzo to the casserole dish; add bacon, scallions and garlic, and ½ cup cheese; season to taste with salt and pepper and stir well.
  • Add the shrimp and peas and stir gently just to mix the shrimp and peas into the orzo.
  • Spread the sour cream evenly over the top; sprinkle with the remaining cheese.
  • Bake about 25 minutes, until bubbly and golden.

3/4 pound orzo pasta (rice-shaped pasta)
1/2 cup freshly squeezed lemon juice (3 lemons)
Freshly ground black pepper
2 pounds (16 to 18 count) shrimp, peeled and deveined
1 cup minced scallions, white and green parts
1 cup chopped fresh dill
1 cup chopped fresh flat-leaf parsley
1 hothouse cucumber, unpeeled, seeded, and medium-diced
1/2 cup small-diced red onion
3/4 pound good feta cheese, large diced

Steps:

  • Preheat the oven to 400 degrees F.
  • Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt and 1 teaspoon of pepper. Pour over the hot pasta and stir well.
  • Meanwhile, place the shrimp on a sheet pan, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine and spread out in a single layer. Roast for 5 to 6 minutes, until the shrimp are cooked through. Don't overcook!
  • Add the shrimp to the orzo and then add the scallions, dill, parsley, cucumber, onion, 2 teaspoons salt, and 1 teaspoon pepper. Toss well. Add the feta and stir carefully. Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. If refrigerated, taste again for seasonings and bring back to room temperature before serving.

8 ounces orzo (rice-shaped pasta)
6 tablespoons olive oil
1 cup crumbled feta cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons plus 1/4 cup chopped fresh basil
1 pound uncooked medium shrimp, peeled, deveined
2 garlic cloves, chopped
1 14 1/2-ounce can diced tomatoes in juice
1/2 cup dry white wine
2 teaspoons dried oregano
1/2 teaspoon dried crushed red pepper

Steps:

  • Preheat oven to 400°F. Brush 11x7-inch glass baking dish with oil. Cook orzo according to package directions. Drain well and return orzo to same pot. Add 2 tablespoons olive oil, 1/4 cup feta cheese, Parmesan cheese, and 2 tablespoons basil; stir to blend. Arrange orzo mixture in prepared dish.

  • Add butter, remaining olive oil and remaining garlic to a medium skillet set over medium heat. When the butter starts to bubble, add the orzo and 1/2 teaspoon salt and cook, stirring often, until the orzo is toasted, about 2 minutes, adjusting the heat as necessary to prevent the garlic from burning. 1 large sweet onion, finely diced
1 lb shrimp, cooked and cleaned
1/2 lb peas (fresh or frozen)
2 garlic cloves, chopped
1/4-1/2 cup fresh basil, chopped
1/2 lb lowfat mozzarella cheese, shredded
1/4 cup half-and-half
salt and pepper, to taste
parmesan cheese (to garnish)

Steps:

  • Set water on to boil for the orzo.
  • Chop onion and garlic finely and saute in a bit of olive oil til translucent.
  • Cook orzo to package directions, add peas the last couple of minutes of cooking.
  • Drain and return to pot. Place on burner on low heat. Add cooked shrimp and stir.
  • Add half-and-half, stir in cheese, onion/garlic and fresh basil. Salt and pepper to taste.
  • Enjoy!
