Elegant Orzo with Wilted Spinach and Pine Nuts image

Orzo pasta with wilted spinach, feta cheese, tomatoes, and balsamic vinegar - goes well with fish or chicken.

1 (16 ounce) package uncooked orzo
½ cup olive oil
2 tablespoons butter
½ teaspoon minced garlic
½ teaspoon dried basil
½ teaspoon crushed red pepper flakes
1 cup pine nuts
1 (10 ounce) bag baby spinach
⅛ cup balsamic vinegar
1 (8 ounce) package crumbled feta cheese
½ fresh tomato, chopped
salt to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes. (Firm or slightly undercooked orzo works best for this dish.) Drain, transfer to a mixing bowl, and set aside.
  • Heat olive oil and butter in a large skillet over medium high heat, stirring to blend. Stir in garlic, basil, and red pepper flakes, and reduce heat to medium. Stir in pine nuts and cook until lightly browned. Add spinach, cover, and cook on low heat for 5 minutes, or until spinach is wilted.
  • Toss spinach mixture with orzo pasta. Portion onto serving plates with a drizzle of balsamic vinegar and a sprinkling of crumbled feta cheese and chopped tomatoes. Allow guests to adjust seasoning with salt, as needed. Enjoy!

1 pound orzo pasta
3 tablespoons extra-virgin olive oil, plus 1/4 cup
2 cups fresh arugula (about 3 ounces)
3/4 cup crumbled ricotta salata cheese (or feta cheese)
1/2 cup dried cherries
12 fresh basil leaves, torn
1/4 cup toasted pine nuts
3 tablespoons lemon juice
1 1/2 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and put the pasta on a large cookie sheet. Drizzle the pasta with 3 tablespoons olive oil, toss, spread out, and set aside to cool.
  • Once the orzo is cool, transfer to a large serving bowl. Add the remaining ingredients and toss gently to combine. Serve.

1/2 cup pine nuts
1 pound orzo
1/4 cup fresh lemon juice, or to taste
1/2 cup extra-virgin olive oil
1 garlic clove, finely minced
1 (12 ounce) jar marinated roasted bell peppers, drained and chopped
1/2 pounds mozzarella, preferably fresh, cut into 1/2-inch pieces
4 cups chopped baby arugula leaves (2 1/2 ounces)
2 cups chopped radicchio (2 1/2 ounces)

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Roast pine nuts in a rimmed sheet pan until golden, about 8 minutes.
  • Cook orzo in a 6- to 8-quart pot of boiling salted water until tender, then drain well in a colander.
  • Meanwhile, whisk together lemon juice, oil, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl.
  • Add hot orzo to dressing and toss. Let orzo come to room temperature, stirring occasionally.
  • Add pine nuts, peppers, mozzarella, arugula, and radicchio and toss well.

5 tablespoons butter, divided
1 1/4 cups orzo pasta
3 cups chicken broth
1 onion, diced
2 garlic cloves, minced
1/2 cup pine nuts, toasted
1/4 cup fresh parsley
salt and pepper, to taste

Steps:

  • Brown orzo in 3 tablespoons butter, stirring often until pasta is toasted and golden, about 5 minutes.
  • Add chicken broth to orzo and cook until pasta is tender. You could drain pasta, but I like to cook it down a little more and leave it creamy.
  • While pasta is cooking, saute onions and garlic cloves until onions are soft and translucent.
  • Add onions and garlic, toasted pine nuts, and fresh parsley to orzo. Season with salt and pepper to taste.
  • You could serve straight away, or you could leave it in a warm oven until the rest of your meal is ready!
