WATERMELON MOJITOS



Watermelon Mojitos image

8 watermelon chunks, seeds removed
Juice of 4 limes
8 teaspoons sugar
4 handfuls mint leaves, plus more for garnish
8 ounces white rum
Ice
Ginger ale, chilled, for topping

Steps:

  • For each drink, muddle 2 watermelon chunks with the juice of 1 lime and 2 teaspoons sugar in a glass. Stir in a handful of mint leaves, then add 2 ounces white rum and ice to each glass. Top each drink with ginger ale and garnish with more mint.

GRAPEFRUIT MOJITO

Number Of Ingredients 6

2 tablespoons fresh lime juice
2 tablespoons superfine sugar
20 fresh mint leaves, plus 2 sprigs, for garnish
Zest and juice (3 to 4 tablespoons) of 1/2 grapefruit, plus 2 wedges, for garnish
4 ounces white rum
Club soda, as needed

Steps:

  • In a cocktail shaker, muddle the lime juice, sugar, mint leaves and grapefruit zest until the mint is bruised and the sugar starts to melt. Add the grapefruit juice and rum. Fill with ice and shake until very cold. Strain into 2 glasses over ice and top off with the club soda. Garnish with a mint sprig and grapefruit wedge in each glass.

1 teaspoon sugar
2 to 3 fresh mint leaves
Soda
2 ounces fresh lemon juice
2 ounces fresh lime juice
Pulp from 1/2 lime
1-ounce rum

Steps:

  • Add sugar, mint leaves and a touch of soda to a highball glass. Using a muddler, crush the mint leaves and blend the mixture. Add the juices, lime pulp and fill with ice. Add rum and top the glass with soda.
  • Serving suggestion: Garnish with a mint leaf and a straw. Encourage guests to stir their drinks with their straws to capture all the sweetness at the bottom of the glass.
