1 lb of your favorite pasta, cooked per package diections and drained (you can also use linguine for this one. YUM)
1 1/2-2 lbs boneless skinless chicken breasts, cooked and cut into 1 inch cubes
2 cups frozen baby peas, thawed
1 carrot, peeled and sliced
1 red bell pepper, cored and cut into julienne strips
4 green onions, chopped
1/2 cup light soy sauce
1/4 cup canola oil
1/4 cup rice wine vinegar
2 tablespoons sesame oil
1 tablespoon garlic, minced
2 tablespoons dark brown sugar
1 tablespoon fresh ginger, grated
2 drops hot chili oil
2 tablespoons sesame seeds

Steps:

  • In a large bowl, combine the cooked pasta, cooked chicken, peas, carrots, red bell pepper and green onion.
  • In a small bowl, whisk the soy sauce, canola oil, rice wine vinegar, sesame oil, garlic, brown sugar, ginger and chili oil.
  • Pour over chicken pasta mixture and toss to combine.
  • Sprinkle on the sesame seeds.
  • Cover and refrigerate 2 hours before serving.

Great cold meal for summer, or to bring to a get together. Low fat, and DELICIOUS! This is a recipe I've found different variations of in a couple of magazines. Prep time depends on if you need to cook the pasta. Feel free to change amounts to suit your taste or according to what's in your frig. (Beware...make extra...I eat a serving,at least, as soon as it's mixed. Yummy!)

3 tablespoons lemon juice or 3 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons teriyaki sauce
1/2 teaspoon fresh ginger, chopped fine
1/4 teaspoon crushed red pepper flakes
1 teaspoon sesame oil
1 teaspoon sugar
1 lb imitation crabmeat or 1 lb cooked fish (or other seafood)
8 ounces cooked pasta (I like linguine)
1/3 cup chopped scallion
1/3 cup cilantro
shredded carrot
thin sliced red pepper (or whatever vegies you have)

Steps:

  • Mix first seven ingredients in large bowl.
  • Add pasta, seafood, and vegies.
  • Toss together and serve, or refrigerate.

With a wonderful combination of colors and flavors, this pasta salad goes great with barbecued chicken or pork. I found this recipe in a magazine, I think TOH, but not sure. Not yet tried by me but here for safe keeping because it sounds good and a little different. Time does not include chilling time.

2 cups macaroni, uncooked
2 large carrots, cut into 1-inch strips
1 cup snow peas, halved (could sub regular peas)
2 green onions, sliced
1/2 cup sweet red pepper, thinly sliced
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon red wine vinegar
1 tablespoon soy sauce
1/2 teaspoon ground ginger
1/4 teaspoon pepper

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water. Place in a large bowl; add the carrots, peas, onions and red pepper.
  • In a small bowl, whisk dressing ingredients until smooth. Pour over salad and toss to coat. Cover and refrigerate for 1-2 hours.

Great recipe for family, friends and church functions. There are many versions to this recipe this is mine. It is a Family Reunion Favorite, the crunch from the noodles, and the crisp broccoli, and the sweet & sour flavors from the dressing, we just love it. I always double the recipe when I make it for a large gathering.

SALAD INGREDIENTS
1 lb broccoli slaw,
1/2 lb broccoli floweretts
1 bunch green onions, chopped small
2 pkg ramen noodles, (chicken flavor)
1 large red bell pepper, chopped
1 c slivered almonds
1 c sun flower seeds
6-8 oz fresh snow peas, washed, & stems removed, cut into smaller pieces
DRESSING:
1 c olive oil or vegetable oil
1/3 c white vinegat
1/2 c splenda, or granulated sugar
2 seasoning packets from noodles

Steps:

  • 1. Crunch noodles into small pieces. Then in a large bowl combine noodles with remaining salad ingredients, and stir to mix.
  • 2. For the dressing combine all of the ingredients including both seasoning packets from the noodles. Pour into a cruet or jar with a tight fitting lid, and SHAKE VIGOROUSLY until sugar has dissolved. Leave in refrigerator till ready to serve, then shake again just before serving.
  • 3. Just before serving pour dressing over salad and toss well and serve. Garnish with extra strips of bell pepper if desired.
  • 4. Note: There is never enough broccoli floweretts in the bsg of broccoli slaw, hence the addition of the half pound, I also like fresh snow peas, so I usually wash trim & cut them into thirds to get them evenly distributed through out the salad. It is really good.

LOVE ORIENTAL CHICKEN SALADS AND WANTED A COOL VERSION FOR PICNICS. IT'S ALWAYS A HIT. YOU CAN ADD OR SUBTRACT ANY VEGGIES YOU DON'T LIKE. IN THE PHOTO IT SHOWS CUCUMBERS BUT THE LONGER IT SITS THE CUCUMBERS GET SOGGY. ADD JUST BEFORE SERVING.
2 medium chicken breasts, boneless and skinless
8 oz rotini pasta cooked
1 c carrots, grated
1/2 c edamame removed from shells
3 green onions sliced
1/2 c red onion chopped
2 c red cabbage, shredded
2 c snow peas chopped
1 c asian oriental salad dressing
1 Tbsp honey
2 tsp soy sauce
chow mein noodles

Steps:

  • 1. Place cubed chicken breasts in ziplock bag and dust with Corn Starch. Set aside and cook pasta according to package directions, drain and rinse in cold water.
  • 2. chop veggies and place in large bowl. Once pasta is cooked and cooled add to veggie bowl. In skillet put in oil and add chicken dashing soy sauce on top. The corn starch adds a slight crispness.
  • 3. While chicken cooks, in bowl add salad dressing, honey & soy sauce. Mix well. Taste to see if you need more honey or soy sauce.
  • 4. Once chicken is cooked, cool slightly than add to pasta and veggies.
  • 5. Pour over dressing mixture and toss. Chill for 4 hours or overnight. I always do overnight as it lets the flavors soak in and meld. Top with chow mein noodles just before serving.

1 lb cubed turkey
1/4 lb sliced carrots
Dressing
3/4 cup vegetable oil (not olive - I use canola)
2/3 - 3/4 cup soy sauce
1/4 cup peanut butter
1/4 cup sugar
1/16 cup white vinegar
1/16 cup fresh ginger
1 stsp red pepper
1/4 cup sesame seeds

Steps:

  • Blend dressing in food processor - combine with pasta, green onions, turkey, and carrots. Sprinkle with sesame seeds Refrigerate

I first had this pasta salad at a wedding shower and just had to have the recipe! It has become a family favorite and is served at almost every family function! Prep and cook time does not include refrigeration time which should be at least 12 hours.

5 chicken breasts, cooked and cubed
1 lb bow tie pasta, cooked
1/2 lb snow peas, blanched 3 minutes
1 red pepper, chopped
3 green onions, sliced
1 can sliced water chestnut
1 cup slivered almonds, toasted
1/2 cup mayonnaise
2 tablespoons soy sauce
2 tablespoons parsley
1 teaspoon dry mustard
1 teaspoon fresh ginger or 1/2 dried ginger
salt and pepper

Steps:

  • Combine all salad ingredients and toss with dressing.
  • Refrigerate at least overnight before serving.
  • I also recommend making a second batch of the dressing and tossing it with the salad just before serving as the pasta soaks up most of the dressing.

2 tsp curshed red pepper
1/4 cup corn oil
1/2 cup sesame oil
6 T honey
5 T soy sauce
1/2 cup cilantro
3/4 cup peanuts
1/2 cup green onions
2 tso sesame seeds

Steps:

  • Cook spagetti. Heat oils and red pepper over medium heat. Remove and add honey and soy sauce. Mix with noodles and refrigerate for 4 hours. Add peanuts, onions, cilantro, and seeds prior to serving.
