SalScilla Farms Sauteed Beet Greens image

One of many ideas for beet greens. We use our tri-colored roasting beets. Sometimes we thinly slice small beets into the dish. You can also use use the beet greens fresh chopped with any lettuce salad.

1 tablespoon olive oil
2 small beets - scrubbed, peeled, and sliced
⅛ cup thinly sliced red bell pepper
2 cloves minced garlic
2 bunches beet greens, roughly chopped
⅛ teaspoon Greek seasoning (such as Cavender's®), or more to taste
salt and ground black pepper to taste

Steps:

  • Coat the bottom of a skillet with olive oil and heat over medium heat. Add beets and saute for 2 to 3 minutes. Add bell pepper and saute for 2 to 3 minutes. Stir in garlic and cook until fragrant, about 2 minutes. Mix in beet greens and season with Greek seasoning, salt, and pepper. Cook until beet greens are wilted, about 5 minutes. Serve immediately.
