This recipe comes from my Aunt. Someone from their church had sent over this dish while I was in visiting my family. We all had a fit over it. Wanted to share and have for my own reference too. NOTE: Can use Splenda in place of sugar

2 (3 ounce) packages beef-flavor ramen noodles
2 (8 1/2 ounce) packages broccoli coleslaw mix
1 cup toasted slivered almonds
1 cup sunflower seeds
1/2 bunch green onion, chopped
1/2 cup sugar
3/4 cup oil
1/3 cup white vinegar

Steps:

  • Before opening noodles, crush into 1 inch pieces. Open packages and set aside flavor packets.
  • Place noodles in bottom of large serving bowl. Top noodles with broccoli slaw, then sprinkle with almonds and sunflower kernels, and green onions.
  • In a separate bowl combine sugar, oil, vinegar, and flavor packets from noodles. Pour over slaw, cover and chill up to 24 hours.
  • Toss before serving.

2 bunches of chopped green onions
1 cup sunflower seeds
1 cup slivered almonds
2 packages beef-flavor ramen noodles
3/4 cup oil
1/2 cup sugar
1/3 cup vinegar

Steps:

  • Mix in large bowl coleslaw, green onion, sunflower seeds, almonds, and broken up ramen noodles In a small bowl mix oil, sugar, vinegar and the beef flavoring from ramen noodles Mix the oil mixture with the coleslaw mixture and serve.

SALAD
1/2 head of savoy cabbage, shredded (or your favorite)
1/2 head of purple cabbage, shredded
5 - 7 medium green onions, chopped
1/2 - 3/4 c carrots, shredded or matchsticks
1 c almonds, slivered or sliced
1/2 c sunflower seeds
2 pkg oriental ramen noodles
2 Tbsp sesame seeds, toasted or plain (for top of salad before serving)
DRESSING
1 c oil
1/2 c seasoned rice vinegar
1/4 c sugar (or more according to your taste)
2 Tbsp soy sauce
1/2 Tbsp sriracha hot chili sauce (optional)
1/2 - 1 Tbsp oriental flavoring mix from packet of noodles
salt and pepper to taste

Steps:

  • 1. Chop up your 2 different cabbages
  • 2. Mix the ingredients of your salad dressing and pour into a glass jar w/lid and shake till it is combined or use a wire whisk to combine.
  • 3. Add all your ingredients for your salad except for sesame seeds and toss together in a bowl.
  • 4. Pour some of your dressing over salad and toss and then decide if you need more or not. Just before serving add your sesame seeds to the top for garnish.
  • 5. If I am taking this salad to serve at a picnic I wait about an hour before serving to add the ramen noodles and sesame seeds on top. Here is the finished salad we served today for the 4th of July at my parents camp in Cooks Forest. It is such a colorful and crunchy salad.

1 c sunflower seeds (plain)
2/3-1 c slivered almonds (plain)
2 pkg chicken ramen noodles w/ seasoning pks
1 pkg coleslaw (any type)
1/2 c vegetable oil
1/4 c sugar
3 Tbsp white vinegar

Steps:

  • 1. In a container with a tight lid, combine the oil, sugar, and vinegar with the contents of the seasoning pack(s).
  • 2. Place slaw in large bowl. Crush the ramen noodles add the almonds and sunflower seeds. Cover the container and shake well to blend the dressing
  • 3. Pour the dressing over the salad, add the sunflower seeds and almonds, and toss to combine.
  • 4. Let Oriental Coleslaw set in fridge for about 30 minutes before serving (just as good the next day too).

4 packages chicken-flavored ramen noodles (reserve seasoning packets for dressing)
1 (1 lb) bag coleslaw mix
1 (4 ounce) bag sunflower seeds
3 bunches green onions, chopped
2 (4 ounce) cans sliced water chestnuts
1/2 cup vinegar
3/4 cup vegetable oil
1 cup sugar
2 tablespoons soy sauce

Steps:

  • In a large bowl, break up ramen noodles into smaller pieces.
  • Add coleslaw mix, sunflower seeds, green onions, and water chestnuts.
  • Stir to combine.
  • To make dressing: In a small bowl whisk together vinegar, oil, sugar, soy sauce and seasoning packets until combined.
  • Pour over salad, toss well to make sure dressing is evenly distributed.
  • If you want the noodles to soften, refrigerate overnight.

1/2 cup toasted sesame seeds

1/8 cup rice wine vinegar

Steps:

  • To make dressing, combine vinegar, oil, salt, pepper and ramon noodle spice packet and stir well.
  • In a separate bowl, combine cabbage, crunched up ramon noodles (dry), almonds, sesame seeds and onions.

1 head cabbage or 1 head bagged coleslaw mix (about 4-6 cups)
1 cup sliced almonds
2 packages chicken-flavored ramen noodles (save broth mix from ONE pkg for dressing)
1 bunch chopped green onion
1/2 jar sesame seeds
3/4 cup oil
6 tablespoons sugar
5 -6 tablespoons rice vinegar

Steps:

  • Roast almonds and seeds in oven@350 15-20 minutes.
  • Add to cabbage onions and broken noodles.
  • Pour dressing over cabbage mixture.
  • Refrigerate thoroughly before serving.
  • *I usually cook the noodles for about 1 minute, and than rinse throughly in cold water.

This is a great salad for a picnic or a party. The secret to this recipe is to use a very good Balsmaic vinegar. I buy mine on-line from an Italian Deli in Boston's North End, it costs a bit but is so worth it !

1 onion, diced
2 (3 ounce) packages oriental-flavor instant ramen noodles, reserve seasoning packets for dressing
1 cup sunflower seeds
1 cup sliced almonds
3/4 cup olive oil
1/3 cup balsamic vinegar
1/2 cup sugar or 1/2 cup Splenda Sugar Blend for Baking

Steps:

  • Mix cole slaw and onion in large ziplock bag.
  • Put ramen noodles in large ziplock bag and pound with mallet until broken into small pieces. Add sunflower seeds and almonds to same ziplock bag.
  • Dressing: combine olive oil, balsamic vinegar, splenda & flavor packets until blended.
  • Mix ingredients from the 2 ziplock bags and dressing together just before serving.

HOLIDAY ORIENTAL COLESLAW

Something a little different to serve at the holidays. All dressing ingredients can be adjusted to taste. You can decrease the vegetable oil to 1/4 cup and increase sesame oil by 1 tablespoon. Also you can just use one package of store-bought pre-shredded coleslaw mix in place all other coleslaw ingredients, purchasing the ready-made coleslaw mix will decrease prep time. adding in chopped green onions and cranberries. Of coarse this can be made anytime of the year omitting the cranberries!

1 cup snow peas (strings and ends removed)
3 cups napa cabbage
3 cups shredded bok choy
1 cup fresh bean sprout
3 green onions, chopped (or use red onion, finely chopped)
1 cup dried cranberries
1/2 cup toasted slivered almonds
salt and pepper
1/2 cup vegetable oil
1/4 cup rice vinegar
1 tablespoon soy sauce
2 -3 teaspoons brown sugar (or to taste)
1 -3 teaspoon minced fresh garlic (or to taste)
2 teaspoons minced fresh ginger (or to taste)
1 teaspoon sesame oil

Steps:

  • In a small bowl wisk together oil, rice vinegar, soy sauce, brown sugar, garlic, ginger, sesame oil and black pepper; whisk until the sugar has dissolved.
  • Steam or cook the snow peas if using for 2 minutes or until crisp-tender; drain and plunge into ice water, or very cold water, then drain and pat dry with a paper towel.
  • In a large bowl toss together, snow peas, napa cabbage, bok choy, bean spouts and green onions.
  • Just before serving pour the dressing over and add in the cranberries; toss to combine and season with salt and pepper, then sprinkle with toasted almonds on top.
  • Delicious.

1/2 cup slivered almonds
2 tablespoons sunflower seeds
3 ounces package of Ramen noodles (chicken flavored)
16 ounces package of coleslaw mix
4 green onions - diced
DRESSING:
1/2 cup canola oil
2 tablespoons white sugar
3 tablespoons cider vinegar
1/2 teaspoon ground black pepper
1 tablespoon soy sauce
1 packet of seasoning from Ramen noodles

Steps:

  • Preheat oven to 350 degrees F. On a large baking sheet with edges, combine almonds, sunflower seeds, crushed Ramen noodles. Lightly spritz with vegetable oil spray. Roast for 10 minutes. Let cool. In a large bowl, combine coleslaw and green onions. Add almond mixture and combine. In a jar or small bowl, combine oil, sugar, vinegar, black pepper, soy sauce and seasoning packet from the ramen noodle mix. Whisk until thoroughly blended. Just before serving, pour dressing over salad; toss to coat evenly. Serve immediately.
