CHINESE-STYLE BRAISED BEEF ONE-POT



Chinese-style braised beef one-pot image

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

Number Of Ingredients 14

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

2 pounds ground beef
1 cup chopped onion
1 cup chopped celery
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 can (14 ounces) bean sprouts, undrained
1/4 cup reduced-sodium soy sauce
1/2 teaspoon pepper
1 cup uncooked long grain rice
1 can (8 ounces) sliced water chestnuts, drained
2 cups frozen peas, thawed
1 can (5 ounces) chow mein noodles

Steps:

  • In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in the soup, bean sprouts, soy sauce and pepper. Bring to a boil. Pour into a greased 13x9-in. or 3-qt. baking dish. Stir in rice and water chestnuts., Cover and bake at 350° for 30 minutes. Uncover; stir in peas and sprinkle with noodles. Bake until heated through, 15-20 minutes longer.

This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

1 pound ground beef
1 onion, chopped
2 stalks celery, chopped
½ cup slivered almonds
1 cup cooked rice
1 (10.75 ounce) can condensed cream of chicken soup
½ cup water
3 tablespoons soy sauce
5 ounces chow mein noodles

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
  • In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

1 tablespoon butter
3 tablespoons flour
1/2 cup low sodium beef broth
1/2 cup 1% low-fat milk
1/2 teaspoon salt, to taste
1 teaspoon pepper, to taste
2 lbs 90% lean ground beef
1 cup sweet onion, chopped
1 cup celery, chopped
1 cup fresh bean sprout, rinsed & dried
1/4 cup low sodium soy sauce
1 cup long grain rice, uncooked
1 (8 ounce) can water chestnuts, sliced & drained
2 cups frozen peas, thawed
1 (5 ounce) can chow mein noodles

Steps:

  • In a small saucepan, melt butter over medium low heat. Stir in flour a little at a time until smooth and then remove pan from heat. Stir in salt and pepper.
  • Using a whisk, add broth, milk, a little at a time, stirring to keep mixture smooth then return to heat and bring sauce to a gentle boil; stir constantly until sauce thickens.
  • In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink; drain and return to skillet.
  • Add the roux mixture you made in the small saucepan to the beef mixture along with the bean sprouts and soy sauce; bring to a boil.
  • Pour into a greased 3 quart baking dish and then stir in rice and water chestnuts.
  • Cover baking dish and bake at 350F for 30 minutes. Uncover, stir in peas and sprinkle with chow mein noodles. Bake another 15-20 minutes or until heated through.

Steps:

  • Saute' onions and celery in butter; add uncooked rice and ground beef. Brown.
  • Combine soup, water, soy sauce, pepper and bean sprouts.
  • Place into buttered casserole dish.
  • Add onion and meat mixture.
  • Bake at 350 degrees for 30 minutes, covered.
  • Bake, uncovered, for an additional 30 minutes.
  • Serve over noodles, chinese noodles or rice.

1 lb hamburger
1 c chopped onions
1 c diced celery
1 can(s) 4 0z. sliced mushrooms
1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
2 Tbsp soy sauce
2 c water
1 c white rice or rice of your choice
1/2 pkg crispy chow mien noodles

Steps:

  • 1. brown hamburger in skillet, drain and set aside
  • 2. In large casserole dish, mix together the soups, onions, celery and soy sauce and mushrooms
  • 3. Add meat to the soup mixture, mix well . Add the water and rice.
  • 4. Bake in 350 oven for 1 hour or until rice is done. Cover top with crispy chow mien noodles and let rest for 10 min before serving.

Michelle Southan's recipe for Asian Beef and Vegetable Casserole is from the August 2007 issue of the 'Australian Good Taste' magazine. Michelle suggests that you "put away your wok and get ready for aromatic slow-cooked beef, Asian style". Some conversions which may be useful in making this recipe: 90g = 3oz; 300g = approx. 91/2oz; 1.5 kg = 3lbs; 4cm = 11/2"; 125ml = 4 fluid ounces; 500ml = 16 fluid ounces.

2 tablespoons plain flour
1 1/2 kg casserole beef steaks, cut into 4cm pieces (such as chuck steak or gravy beef)
2 tablespoons olive oil
1 yellow onions (for Americans) or 1 brown onion, halved, thinly sliced (for Australians)
3 carrots, peeled, cut into 2cm-thick slices
4 whole star anise
4 cm fresh ginger, peeled, thinly sliced
2 stalks lemongrass, pale section only, halved
500 ml beef stock
125 ml brandy
90 g tomato paste
300 g green beans, topped
fresh coriander leaves, to serve
steamed rice, to serve

Steps:

  • Preheat the oven to 180°C/350°-375°F/4-5 gas mark; place the flour on a plate and season with salt and pepper, add the beef and toss to coat; shake off any excess.
  • Heat half the oil in a 4L (16-cup) capacity flameproof, ovenproof casserole dish over a medium heat; add half the beef and cook for 2-3 minutes each side or until brown; transfer the cooked beef pieces to a plate; repeat with remaining oil and beef, reheating the dish between batches.
  • Add the onion and carrot to the pan and cook, stirring, for 5 minutes or until the onion is soft; add the star anise, ginger and lemon grass, and stir to combine.
  • Add the beef, stock, brandy and tomato paste to the dish; cover and bake for 1 1/2 hours or until the beef is tender.
  • Meanwhile, cook the beans in a medium saucepan of boiling water for 3-4 minutes or until they are bright green and tender crisp; drain.
  • Add the beans to the beef mixture and stir to combine.
  • Top the beef mixture with coriander and serve with steamed rice.
  • FREEZING TIPS: Cool at the end of step 6; transfer to an airtight container; lbel, date and freeze for up to three months; thaw in the fridge overnight; reheat the oven to 180°C (see above for conversions); reheat and continue from step 7.

A form of this recipe has been in my family since I was a young girl and has always been a favorite. Since I have been making it, I have tweaked it some for my family's taste. It is very filling and a wonderful spin on a Chinese meal.

1 medium onion
1 c celery
2 c instant rice
2 can(s) cream of mushroom soup
2 c water
1 can(s) mushrooms
1 can(s) water chestnuts
1 can(s) bean sprouts
1/4 c soy sauce
1/2 bag(s) chow mein noodles

Steps:

  • 1. Preheat oven to 375 degrees. Grease a 9 x 13 casserole dish
  • 2. Brown ground beef, onion, and celery together. Drain well
  • 3. Put Instant Rice in the bottom of the prepared dish. Add Soup, Water, Mushrooms, Water Chestnuts, Bean Sprouts, and Soy Sauce. Stir to combine well.
  • 4. Add browned meat, onions and celery to rice mixture. Stir in well. Cover with aluminum foil and bake 45 minutes. Remove foil and top with Chow Mein Noodles. Bake for an extra 15 minutes.

I hadn't had this forever and my mother made it tonight. It was missing something. It's supposed to be a Chow Mein style casserole. So I added in a few things (carrots, bamboo, and mushrooms). Sprinkle green onions over the top before serving!

1 can condensed cream of mushroom soup

1/2 can bamboo shoots, chopped
3/4 cup rice
1/8 cup soy sauce
1 can chow mein needles

  • 1. Preheat oven to 350°. In a large skillet, brown hamburger. Add celery, onion, carrots, and mushrooms.
  • 2. Mix in soups, water, rice, soy sauce, bamboo shoots and bean sprouts to meat mixture.
  • 3. Pour mixture into 2.5-3 quart casserole dish. (Place dish on cookie sheet, in case is spills over.) Bake for 45 minutes. Uncover and bake an additional 30 minutes. Sprinkle with chow mein noodles on top the last 10 minutes.

I have yet to try this, but based on the ingredients, I know I'm going to like it! (What can I say, I grew up with hot dishes and casseroles!) I think I'd actually top the dish with the chow mein noodles and then bake it. I like them better that way!
