ORANGE STREUSEL COFFEE CAKE
This recipe came from my sister. She would make this every Christmas morning, and serve it with Mimosas.

Steps:
- Stir together the flour, sugar, baking powder and salt.
- Stir in orange rind.
- Mix together in separate bowl -- all the wet ingredients.
- Make a well in centre of dry ingredients and add wet ingredients.
- Mix until JUST blended.
- Prepare 8" round cake pan (greased and floured).
- Pour into cake pan.
- Sprinkle with topping.
- Bake at 350 degrees for about 30 minutes or until golden.

Steps:
- Preheat oven to 350°F.
- Grease and flour two 9X5X3-inch loaf pans.
- To make cake, combine cake mix (minus the 2 T. for struesel), pudding mix, eggs, sour cream and oil in a large mixing bowl.
- Using an electric mixer, mix for 3 minutes on medium speed.
- Pour batter into pans, dividing evenly between the two pans.
- For streusel, in a small bowl combine reserved cake mix, brown sugar, cinnamon and butter with a fork until crumbly.
- Stir in pecans.
- Sprinkle streusel on top of cake batter.
- Bake for 50-60 minutes, or until toothpick inserted in the middle of pan comes out clean.
- Allow to cool in pans for about 15 minutes.
- Loosen loaves from pans.
- Invert onto a cooling rack.
- Turn the loaves right side up.
- Allow to cool completely.
- For glaze, in a small bowl, combine powdered sugar and milk or orange juice until smooth.
- Drizzle over top cooled loaves.

- NOTE: If you don't have an orange-flavored cake mix on hand, a yellow cake mix is an acceptable substitute.
- Just add 1 tbs of orange extract and 1 tbs grated orange peel to the batter before mixing Preheat oven to 350 degrees F.
- Grease and flour a 13x9-inch pan.
- Prepare and bake cake mix according to package directions.
- While cake is baking, combine powdered sugar, orange juice, melted butter, and water in a medium bowl.
- When cake is done, remove from oven and immediately poke holes in top with a fork or toothpick.
- Pour glaze slowly over top of hot cake, allowing it to soak in.
- Cool completely on a wire rack.

- Preheat oven to 350*. Grease and flour 10" bundt pan. set aside.
- for STREUSEL:.
- combine 2 tbls cake mix, 2 tbls brown sugar, 1 tsp orange peel and cinnamon in medium bowl. Stir in 1/3 cup pecans. set aside.
- for CAKE:.
- combine remaining cake mix, eggs, pudding mix, 1 cup orange juice and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Pour into pan.
- Sprinkle with streusel. Swirl with knife.
- Bake at 350* for 50-60 minutes or until toothpick inserted near the center comes out clean.
- Cool in pan 25 minutes. Invert onto serving place.
- for GLAZE:.
- combine 1 tbls brown sugar, 1 tbls orange juice and vanilla extract in small bowl. Add powdered sugar gradually, stirring until smooth. Stir in 1 tsp orange peel. Drizzle half the glaze over warm cake. Sprinkle 1/3 cup pecans over glaze. Drizzle remaining glaze over pecans. Serve warm.

I found this recipe in a magazine and it hung about on my desk for ages, until I eventually got around to making it. Sweet, but not too sweet, it has become a firm favorite in this house.

- Preheat oven to 350 degrees F.
- Grease a 9 inch square pan.
- Make the struesel topping by combining the brown sugar, flour, nuts and butter together with a fork until crumbly. Set aside.
- Stir together the flour, sugar, baking powder, baking soda and salt in a large bowl.
- Add the melted butter, orange juice, boiling water and egg. Stir with a wooden spoon until combined.
- Fold in the cranberries.
- Pour into the prepared pan.
- Sprinkle struesel over the cake batter.

- The cake may be frozen and reheated at 350 degrees F for 10 minutes.

I found this recipe in Better Homes and Gardens. It's a Nigella Lawson recipe. I love the taste of orange and chocolate together and this looked just scrumptious! I didn't see it anywhere on here and I don't want to lose this one!

- Preheat oven to 325°.
- Line a 9x5x3-inch loaf pan with parchment paper.
- Grease sides of pan.
- In a large bowl, with electric mixer, beat the butter, syrup and sugar until smooth.
- In a separate bowl, combine flour, baking soda and cocoa powder.
- Beat 1 tablespoon of the dry ingredients into the syrup mixture.
- Beat in 1 egg.
- Add another couple of spoonfuls of dry ingredients.
- Beat in the second egg.
- Beat in remaining dry ingredients, and then add, while still beating, the orange zest.
- Gradually add the orange juice. (The batter may look slightly curdled.).
- Pour batter into the prepared pan.
- Bake for 45 minutes (edges should look dry and center of cake may have dipped slightly).
- Cool in pan on wire rack.
- Carefully remove from pan and cool completely.
