1 teaspoon sesame oil
2 cups carrots, thinly sliced
1 1/2 teaspoons fresh ginger, grated
1 teaspoon sesame seeds, toasted and chopped
1 clove garlic, chopped
salt

Steps:

  • Saute carrots, garlic and ginger in sesame oil, over medium heat for about 5 minutes.
  • Add sesame seeds.
  • Cover and saute for another 3 minutes or until carrots are heated but still crisp.
  • Serve.

Orange-Honey Glazed Carrots image

3 bunches carrots, peeled
2 tablespoons unsalted butter
2 tablespoons honey
Kosher salt
1 teaspoon minced fresh ginger
1 teaspoon grated orange zest
1/2 cup freshly squeezed orange juice
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the carrots diagonally in 1-inch-thick slices. You should have about 5 cups of carrots. Place 1/2 cup water, the butter, honey, 2 teaspoons of salt, and the ginger in a large saute pan and bring to a boil. Add the carrots, cover the pan, and simmer over medium-low heat for 5 minutes. Remove the lid and continue to cook for about 20 minutes, or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
  • Add the orange zest and orange juice to the pan, tossing with the carrots. Simmer uncovered for about 5 minutes, until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots. Add the pepper and another teaspoon of salt, to taste.

1/3 cup sesame seeds
1 teaspoon fine sea salt
4 large carrots
1 tablespoon toasted sesame oil
1/2 teaspoon black sesame seeds
1/4 teaspoon ground coriander
1/4 cup Greek yogurt
1/4 cup mayonnaise
1/2 teaspoon sriracha
1/4 teaspoon curry powder

Steps:

  • Special equipment: a mortar and pestle or spice grinder
  • For the gomasio: In a dry saute pan set over medium heat, cook the sesame seeds until toasted a light brown. Remove to a mortar and pestle or spice grinder. Add the sea salt and crush until about half the seeds are crushed.
  • For the carrots: Using a vegetable peeler, shaved the carrots into ribbons. In a large bowl, mix the carrot ribbons with the sesame oil, black sesame seeds, coriander and 1 tablespoon of the gomasio.
  • For the sauce: In a small bowl, combine the yogurt, mayonnaise, sriracha and curry powder. Mix well then smear on a plate. Top with the carrot ribbons and garnish with more gomasio.
