GARLIC PARMESAN ORANGE ROUGHY
Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
- Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

I got this recipe from a community cookbook. It was so easy to prepare and very delicious. It is also healthy and low fat. A great weeknight dish.

Steps:
- Place fish fillets in a baking dish sprayed with Pam.
- In a bowl, mix mayo, lemon, lime and mustard.
- Add in dill and stir well.
- Spread all of the sauce over the fillets.
- Then sprinkle with the Parmesan.
- Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.
ORANGE ROUGHY WITH TARTAR SAUCE

- Place fillets on nonstick baking sheet coated with nonstick cooking spray. Sprinkle with salt, pepper, and paprika. Mix lemon juice and butter and drip over fish. Broil about 6 inches away from heat for about 10 minutes, basting once with lemon butter. Remove from broiler when fish is firm and flaky. Baste again and top with parsley and lemon slices. Serve immediately with tartar sauce. *Butter is high in "naturally" saturated fat and is used very sparingly in this delicious "A- " recipe. This nutritious fish is high in fatty acids that can reduce LDL (bad) cholesterol. It fits nicely into a day that contains an overall fat percentage of less than 20 percent.

- In a shallow bowl, combine bread crumbs and salt. In another shallow bowl, combine the orange juice, soy sauce, butter, oil and lemon juice. Dip the fillets into orange juice mixture, then coat with crumb mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 450° for 15-18 minutes or until fish flakes easily with a fork.
