PINEAPPLE AND MANDARIN ORANGE DESSERT
I made this up myself to add fruit to my husband's diet. He is diabetic and this satisfy's his cravings for something sweet. Even non-diabetics enjoy this. It is quick and you can add drained cherries for more flavor or color!

Steps:
- Mix pudding mix and cool whip together well, fold in drained fruit.
- Chill for 2-3 hours before serving.
- Great for diabetics!

Steps:
- In a large mixing bowl add the hot water to the jello, stirring till dissolved. Stir in orange juice. Chill until mixture begins to thicken ( I chill it in a sink half full of ice cubes, about 20 minutes ).
- Stir in sour ceam and sherbet, beat until thick and foamy. Fold in pineapple, mandarin orange segments and cherries. Pour into a lightly oiled 2 quart mold.
- Chill for 8 hours.*.
- Unmold, sprinkle with toasted coconut and serve.

- MIx jello as directed on box,add pineapple that has been drained and chill.
- Mix 1 cup pineapple juice,1 tablespoons Lemon juice,3/4 cups sugar,2 Tbsp.flour,and 2 beaten eggs.
- Cook until thick and let cool.
- Pour over jello.
- Top with nuts.
- MIx Dream Whip according to directions and mix in cream cheese until smooth.
- Pour over mixture and top with nuts.

- 1. In a small bowl, mix the Jello with the boiling water, stirring until completely dissolved, about 2 minutes. Pour into a blender or food processor.
- 2. Add remaining ingredients except for the pineapple and blend on high until thoroughly mixed. Stir in pineapple.
- 3. Pour into a Jello mold or an 8 X 8 dish and chill thoroughly until set. Cut into serving size pieces and serve or spoon into a dessert bowl with a dollop of whipped topping.
