4 teaspoons pine nuts, toasted and chopped
1 pound skinless chicken breast, boned and trimmed
2 tablespoons all-purpose flour, for dusting chicken
Canola Oil Spray
1/4 cup minced shallots, or red onion
1/4 cup chopped roasted red peppers
2 tablespoons chopped capers
2 tablespoons chopped olives
2 tablespoons chopped raisins
3/4 cup 100% Florida orange juice*
1 tablespoon fresh lemon juice
1 cup low-sodium chicken stock
1/2 teaspoon salt, plus more to taste
1/4 teaspoon black pepper, plus more to taste
2 tablespoons fresh chopped parsley
*May substitute Florida Orange Juice from Concentrate

Steps:

  • Toast pine nuts in a 350 degree oven for 3-4 minutes until golden. Remove, cool and chop. With a meat mallet, pound chicken breasts to 1/2-inch thick and season with salt and pepper. Dust both sides in flour, and pat so flour stays on. Heat sauté pan and coat with canola oil spray. Place chicken in hot sauté pan and spray uncooked side of chicken with canola oil in the pan. Sear chicken for one minute on both sides, and remove from pan. In the same sauté pan, add shallots and sauté briefly. Add roasted red peppers, capers, olives and raisins and sauté briefly until shallots are translucent. Deglaze pan with orange juice. Add chicken stock and lemon juice and reduce heat slightly when ingredients come to a boil. Add chicken back to the pan to cook until completely cooked through, and sauce is slightly thickened. Stir in salt, pepper and parsley. 1/2 cup (118 ml) oyster sauce
1/2 cup (95 g) sugar
3 ounces (90 ml) orange juice
3 ounces (90 ml) rice wine vinegar (unseasoned)
1 tablespoon (7 g) cornstarch, mixed into the rice wine vinegar as a slurry
2 tablespoons (30 ml) soy sauce
1 tablespoon (15 ml) hoisin sauce
1 1/2 teaspoons sweet paprika
1 drop red food coloring, optional
3 cups broccoli florets
Kosher salt
1 1/2 quarts (1.8 L) vegetable oil, for deep frying
2 pounds (900 g) boneless, skinless chicken thighs, cut into 1 1/2-inch cubes
2 1/2 cups (335 g) tempura flour
2 tablespoons vegetable oil, such as canola or grapeseed
1 1/2 teaspoons chopped garlic
1 1/2 teaspoons minced, peeled fresh ginger
Fried chicken pieces, from above
2 to 3 scallions, cut on the bias into 2-inch lengths
1/2 yellow onion, cut into large dice
Orange Chicken Sauce, from above
Fried Rice, recipe follows, or steamed rice, for serving
3 tablespoons vegetable oil, such as canola or grapeseed
3 large eggs, lightly beaten
4 cups day-old long-grain or jasmine rice
1 tablespoon soy sauce
1 1/2 teaspoons sugar
1/2 teaspoon powdered chicken bouillon
2 to 3 scallions, chopped
1/2 teaspoons white pepper, optional

Steps:

  • For the sauce: Add the oyster sauce, sugar, orange juice, vinegar-cornstarch slurry, soy sauce, hoisin sauce, paprika and food coloring into a 1-quart saucepan, bring the heat up to medium. Whisk gently as it comes to a simmer. Allow to simmer, keep whisking for about 5 minutes until the sauce thickens. Remove from heat and reserve.
  • For the broccoli: Place the broccoli florets in a microwave-safe bowl with 1/4 cup water. Season with kosher salt and cover with plastic wrap. Microwave on high for 3 minutes. Hold for assembly.
  • For the chicken: Heat the oil in a 4-quart Dutch oven to 375 degrees F using a deep-fry thermometer. Rinse the chicken in cold water and pat dry. Sprinkle 1 cup tempura flour over the chicken cubes and toss to lightly dredge, shake off the excess. Mix the remaining 1 1/2 cups of tempura flour with 1 cup cold water to make a thin batter, it should look like pancake batter. Fry in batches until golden brown and crispy, 6 to 8 minutes. Drain on paper towels or a rack.
  • To assemble: Heat a large skillet to high and add the vegetable oil. When you see the first wisps of white smoke, stir in the garlic, ginger and fried chicken pieces and cook, stirring, for about 30 seconds. Add the scallions, onion and Orange Chicken Sauce and allow to coat and simmer. Cook, folding all the ingredients until they are well coated, about 2 minutes. Serve over fried rice or steamed rice, with the steamed broccoli.
  • In a large skillet, heat the oil until a wisp of white smoke appears. Pour in the eggs and add the rice immediately. Using a wide silicone spatula, work the rice into the egg in circular motions, making sure not to break the grains. After about 30 seconds, the egg will start to coagulate and surround the rice, the rice will start to dry. Keep scraping the pan and folding the rice back into the middle.
  • Add the soy sauce, sugar and chicken bouillon. Continue to fold for about a minute. Don't be afraid to scrape up the rice stuck to the bottom of the pan. Cook until the rice absorbs the liquid and egg but is still fluffy. Fold in the scallions and white pepper and cook for an additional minute. Serve immediately.

1 cup chopped onion
1 1/2 cups shredded cooked chicken breasts (about 1/2 lb)
1 cup reduced-fat sharp cheddar cheese, divided (4 oz)
1 cup picante sauce
3 ounces neufchatel cheese, diced
1 teaspoon cumin
1 1/2 cups bottled green taco sauce
8 6-inch flour tortillas

Steps:

  • Coat a large skillet with cooking spray and saute onions until soft.
  • Meanwhile, mix chicken, 1/2 c.
  • cheddar, picante sauce and cream cheese.
  • Addto onions and cook over low heat until cheese begins to melt.
  • Spoon about 1/3 cup filling on each tortilla ands roll up.
  • Place enchiladas (seam side down) in a 9x13 baking dish.
  • Drizzle with taco sauce and remaining cheese.
  • *Note:I flash freeze them and bag at this point in family size portions.
  • If you are going ahead and eating now cover and bake at 350F 15 minutes.
  • If you are pulling from the freezer, thaw in the refrigerator then bake.

CHICKEN TETRAZZINI OAMC

8 ounces spaghetti
1 1/4 cups finely chopped onions
3 tablespoons margarine
1 cup green bell pepper, chopped
4 cups monterey jack cheese, grated
2 (10 3/4 ounce) cans cream of mushroom soup
10 3/4 ounces soup can milk
salt and pepper
5 1/2 cups diced chicken, cooked

Steps:

  • Break spaghetti in half and cook as directed on package until al dente; drain.
  • Sauté onions in margarine until transparent, about 10 minutes.
  • Thoroughly mix onions and remaining ingredients with spaghetti in a large bowl. Put spaghetti mixture in 2 6-cup containers (or freezer bags) and freeze.
  • Thaw Tetrazzini and put in a baking dish. Bake uncovered 30-40 min at 350° until bubbly.

1 tablespoon vegetable oil
2 cups fresh mushrooms, sliced
2 teaspoons all-purpose flour
1 cup water
0.5 (6 ounce) can frozen orange juice concentrate, thawed
1/2 cup thinly sliced green onion, bulbs
2 chicken bouillon cubes
1 (11 ounce) can mandarin oranges, drained
1 cup long-grain rice, uncooked

Steps:

  • Saute mushrooms in oil over high head, stirring constantly.
  • Sprinkle flour over mushrooms, stirring quickly to combine.
  • Gradually stir in water, orange juice concentrate, green onions, and bouillon cubes.
  • Bring to a boil, stirring constantly.
  • Reduce heat, add chicken, and simmer 3 to 4 minutes. Cool and freeze in a 4-cup container.
  • To prepare, thaw chicken mixture and cook rice according to package directions.
  • Heat chicken mixture in a saucepan until bubbly; stir in drained mandarin oranges and heat through.
  • Serve over hot cooked rice.

This dish has a good orange sweet flavor with a hint of pineapple and fills the house with a nice orange smell while cooking. I used crushed pineapple, but I think the tidbits below would be better. Cooking time does not include the cooking of the rice

1 cup any white rice, uncooked
1 tablespoon olive oil
2 cloves garlic, fine chopped
1 tablespoon fresh grated ginger (optional)
1 1/2 lbs boneless chicken breasts, cut into 1 inch cubes
1 large seedless orange, peeled and cut up into ½ inch cubes
1 orange, zest of (if you would like more of a pineapple taste, skip this)
1 (14 ounce) can pineapple tidbits in juice
1/2 cup water or 1/2 cup pineapple juice
1 tablespoon lime juice

Steps:

  • Pre-Cook the rice, any method you like.
  • Preheat oven to 350 deg.
  • In a 3 Qt Dutch oven or other oven safe pan with cover.
  • Heat the olive oil add the garlic and ginger Sauté until garlic just starts to turn brown.
  • Add Chicken and Sauté until partially cooked.
  • Add Pineapple/w juice, Orange and zest, mix.
  • Add cooked Rice and mix well again.
  • Add wine and lime, mix.
  • Cover and place in oven for 20 minute.
  • If too much liquid take cover off, finished dish should be very moist with only a little liquid in bottom of pan.

2 chicken breasts
1/4 cup flour
3/4 cup orange juice
1/2 cup white wine
2 teaspoons Dijon mustard
4 tablespoons unsalted butter
4 thin orange slices, halved (optional)
1/4 cup slivered almonds
1 tablespoon parsley, minced

Steps:

  • Cut each breast in half lengthwise. Cover with plastic wrap and pound to 1/4" thickenss. Remove plastic and season with salt and pepper.
  • Dredge chicken in flour. Saute cutlets in oil in a large saute pan over medium-high heat for 4-5 minutes, or until golden brown. Remove from pan and keep warm.
  • Deglaze pan with juice, wine, and mustard. Simmer until reduced by half, about 5 minutes. Reduce heat to low.
  • Whisk in butter until melted. Add orange slices (if using) and return chicken cutlets to pan to heat through.
  • Garnish with almonds and parsley and serve.

4 chicken breasts, boneless
1/4 cup orange juice
1/4 cup white wine
1 tablespoon olive oil
1 tablespoon fresh Italian parsley, chopped
1 teaspoon garlic, minced
1 teaspoon orange peel, grated
1 teaspoon thyme, dried
1/2 teaspoon salt
1 tablespoon honey
1/3 cup pine nuts, toasted

Steps:

  • Mix all ingredients except chicken together in a medium bowl.
  • Place chicken breasts in a freezer bag, and pour marinade over chicken.
  • Freeze.
  • Serving Day:.
  • Thaw completely in refrigerator (about 24 hrs).
  • Remove chicken from freezer bag, reserving marinade.
  • Grill chicken over medium heat, until chicken is tender and no longer pink.
  • While chicken is grilling, toast pine nuts on a cookie sheet in 350 degree oven for about 15 minutes, until lightly browned.
  • In a small saucepan, combine the reserved marinade and 1 T honey. Bring to a full boil and continue boiling or 2 minutes.
  • Place grilled chicken on serving platter and pour sauce over chicken. Top with toasted pine nuts to serve.
