1 boneless pork loin roast (2-1/2 to 3 pounds)
1/2 cup finely chopped onion
1 garlic clove, minced
2 tablespoons canola oil
1/2 cup orange marmalade
1/4 cup chopped pecans
1/4 teaspoon ground cinnamon

Steps:

  • Place roast on a rack in a shallow roasting pan. In a skillet, saute onion and garlic in oil until tender. Add the marmalade, pecans and cinnamon; cook and stir until marmalade is melted. Spoon over roast., Bake, uncovered, at 325° for 1-3/4 hours or until a thermometer reads 160°. Let stand for 10 minutes before slicing.

My family and grandchildren love this. It is so moist and delicious.This recipe is from Taste Of Home I made years ago and still make it often for the family.

Number Of Ingredients 7

1 whole boneless pork loin rost ( 2-1/2 to 3 pounds)
1/2 c finely chopped onion
1 garlic clove, minced
2 Tbsp canola oil
1/2 c orange marmalade
1/4 c copped pecans (can be omitted)
1/4 tsp ground cinnamon

Steps:

  • 1. Preheat oven at 325.
  • 2. Saute' roast on all side is amall amount of hot oil in skillet.
  • 3. Remove from skillet and place in a shallow roasting pan.
  • 4. In a skillet, saute' onions and garlic in oil until tender.
  • 5. Add the marmalade, pecans and cinnamon; cook and stir until marmalade is melted.
  • 6. Spoon hot mixture over roast.
  • 7. Bake uncoveed for 1-1/3 hours or until meat thermometer reads 160.
  • 8. Remove from oven and let stand for 10 minutes before slicing.
