Number Of Ingredients 10

2-1/4 cups packed brown sugar
1 cup butter, cubed
1 cup light corn syrup
1/8 teaspoon salt
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1-1/2 pounds whole pecans
1 cup semisweet chocolate chips
1 cup milk chocolate chips
2 tablespoons shortening

Steps:

  • In a large saucepan, combine the first four ingredients. Cook over medium heat until all sugar is dissolved. Gradually add milk; mix well. Continue cooking until a candy thermometer reads 248° (firm-ball stage). , Remove from the heat; stir in vanilla until blended. Fold in the pecans. Drop by tablespoonfuls onto a greased or parchment-lined baking sheets. Chill until firm. Loosen from paper. , Melt chocolate chips and shortening in a microwave-safe bowl. Drizzle over each cluster. Cool.

Number Of Ingredients 4

1 cup sugar
1/4 cup orange juice
1 tablespoon grated orange peel
4 cups pecan halves (about 1 pound)

Steps:

  • Line cookie sheet with waxed paper. Bring first 3 ingredients to boil in heavy large saucepan over medium heat, stirring constantly. Boil 30 seconds. Stir in pecans. Spread pecans on waxed paper. Cool completely. Separate pecans if necessary. (Can be prepared up to 1 week ahead. Store in airtight container.)

3 egg whites
1 cup white sugar
½ teaspoon vanilla extract
½ teaspoon baking powder
20 buttery round crackers, crushed fine
1 cup chopped pecans
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Beat egg whites until slightly stiff. Add sugar, vanilla, baking powder, Ritz crackers and pecans. Mix well, and pour into greased 9 inch pie plate.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes exactly.
  • Allow pie to cool to room temperature, and then cover with nondairy whipped topping. Refrigerate for 2 hours before serving.

2 cups pecan halves
3 tablespoons unsalted butter, melted
1/8 teaspoon freshly grated nutmeg
1 teaspoon kosher salt, divided
1 teaspoon finely grated orange zest

Steps:

  • Preheat oven to 350°F. Toss pecans, butter, nutmeg, and 1/2 tsp. salt on a rimmed baking sheet to coat. Bake, tossing once, until deepened in color and fragrant, 8-10 minutes. Remove from oven and toss with orange zest and remaining 1/2 tsp. salt. Let cool before eating all of them.

1-1/2 cups sugar
1/4 cup water
3 tablespoons orange juice concentrate
2 cups pecan halves
1/2 teaspoon grated orange zest

Steps:

  • In a large heavy saucepan, combine the sugar, water and orange juice concentrate. Cook over medium-high heat, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat; stir in pecans and orange zest. , Beat until mixture thickens and loses its gloss, about 2 minutes. Drop by teaspoonfuls onto waxed paper to set. Store in an airtight container.

This recipe comes from my grandomther. Growing up my mom always made these cookies for me and my sister. I am doing the same for my 2 girls. Every bite reminds me of my childhood. :) Other names for these cookies are: no bake cookies, preacher cookies

Number Of Ingredients 6

2 cups sugar
4 tablespoons cocoa
1/2 cup margarine (I prefer country crock)
1/2 cup milk
1/2 cup peanut butter
2 cups oatmeal (use the one minute oatmeal)

Steps:

  • Combine sugar, cocoa, margarine and milk in saucepan over medium heat (I always go a notch over medium-but do not do med/high or it will burn).
  • Once it comes to a rapid boil, boil for 3 minutes EXACTLY.
  • Remove from heat and add peanut butter and oatmeal (SEE Tip#2).
  • Spoon drop on wax paper and let cool.
  • Store in airtight container.
  • Tip#1: have all ingredients measured out before you start.
  • Tip#2: sometimes weather can effect the outcome. It may require less or more oatmeal -- add oatmeal a little at a time till you get the right consistency-not to runny and not too thick.

These are a year-round favorite in our house. We've made several variations and still come back to this one as our all-time favorite. Hand-shelled pecans from Grandma's tree, with a vanilla-orange sugar coating that gets its depth from cinnamon, pepper, rosemary, and a bit of Kahlua® and Grand Marnier®.

2 large egg whites
1 teaspoon water
1 teaspoon orange extract
½ teaspoon vanilla extract
1 ½ teaspoons orange-flavored liqueur (such as Grand Marnier®)
1 ½ teaspoons coffee-flavored liqueur (such as Kahlua®)
1 cup white sugar
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon finely chopped fresh rosemary
1 tangerine, finely zested
1 pound shelled pecan halves

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Heavily butter a large metal baking sheet.
  • Beat egg whites and water together in the bowl of a stand mixer until stiff peaks form. Add orange extract and vanilla extract; beat until incorporated, 1 minute.
  • Mix sugar, cinnamon, salt, and black pepper together in a separate bowl; fold sugar mixture into egg white mixture until just incorporated. Fold in rosemary and tangerine zest until evenly mixed. Add pecans to the sugar-egg white mixture; toss to coat. Spread coated pecans in one layer onto the prepared baking sheet.
  • Bake in the preheated oven, turning the baking sheet and stirring the pecans with a metal spoon every 8 to 10 minutes, until crispy and golden brown, 30 to 40 minutes. Transfer to a sheet of parchment paper to cool completely.

1 cup boiling water
3 ounces orange Jell-O
1 cup small marshmallow
8 ounces Philadelphia Cream Cheese
1/4 cup sugar
1 cup whipping cream
8 ounces crushed pineapple (drained)
1/2 cup pecans

Steps:

  • Pour boiling water over jello and marshmallows. Stir until marshmallows melt. Set aside this mixture until cooled slightly.
  • Cream the cream cheese and sugar; then add whipping cream. Whip until mixture is smooth and thick.
  • Add jello mixture, drained pineapple and nuts. Pour into mold and chill.
