This is a delicious sweet and savory chicken recipe originally created by Diane Rossen Worthington in her book, "The California Cook." It is made in the oven. I like to use thighs and legs but you can use chicken breasts as well...but it's best with the skin on. Allow at least 30 minutes for marinading, 2 hours is best. **** Note that this is not a marinade, but a sauce that you bake the chicken it. Do not throw out all of the delicious sauce!! Use it over the chicken and/or rice as you serve.****

3 tablespoons hoisin sauce
1 teaspoon chili paste
1 large garlic clove, pressed
1/3 cup soy sauce
1 tablespoon honey
1 tablespoon dark sesame oil
1 tablespoon ginger paste or 1 tablespoon minced fresh ginger
1/4 cup orange marmalade
2 tablespoons scallions, chopped for garnish
3 lbs chicken legs with thigh, with skin

Steps:

  • Combine ingredients up to marmalade in a large bowl and mix well.
  • Wash and pat dry the chicken legs and thighs.
  • Preheat oven to 375°F.
  • Place the chicken in a large shallow roasting pan or baking dish Pour the hoisin marmalade sauce over the top. Bake for 45 to 50 minutes, or until the chicken is done. (Time also depends on how plump your legs and thighs are - the fatter, the longer the time).
  • Baste with juices one or two times during the baking process.
  • When finished, remove chicken from roasting pan onto serving platter. Spoon some sauce over it and garnish with the scallion. Serve immediately.

We like this with Plenty of brown rice to catch the extra sauce. Adding the chicken frozen slows down the cooking somewhat, but this is still a relatively quick dish. Found in Not Your Mother's Slow Cooker Cookbook.

2 tablespoons frozen orange juice concentrate (thawed)
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons hoisin sauce
3 slices fresh ginger (peeled about 1/4-inch thick)
3 garlic cloves (minced)
1 tablespoon sesame oil
2 teaspoons cornstarch
2 teaspoons cold water
1 tablespoon toasted sesame seeds (optional)
6 frozen boneless skinless chicken breast halves (do not thaw)

Steps:

  • In a zip lock bag, combine the orange juice, honey, soy sauce, hoisin sauce, ginger, garlic, and sesame oil. One at a time, put the chicken in the bag, seal, and gently shake to coat with the sauce. Transfer the coated chicken to the slow cooker, then pour the remaing sauce over the chicken.
  • Cover and cook on low until the chicken is tender and cooked through 5-6 hours.
  • Transfer the chicken to a warm platter. Strain the sauce through a fine mesh strainer into a small saucepan. In a small bowl, stir together the cornstarch and cold water. Bring the sauce to a boil over high heat, add the slurry, and cook, stirring a few times until thickened, 1-2 minutes.
  • Pour some of the sauce over the chicken & pass the rest on the side. If desired, sprinkle the sesame seeds over the top.

FOR MARINADE:
1/2 cup soy sauce
2 tablespoons sesame oil
2 tablespoons olive oil
Juice of 1/2 lemon
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1/4 teaspoon ground chilies
1 teaspoon rosemary leaves
FOR THE SAUCE:
3/4 cup hoisin sauce (available in Oriental groceries)
3 tablespoons rice vinegar
1/2 cup freshly squeezed orange juice
2 minced scallions
2 tablespoons sesame oil
Coarse salt and freshly ground pepper to taste
Sprigs of rosemary for garnishing

Steps:

  • 1. Marinate chicken in mixture of soy sauce, sesame oil, olive oil, lemon juice, garlic, ginger, chilies and rosemary leaves for at least two hours. Thread chicken on skewers. 2.Combine hoisin sauce, vinegar, orange juice, scallions and sesame oil. Season to taste with salt and pepper. 3.Preheat grill or broiler. Cook chicken for about five minutes on each side, or until done, basting with marinade. Garnish plates with rosemary sprigs. Serve sauce separately in small bowl.

3 lbs chicken wings (12-14)
2 tablespoons seasoning (five spice powder)
1/2 teaspoon ground ginger
2 teaspoons chili powder
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
8 ounces hoisin sauce
1/2 cup orange juice concentrate, thawed
1 teaspoon sesame seed oil
2 tablespoons rice vinegar
1/4 teaspoon chili powder
2 teaspoons orange zest
3 tablespoons chopped cilantro
3 cups canola oil, for frying

Steps:

  • In a gallon-size plastic bag with zip top closure, combine all ingredients for spice mix. Seal and shake well to blend.
  • Make Orange Hoisin Sauce by combining in small saucepan over medium-high heat hoisin sauce, orange juice concentrate, sesame seed oil, rice vinegar and chili powder. Bring to a boil, reduce heat to low, and simmer for 5 minutes. Remove from heat; stir in zest and cilantro. Cover and set aside.
  • In a deep saucepan or stockpot, add oil and heat to 350. While oil is heating, add chicken wings to plastic bag with spice mixture. Shake until all wings are coated. Remove wings from bag, place in pot and fry, in batches, for 6-8 minutes, or until skin is crispy.
  • Remove wings from oil and place on paper towels to drain. After final batch of wings is cooked, place wings in large mixing bowl. Pour Orange Hoisin Sauce over wings; toss well to coat.

1/4 cup hoisin sauce
2 tablespoons rice vinegar or 2 tablespoons cider vinegar
2 tablespoons orange rind
2 tablespoons orange juice
1/4 teaspoon hot pepper sauce
1 lb boneless skinless chicken breast, sliced lengthwise 1/2 inch thick

Steps:

  • Mix everything together and let stand at least 15 minutes.
  • Thread 1 piece of chicken onto metal skewer or soaked wooded skewer.

2 Tbsp each soy sauce and hoisin sauce
1/4 c frozen orange juice concentrate thawed
1/2 c honey
1 Tbsp each grated ginger and minced garlic
CHICKEN
8 chicken drumsticks
cooking spray

Steps:

  • 1. Mix the ingredients together for the glaze. Add the chicken and let it marinate for at least and hour to 8 hours.
  • 2. Spray a grill or baking pan with cooking spray. Remove the chicken from the glaze and grill or bake brushing with the glaze ever so often.
  • 3. Takes about 25 to cook the chicken.

2 TBL frozen orange juice concentrate, thawed
1/4 c honey
2 TBL soy sauce
2 TBL hoisin sauce
3 slices peeled fresh ginger, about 1/4" thick
3 cloves garlic, minced or pressed
1 TBL sesame oil
6 frozen boneless skinless chicken breast halves (not thawed)
2 tsp cornstarch
2 tsp cold water
1 TBL sesame seeds (toasted)

Steps:

  • In a gallon zippered plastic baggie, combine OJ concentrate, honey, soy and hoisin sauces, ginger, garlic and sesame oil. Put chicken in, one breast halve at a time, and sake to coat. Transfer all to slow cooker, cover and cook on LOW until chicken is tender and cooked through (5-6 hours). NOTE: For some slow cookers, this is HIGH. For sauce, strain sauce through fine mesh strainer into small saucepan over high heat. Stir in small bowl the cornstarch with cold water. Bring sauce to boil then add slurry and cook, stirring a few times, until thickened, 1-2 min. Pour over chicken or just pass around. Serve with rice.

How to make Hoisin Orange Chicken Tenders

1 1/2 pounds chicken tenders, sprinkled with salt and pepper
1 tablespoon canola oil
2 medium cloves garlic, chopped finely or minced
zest from 1 medium orange
1/2 cup freshly squeezed orange juice
1/4 cup hoisin sauce
1 tablespoon finely chopped fresh ginger
1/8 teaspoon hot pepper flakes
steamed rice, for serving (optional)

Steps:

  • Heat the oil in a large, nonstick skillet over medium-high heat. Add the chicken and cook until golden- about 4 minutes, then flip and cook on the other side until cooked through- about 4 more minutes. Remove the chicken to a plate and wrap with foil to keep warm.
  • Add the garlic to the pan and cook 30 seconds. Add the remaining ingredients to the pan; stir and bring to a boil; continue to stir and boil until the mixture is slightly thickened.
  • Return the chicken to the skillet; spoon the sauce over the chicken to coat. Serve chicken over rice, if desired, with sauce drizzled on top.
