PAN-SEARED HALIBUT WITH BLOOD ORANGE BUTTER SAUCE



Pan-Seared Halibut with Blood Orange Butter Sauce image

Although I ate my first blood orange quite simply, I've since experimented with other preparations. This lovely butter sauce is wonderful over grilled or pan-seared fish--halibut, salmon, striped bass or snapper especially.

Number Of Ingredients 8

10 tablespoons unsalted butter, cut into 10 pieces
1 large shallot, finely chopped (about 1/4 cup)
1 cup blood orange juice
Kosher salt and freshly ground black pepper
Two 6- to 8-ounce wild halibut fillets, each about 1 inch thick
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pomegranate arils

Steps:

  • For the blood orange butter sauce: Melt 2 pieces of the butter in a heavy-bottomed saucepan over medium heat. Add the shallots and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Add the orange juice; stir to combine and simmer on medium-low heat until the liquid is reduced by about half, about 5 to 8 minutes.
  • Add the remaining 8 pieces of butter, one piece at a time, whisking constantly, until each is fully incorporated. Remove from the heat and season with salt and pepper.
  • For the pan-seared halibut: Pat the fillets dry with paper towels. Heat the oil in a stainless-steel or cast-iron skillet over medium-high heat. Place the fish in the skillet, skin-side down, allowing at least 2 inches between the fillets. Cook until the skin is crispy and the fish releases from the pan easily, about 3 minutes. Season the skinless side of the fish with a pinch of salt and pepper, then flip and cook until the fish is just opaque in the center, 5 to 7 minutes.
  • Place a few spoonfuls of the Blood Orange Butter Sauce over the fish. Sprinkle with the pomegranate arils and serve.

4 cod fillets (4 ounces each)
2 tablespoons butter
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated orange zest
1/3 cup orange juice
1 tablespoon lemon juice
1/8 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Preheat oven to 375°. Place fillets in an 11x7-in. baking dish coated with cooking spray. , In a skillet, heat butter over medium-high heat; saute onion and garlic until tender. Spoon over fish. Mix orange zest and citrus juices; drizzle over fish. , Bake, uncovered, until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with pepper and parsley.

This Spicy Orange Panko Crusted Fish Recipe is not only easy to make but it is delicious and full of nutritious protein.

Number Of Ingredients 6

1 19 oz pkg Gorton's Crunchy Breaded Fish
1 cup SMUCKER'S Sweet Orange Marmalade
1 tbsp Sriracha Hot Chili Sauce
2 Boston Bibb Lettuce (cleaned)
¼ cup Green onions (sliced)
¼ cup Red Fresno Peppers (sliced)

Steps:

  • Cook one 19 oz package of Gorton's Crunchy Breaded Fish as directed on the package.
  • In a one quart sauce pan, add one cup of Sweet Orange Marmalade and place on medium heat for 5 minutes. For purposes of this recipe, I used SMUCKER'S, however, you can use your favorite Sweet Orange Marmalade for this sauce.
  • After the marmalade's consistency has reduced to a sauce, and one tablespoon of Sriracha Hot Chili Sauce to the marmalade. Stir thoroughly with a small fork or whisk. Cook for an additional 5 minutes and remove from the heat.
  • Once the the 16 oz package of Gorton's Crunchy Breaded Fish is completely cooked, glaze each fish using a spoon or silicone basting brush.
  • If you have not already done so, gently remove the leaves from the Boston bibb lettuce and clean them thoroughly. Take two of the lettuce leaves and top them with one Spicy Orange glazed fish fillet. Garnish with 3-4 sliced green onions slices and a couple of red Fresno peppers slices. Repeat the steps with the remaining ingredients. I hope that you enjoy this recipe as much as I do!

1/2 cup reduced-sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets (6 ounces each)
1 cup chopped pecans, toasted

  • In a small bowl, combine marmalade, soy sauce, salt and pepper. Pour 2/3 cup marinade into a large shallow dish. Add salmon and turn to coat. Refrigerate for up to 30 minutes. Set aside remaining marinade., Preheat oven to 350°. Drain and discard marinade from salmon. Place salmon in a greased 11x7-in. baking dish. 1 garlic cloves, crushed or 1/2 teaspoon garlic salt
4 white fish fillets, Blue cod is nice
1 orange, juice and rind of, grated

  • Melt the butter in frying pan, add the crumbs, garlic and grated orange rind.

3 slices bread
1/4 cup fresh parsley, chopped
1 orange, grated rind only
1 red chile, seeded and finely chopped
4 boneless white fish fillets
cooking spray

Steps:

  • Preheat oven to 200 degree C.
  • Process the bread in a blender or food processor to form fine crumbs.
  • Transfer to a bowl and stir in the parsley, orange rind and chilli.
  • Season with salt and pepper.
  • Spray the fish with oil.
  • Place into a baking dish and press the crumb mix onto the fish.
  • Spray with oil again.
  • Cook for 10 to 15 minutes or until fish is cooked through.

4 (4 ounce) fillets salmon
2 cups orange juice
1 egg, beaten
1 (7 ounce) package flaked coconut
4 tablespoons orange marmalade
1 tablespoon Dijon mustard

Steps:

  • Place salmon fillets in a medium bowl with orange juice. Cover, and marinate in the refrigerator 8 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat salmon fillets with egg. Dip fillets in coconut, and arrange in a single layer on a medium baking sheet. Bake 15 minutes in the preheated oven, until coconut is golden brown and fish is easily flaked with a fork.
  • In a small saucepan over medium heat, blend orange marmalade and Dijon mustard. Heat until warm, and serve as a dipping sauce for the salmon.
