UDON NOODLES WITH PEANUTS/SHRIMP image

2 tablespoons each soy sauce, rice vinegar, peanut butter, and vegetable oil.
1 teaspoon of toasted sesame oil
1 minced fresh red chile
1 minced garlic clove
1 tablespoon finely grated fresh ginger.
2 handfuls thinly sliced snow peas
1 pound udon noodles
1 pound shrimp
cilantro
chopped roasted and salted peanuts

Steps:

  • 1.In a large bowl, whisk together a few tablespoons each of soy sauce, rice vinegar, peanut butter, and vegetable oil. Add a teaspoon of toasted sesame oil, a minced fresh red chile and garlic clove, and a tablespoon finely grated fresh ginger. Season the dressing to taste with salt. Thinly slice 2 large handfuls of snow peas and add them to the bowl. 2.Boil a pound of udon noodles according to package directions. Add 1 pound large shrimp (peeled and deveined) to boiling water 3 minutes before noodles are done. Once shrimp are pink and cooked through, drain noodles and shrimp and add to the bowl with the dressing; stir vigorously to combine. Transfer the noodles to a serving bowl or platter. Scatter the top with roughly chopped peanuts (roasted and salted, please) and plenty of chopped cilantro. Serve immediately or at room temperature.
