2/3 c dried cranberries
1/3 c orange marmalade
1/2 c chopped pecans, toasted if you like
1-2 Tbsp freshly grated orange peel, optional

This is an easy recipe that takes only a very short time to make, perfect on just about anything and no preserving for this just prepare and store in the fridge for up to one week.

3/4 cup orange juice
1/2 cup sugar
2 cups cranberries (fresh or frozen)
2 cups orange marmalade
3/4 cup dried cranberries
1 tablespoon orange zest
1 teaspoon grated lemon peel
1/4 teaspoon clove

Steps:

  • In a medium saucepan over medium-high heat, stir orange juice and sugar until sugar is dissolved.
  • Add in remaining ingredients; bring to a boil, reduce heat to medium-low and simmer, stirring occasionally until mixture is reduced to about 3 cups (this should take around 15-17 minutes).
  • Cool to room temperature.
  • Place into a glass jar or bowl and refrigerate up to one week.
  • Delicious!

1/2 c cranberries dried (craisins)
1 tsp orange zest
2 Tbsp orange juice
2 Tbsp powdered sugar

Steps:

  • 1. Allow cream cheese to come to room temperature. Beat with mixer.
  • 2. Add orange juice, zest and powdered sugar. Mix until well incorporated.
  • 3. Add the Craisins and beat till well blended with cream cheese mixture.
  • 4. Pour into container and store covered in the refrigerator overnight. Good as a cracker spread, or spread on apple slices

I ran out of jelly the other day...and went rummaging through my pantry in search of stuff I could put on my toast. Hmmm...what about cranberry sauce???...I mixed it with some ground orange peel I had. Voila--instant bread spread. REALLY yummo.

1 can(s) jellied cranberry sauce
1 to 2 tablespoon(s) ground dried orange peel

Steps:

  • Plop cranberry sauce into bowl. Smush with fork until smooth.
  • Mix in 1 to 2 Tbs dried, ground orange peel. Note* --to make your own ground orange peel....take the peels from mandarin oranges (or "cuties", tangerines). I use these because they don't have much white "pith" on them. Let dry on cookie sheet for 5 - 7 days or so until they are COMPLETELY dried out. Grind in coffee grinder (a food processed just doesn't seem to do it). Store in jar with air-tight lid.
  • Spread on toast, bagels, English muffins, biscuits, scones...any breakfast bread.
  • Stores in covered container in refrigerator for a week or so.

My sister-in-law brought this for Thanksgiving and it was so good. I think she said she found the recipe on a cracker box. I don't even know what the name of the recipe originally was. I just came across the recipe today.

1/2 c fresh squeezed orange juice
1 Tbsp sugar
3 tsp orange zest
1/8 tsp cinnamon
1/4 c finely chopped dried cranberries
1/4 c finely chopped pecans.

  • 1. Just combine the first 5 ingredients well, then stir in the cranberries and pecans.
  • 2. We had it with crackers but I also think it would be delicious on toast or pound cake.
