CRANBERRY-ORANGE CHEESECAKE BARS

These cranberry-orange cheesecake bars are a favorite around the holidays or any time of the year!

½ cup butter, softened
⅓ cup packed brown sugar
½ cup chopped walnuts
1 cup all-purpose flour
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 cup dried cranberries
6 tablespoons orange juice
2 eggs, beaten
1 tablespoon grated orange zest
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine butter and brown sugar in a large bowl; beat with an electric mixer until smooth and creamy. Stir in flour and walnuts until crumbly. Press mixture into the bottom of a 9-inch square baking dish.
  • Bake in the preheated oven until lightly browned, about 15 minutes. Remove and allow to cool.
  • Meanwhile, combine cream cheese and white sugar in a large bowl; beat with an electric mixer until smooth. Add cranberries, orange juice, eggs, orange zest, and vanilla extract, mix until well combined. Spread cream cheese filling onto cooled crust.
  • Bake until surface of cheesecake is firm except for a small spot in the center that will jiggle when the pan is gently shaken, 25 to 30 minutes. Let cool on a wire rack, and allow the cheesecake to cool at room temperature, about 1 hour. Refrigerate until completely chilled, 4 hours to overnight.
  • Cut into 12 bars and serve.

2 ¼ cups all-purpose flour
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon salt
¾ cup firmly packed dark brown sugar
½ cup unsalted butter, softened
1 egg
1 teaspoon vanilla extract
½ cup molasses
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 pinch salt
2 eggs
1 ½ teaspoons vanilla extract
1 teaspoon grated orange zest

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking pan with enough parchment paper to have overhang on all sides. Lightly grease parchment.
  • Whisk together flour, ginger, cinnamon, baking soda, cloves, nutmeg, allspice, and salt for the gingerbread in a large bowl until combined.
  • Cream brown sugar and butter in a separate bowl with an electric mixed until light and fluffy. Add egg and vanilla extract and beat until thoroughly combined. Mix in molasses.
  • Add flour mixture to butter mixture in 3 separate additions, mixing only until just combined; dough will be fairly thick. Press 2/3 of the dough firmly and evenly into the bottom of the prepared baking pan, using floured hands to prevent sticking.
  • Beat cream cheese, sugar, and salt for the filling in a large bowl until completely smooth and fluffy. Add eggs, 1 at a time, mixing well after each addition. Mix in vanilla extract and orange zest. Pour filling evenly over gingerbread crust and smooth with a spatula. Sprinkle remaining gingerbread dough over the filling and gently press down.
  • Bake in the preheated oven until edges are set and the center of the cheesecake only slightly jiggles, 35 to 40 minutes. Cool completely in pan. Once cooled, remove from pan using parchment "handles" and slice into bars.

2 cups crushed vanilla wafers (about 60 wafers)
1/4 cup butter, melted
3 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
3 large eggs, lightly beaten
2 teaspoons vanilla extract
2 tablespoons orange juice concentrate
1 teaspoon grated orange zest
1 teaspoon orange extract
5 drops yellow food coloring
3 drops red food coloring

Steps:

  • In a large bowl, combine the wafer crumbs and butter. Press into a greased 13x9-in. baking pan. , In a large bowl, beat cream cheese until smooth. Add the milk, eggs and vanilla; beat just until combined. Pour half over crust., Add the orange juice concentrate, orange zest, extract and food coloring to the remaining cream cheese mixture; beat until combined. Pour over first layer. , Bake at 325° for 45-50 minutes or until center is almost set. Cool on a wire rack. Refrigerate for at least 2 hours before cutting.

1 1/4 cups finely crushed graham crackers
1/4 cup granulated sugar
1/3 cup butter, melted
3 (8 ounce) packages cream cheese, softened
1 1/4 cups packed brown sugar
3 eggs
3 tablespoons frozen orange juice concentrate, thawed
1 1/2 teaspoons finely shredded orange rind
1/2 teaspoon vanilla
1/4 teaspoon salt
6 ounces semisweet chocolate, cut up
2 tablespoons butter
1 1/2 cups sour cream
1/3 cup granulated sugar

Steps:

  • Preheat oven to 350*. Line a 13x9x2 inch baking pan with foil. Lightly grease foil; set pan aside.
  • For crust: Stir together crushed graham crackers and 1/4 c sugar. Mix in 1/3 c butter. Press evenly onto bottom of prepared pan; set aside.
  • For filling: Beat cream cheese and brown sugar until mixed. Add eggs, one at a time, beating on low speed after each addition just until combined. Stir in concentrate, peel, vanilla and salt. Reserve 1 cup filling in bowl; set aside.
  • In small saucepan, melt chocolate and 2 tablespoons butter over very low heat; stir often. Cool. Stir into reserved filling. Carefully spread over crust. Bake 15 minutes. Remove from oven.
  • Carefully pour remaining filling over baked chocolate layer; spread evenly. Bake 40 to 45 minutes or until just set in center. Remove from oven; cool 30 minutes. Combine sour cream and 1/3 cup sugar. Cover; let stand at room temperature while bars cool.
  • Spread sour cream mixture on bars. Cool. Refrigerate several hours or overnight before cutting. If desired, sprinkle with ground cinnamon before cutting into bars. Store, covered, in refrigerator.

2 c finely crushed vanilla wafers
1 1/2 c cream cheese, softened
2 tsp finely shredded orange peel
1/3 c orange juice
1/3 c butter, melted
3/4 c granulated sugar
2 eggs

Steps:

  • 1. For crust, in a medium mixing bowl stir together the vanilla wafer crumbs and melted butter. Set aside one quarter of the crumb mixture. Press remaining mixture evenly into the bottom of a 13x9x2" baking pan. Bake in a preheated 350*F oven for 15 minutes.
  • 2. For lining, in another mixing bowl, beat cream cheese with an electric mixer on medium-high speed for 30 seconds. Add eggs one at a time beating well after each addition. Beat in sugar, orange juice, and orange peel till combined. Do not over beat. Spread cream cheese mixture evenly over crust.
  • 3. Sprinkle with reserved crumb mixture. Bake in the 350*F oven for 30-35 minutes, or until center appears set. Cool in pan on a rack. Cut into bars; cover and store in the refrigerator.
