It only takes 30 minutes to give trusty green bean casserole a makeover with orange and rosemary. It's a festive, flavorful side dish that's low fat, too.

1/2 cup water
1 clove garlic, finely chopped
2 lb fresh green beans
1/4 cup orange marmalade
1 tablespoon chopped fresh rosemary leaves
1/2 teaspoon cornstarch
1/2 teaspoon salt
2 tablespoons butter or margarine

Steps:

  • In 4-quart Dutch oven, heat water and garlic to boiling over medium-high heat. Add beans; cover and simmer over medium heat about 15 minutes or until tender. Drain if necessary.
  • In small bowl, stir together marmalade, rosemary, cornstarch and salt; stir into beans. Add butter. Heat to boiling over medium heat, stirring occasionally.

1/2 cup baby carrots, cut in half lengthwise
2 cups cut fresh green beans
1/4 cup chopped radishes
1/4 cup chopped red onion
DRESSING:
1 tablespoon lemon juice
1-1/2 teaspoons olive oil
1/2 teaspoon sugar
1/2 teaspoon Dijon mustard
1/4 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon ground cumin
1-1/2 teaspoons sesame seeds, toasted

Steps:

  • In a small saucepan, cook carrots in a small amount of boiling water for 4 minutes. Add the beans; cook 4-5 minutes longer or until vegetables are crisp-tender. Drain; chill in ice water. Drain and pat dry; place in a large bowl. Add radishes and onion. , In a small bowl, whisk the lemon juice, oil, sugar, mustard, garlic, salt and cumin. Pour over bean mixture; toss to coat. Cover and refrigerate until serving. Sprinkle with sesame seeds.

2 lb haricots verts, trimmed
1 tsp grated lemon zest
1 tsp grated orange zest
1 Tbsp extra-virgin olive oil
1 tsp fresh lemon juice
1 tsp fresh orange juice

Steps:

  • Cook haricots verts in salted boiling water until crisp-tender, 4 to 6 minutes. Drain.
  • Heat zests in oil with 1/2 tsp salt and 1/4 tsp pepper in a 12-inch heavy skillet over medium-low heat until fragrant, about 3 minutes. Add haricots verts and cook, tossing, until heated through. Add lemon and orange juices and toss to coat.

Their natural sweetness is given some amplification by making these caramelized carrots with a brown sugar, orange peel and butter glaze. Even big kids will be asking for seconds of these delicious glazed carrots.

2 pounds carrots, cut into 1/4-inch slices (12 to 14 medium)
1/2 teaspoon salt, if desired
2/3 cup packed brown sugar
1/4 cup butter
1 teaspoon orange zest
1/2 teaspoon salt

Steps:

  • Heat 1 inch water to boiling in 3-quart saucepan. Add carrots and, if desired, 1/2 teaspoon salt. Cover and heat to boiling; reduce heat. Simmer covered 12 to 15 minutes or until carrots are tender.
  • While carrots are cooking, heat brown sugar, butter, orange zest and 1/2 teaspoon salt in 10- or 12-inch skillet over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbly. Be careful not to overcook or the mixture will taste scorched. Remove from heat.
  • Drain carrots. Stir carrots into brown sugar mixture. Cook over low heat about 5 minutes, stirring occasionally and gently, until carrots are glazed and hot.

This recipe is similar to several other "prep-ahead" carrot/bean dishes on 'Zaar but none are seasoned like this. It appears to be a popular holiday choice for side dish, as there is little last minute activity. It's also an very attractive, colorful dish.

12 ounces carrots, cut 1/4-inch x 1/4-inch x 2-inch (packaged baby carrots work here)
12 ounces green beans, cut in 2-inch lengths
2 tablespoons butter
2 tablespoons shallots
1/2 teaspoon crushed garlic
1/4 teaspoon red pepper flakes
1 teaspoon tarragon or 1 teaspoon dill weed
salt and pepper

Steps:

  • Bring a large pot of water to a boil. Cook the carrots until barely tender (about 5 minutes). Remove from water, place in colander and rinse with cold water until cool. Pat dry with paper towels. Do the same with the green beans. Note: The vegetables can be prepared 1 day ahead and stored in zipper bags in the refrigerator.
  • In a very large skillet, melt the butter over medium heat. Add the shallots and garic and cook for 1 minute. Add the carrots and green beans, stirring occasionally, until heated through. Stir in the red pepper flakes, tarragon or dill weed, and salt and pepper. Serve immediately.

I made this for Thanksgiving. I like the addition of the carrots for colour. I recommend using fresh green beans & carrots.

2 tablespoons minced onions
1 tablespoon olive oil
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
2 eggs, beaten
1/2 cup grated sharp cheddar cheese
1 3/4 cups cooked green beans
1 3/4 cups cooked carrots, sliced in coins
1/2 cup Ritz cracker crumbs or 1/2 cup panko breadcrumbs
3 tablespoons butter

Steps:

  • Cook onions slightly in fat, add flour and seasoning; blend well.
  • Add milk gradually and cook until slightly thickened.
  • Add eggs slowly and wisk quickly to cook over low heat,1 minute.
  • Add cheese and stir in vegetables.
  • Pour into greased baking dish; cover with crumbs and dot with butter.
  • Bake in a moderate oven (350) for 30 minutes.
  • Note: Undercook the green beans and carrots as they will be cooked again in the oven. I steam mine for 5 minutes only.
