BROWN-BUTTER NUT MIX WITH ROSEMARY AND THYME



Brown-Butter Nut Mix with Rosemary and Thyme image

Boost a mixed-nut blend with herbs and butter for a savory complement to pre-dinner drinks. The recipe comes from TV chef Thomas Joseph.

Yield Makes about 10 cups

Number Of Ingredients 8

10 cups mixed nuts such as pecans, cashews, whole skin-on almonds, Marcona almonds, and peanuts
4 tablespoons unsalted butter
3 tablespoons packed light-brown sugar
2 1/2 teaspoons coarse salt
1 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
5 sprigs fresh thyme, leaves only
2 sprigs fresh rosemary, leaves only

Steps:

  • Preheat oven to 350 degrees.
  • Place nuts on a rimmed baking sheet and toast until brown and fragrant, 15 to 20 minutes.
  • Meanwhile, heat butter in a small saucepan over medium-high heat until melted. Continue cooking until butter becomes fragrant and golden brown, taking care not to burn. Remove from heat and set aside.
  • In a large bowl, mix together sugar, salt, black pepper, cayenne pepper, thyme, and rosemary; mix in brown butter. Add nuts and toss to combine. Return nuts to baking sheet and transfer to oven. Bake until nuts are semidry, about 10 minutes. Remove from oven and let cool completely.

Cooking time included in preparation time because of stirring. If you like the texture to be a bit crunchy, bake the nuts in a 350ºF oven for 5-7 minutes first. NOTE: Adding a tablespoon of Wet Nuts to your morning bowl of oatmeal is an easy way to sweeten it and add texturel!

1 cup brown sugar
3 tablespoons butter
1/2 cup milk
1 teaspoon vanilla
2 cups walnuts (whole or chopped) or 2 cups pecans (whole or chopped)

Steps:

  • Bring Karo syrup, brown sugar, butter and milk to a slow boil over medium heat, stirring well.
  • Lightly boil for 5 minutes and then remove from heat.
  • Add vanilla and nuts, stir well and allow to cool.

1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.
