1.5 pounds fresh cranberries (rinsed, drained, and bad berries picked out)
1.5 cups granulated sugar
.67 cup orange juice (2/3 cup)
2 tablespoons grated orange peel
.25 cup water
3 tablespoons Amaretto liqueur

Steps:

  • Place the rinsed cranberries, sugar, orange juice, orange zest, and water in a saucepan.
  • Bring to a boil, then reduce heat and simmer to cook down the cranberries.
  • Add the Amaretto and continue to simmer until thickened, stirring frequently, about 12 to 15 minutes.
  • Allow the cranberry sauce to cool completely, then transfer to an airtight container and store in the refrigerator until ready to serve.

2 oranges, zested and juiced
1 cup white sugar

Steps:

  • Stir cranberries, orange zest, sugar, and enough water to cover berries together in a saucepan. Bring mixture to a boil and cook until cranberries begin to burst, 5 to 10 minutes. 2 cups fresh cranberries
1 cup sugar
1/2 cup orange juice
CUSTARD:
1/3 cup Marsala wine
3 tablespoons sugar
1 large egg yolk
2 cartons (8 ounces each) mascarpone cheese
FRUIT DIP:
1-1/4 cups cranberry juice
4 teaspoons orange liqueur
1-1/4 teaspoons sugar
1 package (7 ounces) crisp ladyfinger cookies
1/2 teaspoon baking cocoa

Steps:

  • In a small saucepan, combine cranberries, sugar and orange juice. Cook, uncovered, over medium heat until berries pop and mixture is thickened, about 10 minutes. Cool completely., For custard, heat wine and sugar in a small heavy saucepan over medium heat until bubbles form around sides of pan. Whisk a small amount of hot mixture into egg yolk. Return all to pan, whisking constantly. Cook and stir over low heat until a thermometer reads at least 160° and mixture coats the back of a spoon. Quickly transfer to a small bowl; place bowl in a pan of ice water. Stir 1 minute. In a large bowl, beat cheese until smooth. Gradually beat in custard; set aside., For fruit dip, combine cranberry juice, liqueur and sugar in a shallow bowl. Quickly dip ladyfingers into mixture, allowing excess to drip off. Arrange in a single layer in an 8-in. square dish. Layer with 1 cup custard mixture and cranberry mixture. Top with remaining ladyfingers and remaining custard mixture. Refrigerate, covered, at least 4 hours or overnight., Just before serving, dust with cocoa.

2/3 cup orange juice
1 cinnamon stick, broken in half
12 ounces fresh cranberries
fresh grated nutmeg, to taste- (optional)

Steps:

  • mix marmalade, juice and cinnamon stick in a saucepan, bring to boil.
  • add cranberries, return to boil.
  • lower to simmer and cook until cranberries pop and thicken, about 8-10 minutes.
  • add grated nutmeg, if desired, remove from heat, cool.

12 ounces fresh cranberries
1 cup sugar
1 cup water
2 teaspoons orange zest
2 tablespoons Cointreau liqueur

Steps:

  • Combine sugar and water in a medium saucepan.
  • Bring to a boil; add cranberries, return to a boil.
  • Reduce heat and boil gently for 10 minutes, stirring occasionally.
  • Remove from heat. Add orange zest and Cointreau (or Grand Marnier) and stir.
  • Let cool at room temperature.
  • Refrigerate until cold, or serve at room temperature.
