This sweet, spicy and fragrant chicken soup, called curry mee, is a happy contrast of hot broth, springy noodles and a madness of garnishes. Coconut milk has a particular weighty creaminess, called lemak, that can make some curries and soups too rich. Here, a combination of coconut milk and half-and-half is used to balance the broth.

2 tablespoons vegetable oil
1 small onion, minced
1 tablespoon minced ginger
1 tablespoon minced lemongrass or pale green cilantro roots
2 garlic cloves, minced
1 teaspoon dark red chili paste, such as sambal, more for serving
3/4 pound boneless, skinless chicken thigh or breast meat, thinly sliced and cut into bite-size pieces
3 tablespoons curry powder, preferably Malaysian, Thai or Vietnamese
1/2 teaspoon paprika
1 (14-ounce) can unsweetened coconut milk
1/2 cup half-and-half
4 cups chicken stock
1/4 teaspoon ground turmeric
2 tablespoons fish sauce
1 tablespoon sugar, more to taste
About 12 makrut lime leaves or curry leaves, fresh or frozen (optional)
8 ounces dried thin rice noodles (bun or vermicelli), or other Asian noodles such as udon or lai fun
Salt to taste
1 cup bean sprouts
3 tablespoons chopped cilantro
2 scallions, cut into thin rings
2 shallots, thinly sliced and deep fried in vegetable oil until brown (optional)
Quartered limes for serving

Steps:

  • Heat oil in a medium pot over medium heat. Add onion, ginger and lemon grass and cook, stirring, until softened, about 10 minutes. Do not brown; reduce heat if necessary. Add garlic and chili paste and stir until fragrant. Raise heat, add chicken and stir-fry one minute. Add curry powder and paprika and stir to coat. Then add coconut milk, half-and-half, chicken stock, turmeric, fish sauce, sugar and lime or curry leaves. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 7 minutes.
  • Meanwhile, cook rice noodles in boiling water according to package directions (about 4 minutes). Rinse and drain.
  • Taste broth and adjust seasonings with salt and sugar. Divide noodles into large soup bowls. Bring broth to a boil, then ladle over noodles. Top with bean sprouts, cilantro, scallions and fried shallots, if using. Pass limes and sambal at the table.

4 cups chicken stock
5 garlic cloves, peeled and cut into large chunks
2 -3 tablespoons fresh ginger, peeled and cut into large chunks
1 tablespoon green curry paste
2 teaspoons coriander seeds
1 teaspoon cumin seed
1/2 teaspoon black peppercorns
3/4 cup cilantro leaves and stems, plus additional
1/2 cup chopped fresh cilantro leaves, for garnish, loosely packed
1 cup unsweetened coconut milk
3/4 cup shallot, thinly sliced
1 cup sliced mushrooms
1 boneless chicken breast, cut into 1/4-inch strips
2 tablespoons fish sauce (nam pla)
2 tablespoons fresh lime juice
2 teaspoons brown sugar
1 jalapeno, sliced into rings (optional)
1 tomatoes, small, seeded and diced, for garnish
1/2 cup coconut flakes, freshly shaved and toasted, for garnish

Steps:

  • In a large heavy-bottom pot over high heat, combine chicken stock, garlic, ginger, curry paste, coriander, cumin, peppercorns and cilantro.
  • Bring to a boil; reduce heat and simmer 30 minutes.
  • Strain broth over a bowl through a fine-mesh sieve; discard solids.
  • Return broth to pot; add coconut milk, shallots, mushrooms and chicken.
  • Return to a boil, then reduce heat to a simmer and cook until chicken is cooked through, 5 to 7 minutes.
  • In a small bowl, combine fish sauce, lime juice, brown sugar and jalapeño, if desired; stir until sugar is dissolved, then add mixture to soup.
  • Garnish with tomato, coconut shavings and cilantro; serve hot.

The coconut and curry make it feel hearty and warm while the coriander and zest add surprising fresh and light tones. It's honestly one of our favorite recipes and friends and family always ask for the recipe. So here it is! Wether you like it spicy or mild we suggest having a bottle or Sriracha nearby so that everyone can customize their own bowl!

3 (12 ounce) cans coconut milk
2 tablespoons Thai curry paste
1 bunch cilantro
3 chicken breasts, thinly sliced
4 cups chicken broth
2 carrots, shredded
4 -5 fresh lime leaves
2 stalks lemongrass, halved lengthwise, woody leaves removed
2 tablespoons fish sauce
2 limes
1 cup ginger
1 bean sprouts
4 ounces rice noodles
1 bunch cilantro leaf, rinsed well
2 -3 green onions, thinly sliced

Steps:

  • Preparation.
  • Approximate time: 10 mins.
  • Cut the stems off the cilantro. Chop into small pieces and set aside. Wash the leaves. Set aside 80% of the leaves which will later be added to the soup. The other 20% you can set aside for a garnish. Cut the chicken into thin slices that will cook easily. About 2 by 1 (inches). Set aside.
  • Take the hard exterior off the lemon grass. Cut it once lengthwise. (Do not cut it into small pieces as you will be removing these before serving). Set aside.
  • Grate the outside of your two limes and save the zest for later. Roll the limes with the palm of your hands to loosen the juices. Squeeze into a bowl and save for later. Also save the lime leaves if you have them (these are often hard to find).
  • Grate the frozen ginger and set aside.
  • Julienne the carrots into thin slices. See a one minute tutorial here. Or if you have a spiralizer you are also use that.
  • Now that you've prepare all your ingredients, you will find the actual cooking part much less stressful!

  • We craft our recipes with PREP first because it's easier for you but most recipes don't come that way. You do NOT want to be reading the recipe for the first time while you cook because often the steps are not sequential. Steps that require the most preparation time can sneak up on you . This is especially inconvenient when your attention needs to be on timing things if you have already started cooking.
  • Your goal is to mimic a cooking show and have all those little bowls with the ingredients pre-measured, vegetables pre-washed, chopped, and ready to go.   • A can of coconut milk has a top layer of cream and a bottom layer of liquid. Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle.
  • Add the cilantro roots and chicken and sauté until the chicken is cooked through, about 5 minutes.
  • Add the coconut juice from the first can and all the contents of the second and third cans along with the chicken broth, carrot, lime leaves, lemon grass, fish sauce, ginger, and lime zest and juice. Simmer for 20 minutes or so.
  • Stir in the bean sprouts. Add the rice noodles, gently pushing them beneath the surface of the broth. Turn off the heat and let stand until the noodles soften, about 3-5 minutes. Rice noodles just need to soak in the hot water (no cooking required) but you don't want to over cook them so keep an eye on them and use your judgement.
  • Stir in most of the cilantro leaves. Scoop out the lemon grass stalks. Taste and season with a touch more salt (or soy sauce) as needed. Ladle into large bowls and garnish with the green onions and remaining cilantro leaves. Add Sriracha for extra spice.

6 skinless chicken drumsticks
6 skinless chicken breast halves
3 1/2 cups ice water
1 cup plain nonfat yogurt
vegetable oil cooking spray
1 cup dried Italian breadcrumbs
1 cup all-purpose flour
1 tablespoon Old Bay Seasoning
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 400°F.
  • Remove skin from chicken pieces.
  • Place all chicken pieces in a large bowl with the ice water.
  • Put yogurt in a medium bowl; set aside.
  • Spray a baking sheet with vegetable oil.
  • Combine all breading ingredients in a large, tight-sealing bag.
  • Shake to mix.
  • Remove two pieces of the chicken from the ice water.
  • Roll each piece in yogurt.
  • Put chicken in plastic bag with the breading mix.
  • Seal and shake, coating each piece thoroughly.
  • Place on oiled baking sheet.
  • Repeat with remaining chicken pieces.
  • Spray chicken lightly with vegetable oil.
  • Place baking sheet on bottom of the preheated 400°F oven.
  • Bake for 1 hour, turning pieces over every 20 minutes for even browning.
