1/2 cup chopped fennel bulb
1/2 cup chopped sweet onion
1/2 cup chopped green pepper
2 teaspoons butter
1/4 cup seasoned bread crumbs
1/4 teaspoon plus 1/8 teaspoon salt, divided
1/4 teaspoon pepper
1 package (20 ounces) lean ground turkey
1 cup chopped tomato
2 tablespoons minced fresh parsley
2 teaspoons olive oil
5 slices Italian bread (3/4 inch thick), toasted
Chopped fennel fronds, optional

Steps:

  • In a large nonstick skillet, saute fennel, onion and green pepper in butter until crisp-tender. Transfer to a large bowl; cool slightly. Add the bread crumbs, 1/4 teaspoon salt and pepper. Crumble turkey over mixture and mix well. Shape into five patties. Cover and refrigerate for at least 1 hour., In a small bowl, combine the tomato, parsley, oil and remaining salt; set aside., Using long handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes or until a thermometer reads 165° and juices run clear. Serve on toast with tomato mixture. Sprinkle with fennel fronds if desired.

3 garlic cloves, peeled
3 teaspoons olive oil, divided
2 tablespoons mayonnaise
1 teaspoon prepared pesto
1/2 teaspoon Italian seasoning
2 slices whole wheat bread
4-1/2 teaspoons honey
1-1/2 teaspoons Dijon mustard
1/4 teaspoon salt
Dash pepper
1/2 pound lean ground turkey
2 red lettuce leaves
2 slices tomato
2 slices sweet onion

Steps:

  • Place garlic on a double thickness of heavy-duty foil. Drizzle with 1 teaspoon oil. Wrap foil around garlic. Bake at 425° for 15-20 minutes or until garlic is softened. Cool for 10 minutes., Meanwhile, in a small bowl, combine mayonnaise and pesto; set aside. In another small bowl, combine Italian seasoning and remaining oil; brush over bread. Set aside., Squeeze softened garlic into a large bowl. Add the honey, mustard, salt and pepper. Crumble turkey over mixture and mix well. Shape into two patties. , Grill, covered, over medium heat for 5-7 minutes on each side or until no longer pink. Grill bread for 1-2 minutes on each side or until toasted. Top each slice of bread with lettuce, burger, tomato, onion and 1 tablespoon mayonnaise mixture.

Number Of Ingredients 8

1 lb. ground turkey
3 to 4 peaches, halved, pitted, diced and divided
salt and pepper to taste
4 slices Monterey Jack cheese
1/2 c. blueberries
1/4 t. chili powder
4 thick slices country bread, toasted
Garnish: fresh mint

Steps:

  • In a bowl, combine turkey, 1/4 of peaches, salt and pepper. Mix well and form into 4 burgers. Grill over medium-high heat until no longer pink, about 5 minutes per side. Top each burger with a cheese slice; cover and cook for one minute more. Meanwhile, in a large skillet over medium heat, combine remaining peaches, blueberries and chili powder. Cook, stirring occasionally, until heated through, about 5 minutes. Serve each burger on a toasted bread slice, topped with peach mixture. Garnish with fresh mint. Makes 4 servings
