OPEN-FACED SANDWICH HAM AND BOILED EGG WITH CHIVES

Steps:
- Butter the bread.
- Place a leaf of lettuce on top of the sandwich and a slice of ham on top of the lettuce leaf.
- Put sliced hardboiled eggs on top of the ham and sprinkle chopped chives over the sandwich.

NORWEGIAN OPEN FACED SANDWICHES
My DBIL was born in Norway and really likes his heritage dishes to eat. This is his favorite lunch or snack. He uses all kinds of breads...except what he calls (American) Air Bread. When I have visited it appears his preference is Pumpernickel and Sourdough. My sister says that when they go to Norway to visit DBIL's lifelong friend...that the friend's wife serves these open-faced sandwiches all day long. Any kind of meat and cheese can be used...I'm simply mentioning those which my DBIL seems to eat the most often. At Norwegian parties I have attended the 'open faced' sandwiches were premade with various meats and cheeses and stacked beautifully on a large platter.

Steps:
- Butter each slice of bread with half the butter.
- Spread half the mustard on top of each buttered slice of bread.
- Lay a slice of meat on top of the 2 slices of bread.
- Lay half the cheese on top of the meat.
- Serve with the Pickles and olives on the side.
- This makes 2 topless sandwiches which is what 'open faced' means.
- Can be sliced in half if bread is too large or eaten with a knife and fork.

- Make egg salad: In a medium saucepan, cover eggs with water. Bring to a boil; cook, uncovered, 2 minutes. Cover pan, and remove from heat; let stand 10 minutes. Hold eggs under cold running water to stop the cooking. Peel eggs.
- Slice 2 eggs with a knife or an egg slicer. Set aside eight of the slices for eyes, and place remaining pieces in a bowl. Add unsliced eggs to bowl, and mash with a fork. Add mayonnaise, mustard, salt, and pepper; stir to combine.
- Spread a thin layer of mayonnaise over each slice of bread. Cover bread with egg salad, or layer on sliced ham. Make faces using the egg-yolk slices, egg salad, and the remaining toppings, as desired. Serve immediately.

VARIATIONS 1.hearty white bread, horseradish butter, smoked salmon slices, pickle slices, garnish with chives and lemon wedge. 2.whole grain bread, salami, fried egg, salt and pepper to taste, sliced green olives 3. whole grain bread, butter, slices of hard boiled egg, slice of radish on each egg, sea salt, garnish with chopped green onion 4. whole-grain black/dark rye bread, smear with liver sausage fresh or smoked, garnish with slices of dill pickles.
