A salad served with fish. A Roma tomato and minced onion are used in the slaw. Quick to prepare and a minimal amount of dressing is used since the chopped pear is juicy. The dressing in this recipe brings the flavors together. .Note: I serve a dish of fresh pomegranate seeds to be passed if guests want a satisfying crunch and color to their salad.

2 1/2 cups shredded green cabbage
1 bartlett pear, peeled, cored, chopped
1 roma tomato, chopped
1/3 cup minced white onion
2 tablespoons thousand island dressing

Steps:

  • .Add shredded cabbage, ,chopped prepared pear, chopped tomato and minced onion in a serving bowl. Cover and refrigerate.

PORK CHOPS WITH PEAR-PECAN SLAW

4 bone-in center-cut pork chops (1 inch thick; about 10 ounces each)
1 teaspoon paprika
1/2 teaspoon dried thyme
Kosher salt and freshly ground pepper
1/3 cup roughly chopped pecans
1 tablespoon extra-virgin olive oil
1/4 large head red cabbage, shredded (about 4 cups)
1/3 cup dried cranberries
1 pear, chopped
2 scallions, chopped
3 tablespoons apple cider vinegar

Steps:

  • Season the pork chops all over with the paprika, thyme, 3/4 teaspoon salt and a few grinds of pepper; set aside. Toast the pecans in a large dry skillet over medium heat, stirring occasionally, about 5 minutes; transfer to a small bowl.
  • Heat the olive oil in the skillet. Add the pork chops and cook until well browned, about 6 minutes per side (a thermometer inserted sideways into the center should register 145 degrees F). Remove to a large plate and let rest.
  • Add the cabbage to the skillet and cook, stirring occasionally, until slightly wilted, 1 to 2 minutes; remove from the heat. Add the dried cranberries, pear, scallions, vinegar and toasted pecans. Season with salt and pepper and toss to coat. Serve the pork chops with the slaw.

1 tablespoon canola oil
1 medium yellow onion, sliced
1 head green cabbage, shredded (reserve half for Online Round 2 Recipe Cabbage and Pear Slaw)
Kosher salt, to taste
Freshly ground black pepper, to taste
1 quart chicken broth
1/2 cup apple cider, reserved from Frosty Sparkling Apple Cider
Reserved dumplings from the Parsley Dumpling

Steps:

  • In a medium pot over medium heat, add the oil. When it is hot, add the onion and cook until it begins to soften, 2 to 3 minutes. Add the cabbage, season with salt and pepper, and cook until the cabbage begins to soften, about 3 to 4 minutes. Add the chicken stock and cider, bring it to a boil, reduce to a simmer, and cook until the cabbage and onions are soft, about 8 to 10 minutes. Add the dumpling and heat through. Taste and adjust seasoning with salt and pepper.
