These are easy with the help of your bread machine and taste way better than the store bought rolls. Directions are given for a 1 1/2 lb. machine. Note: in my photo the rolls are pictured with "Recipe #287863", which is delicious! 6/20/10 note: Many reviewers have noted the dough seems sticky. I always watch my machine as it starts to knead the dough and if it is looking sticky at the time, add more flour then. However, I am changing the recipe from 3 Cups flour to 3 1/4 cups flour today so definitely don't add additional flour unless the dough looks too moist.

1/4 cup butter
1 cup onion, minced
3/4 cup water, room temperature
2 tablespoons water, room temperature
1 egg
3 1/4 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoons sugar
2 tablespoons nonfat dry milk powder
1/2 teaspoon onion powder
2 teaspoons yeast
1 egg
1/2 teaspoon salt

Steps:

  • In a small skillet over medium heat, melt the butter; add onion. Saute onion about 10 minutes until tender, but not browned. Remove pan from heat and allow onion to cool slightly.
  • Reserve 1/4 cup of the onion mixture; set aside. Place remaining onion mixture and dough ingredients in bread pan, select the Dough setting, and press start.
  • When dough cycle is complete, turn dough onto a floured countertop or cutting board. Gently roll and stretch dough into a 12-inch rope. With a sharp knife, divide dough into 10 pieces.
  • Grease a large baking sheet. Roll each piece of dough into a ball and then flatten slightly. Place rolls on prepared sheet. In a small bowl, beat together remaining egg and 1/2 teaspoon salt; brush egg mixture over each roll. Spread approximately 1 teaspoon of reserved onion mixture on each roll. Let rise in warm oven 30 to 45 minutes until doubled. (Hint: To warm oven slightly turn oven on Warm setting for 2 minutes, then turn it off and place covered dough in oven to rise. Remove sheet from oven to preheat.).
  • Preheat oven to 375°F Bake rolls 20 minutes until they are golden and onion is brown, but not burnt. Remove from oven and cool on racks.

MULTIGRAIN ONION ROLLS OR BREAD (BREAD MACHINE)

The original recipe for these rolls called for ingredients not common in the US. So I fiddled with it and came up with these rolls. The onion taste goes throughout but is not overwhelming. They make wonderful sandwiches or accompaniment to soup or salad.

Number Of Ingredients 15

1 large onion, finely chopped
1/4 cup butter
1 1/4 cups water
2 cups bread flour
1 cup whole wheat flour
1/2 cup rye flour
1/4 cup regular oatmeal or 1/4 cup quick oatmeal
1 1/2 teaspoons vital wheat gluten
1 teaspoon salt
2 teaspoons honey
2 1/2 teaspoons active dry yeast (one envelope)
1 tablespoon sunflower seeds
1 tablespoon steel cut oats
2 tablespoons sesame seeds
cornmeal

Steps:

  • Melt the butter in a skillet and saute the chopped onions, stirring frequently, until softened and lightly browned, about 8-10 minutes. Set aside to cool.
  • Place all ingredients except for the sunflower seeds, steel-cut oats and sesame seeds in the pan of your bread machine, in the order recommended by the manufacturer. Select the dough cycle and start.
  • About 5 minutes before the end of the cycle, add the onions (with the butter), seeds and steel-cut oats.
  • After dough has risen, punch it down and turn out. Divide into twelve pieces and shape as desired. Place on baking sheet dusted with cornmeal. Cover and let rise until doubled, about 40-45 minutes.
  • Place in a preheated 400 deg. F. oven and bake until golden brown, about 20 minutes. Turn out on wire rack to cool.
  • Note1: Adding the onion and seeds towards the end keeps them recognizeable in the finished roll, although the sesame seeds are not really visible in any event. The ball of dough will "come apart", but should come back together again.
  • Note2: Substitute other seeds you may like, such as poppy or flax. Also feel free to change the proportion of the flours, but I find that the above makes a really nicely flavored bread.
  • Note3: This can also be baked as a loaf, for about 35 minutes or until tests done.

Your family will thank you for the great smells coming from your kitchen when you bake this bread. I use a bread machine to mix my ingredients when making homemade bread, because I have arthritis and fibromyalgia and can no longer knead bread dough very easily. So, the ingredients are listed in the order they go into my bread machine. I promise you this will still work even if you don't use a bread machine. The techniques I use makes a wonderful crust outside with soft center. Perfection! I hope you will give it a try.

1-1/2 cup(s) water, room temperature
2 tablespoon(s) extra virgin olive oil
1-1/2 teaspoon(s) coarse salt (sea salt or kosher)
4 cup(s) bread flour (reserve about 2 tablespoons for kneading later)
2 tablespoon(s) dried minced onions
2 tablespoon(s) dried dill weed
2 teaspoon(s) yeast, active dry
ADDITIONAL EQUIPMENT/ITEMS USED:
- parchment paper
- spray oil (butter flavor preferred)
- coarse salt to sprinkle
- bread machine
- dutch oven with heat-safe lid (or 4 to 6 quart casserole dish)

Steps:

  • ADD ingredients to your bread machine in the order listed.
  • Select 'French/Italian Bread' setting on the bread machine menu. Push START.
  • Allow bread machine to work through the first mixing cycle (about 45 to 60 minutes), then allow it to enter into the second mix and rise cycle just until the machine stops mixing and begins the rise stage (about 20-minutes). REMOVE from bread machine and handle gently, kneading 5 or 6 turns on floured surface to shape for the baking pan (Dutch oven or casserole dish heat-safe to 500-degrees). Do not over-mix but make sure the dough is coated with flour.
  • Tear a piece of parchment paper larger than the baking container. Set it into a large bowl for the dough to rise before baking. Lightly spray the parchment with oil and lightly sprinkle coarse salt on the oiled parchment paper.
  • SET the dough onto the parchment paper in the large bowl. Score 2 or 3 times with sharp knife if desired then cover with either a cloth or oiled plastic wrap. Set the bowl in a warm area of the kitchen, probably near your stove. Allow to rise for about 45-minutes.
  • About 30-minutes into the dough rising, PRE-HEAT oven to 450-degrees and set the empty Dutch oven (or casserole dish) with heat-proof lid on top, into the oven to get hot (takes about 15 to 20 minutes). You will transfer the dough, parchment and all, into the hot Dutch oven when it finishes rising.
  • When dough finishes rising, remove Dutch oven from the hot oven (do not leave oven door open while transferring dough to the baking dish). Remove the lid and gently lift and transfer the dough including the parchment paper into the hot Dutch oven. Place the lid back onto the Dutch Oven and set it back into the hot oven.
  • BAKE for 30-minutes with the lid on. At the 30-minute mark, take bread out of oven. Remove the lid. Remove the parchment paper. RETURN bread to the Dutch oven without a lid and bake for another 15 to 20 minutes until a nice golden crust forms.
  • REMOVE from oven when done. Cool for at least 10-minutes before serving. STORE cooled bread in a bread bag or plastic storage bag.

1/4 cup water
1 egg (slightly beaten)

My local bagel shop makes onion breadsticks out of bagel dough scraps. And they inspired me to make these. They came out delicious, and of course with help from my bread machine they were super easy! I used the bagel recipe from my bread machine manual but substituted all purpose flour instead of bread flour that is normally used in a bagel. We will be enjoying them tonight with steak and steamed broccoli.

3/4 cup water, warmed
2 tablespoons water, warmed
1 teaspoon lemon juice
1 1/2 tablespoons sugar
2 1/2 cups flour
1 3/4 teaspoons active dry yeast
1/2 cup diced onion
flour, for dusting

Steps:

  • Add water (yes 3/4 cup AND the 2tbs) to the bread machine followed by the lemon juice, sugar, flour, and then the yeast.
  • Set bread machine to the dough setting and start the cycle.
  • When cycle is done, remove dough onto a lightly floured surface and knead about 5 minutes.
  • Using a floured rolling pin, roll dough out into a large rectangle.
  • Sprinkle dough with about 3/4 of the onions, reserving some to sprinkle on top later.
  • Starting from the side closest to you roll the dough up into a tube shape.
  • Slice the dough into 1 inch slices as if you were making cinnamon rolls.
  • Place each slice, on it's side, on a greased baking sheet and cover loosely with plastic wrap.
  • Allow rolls to rise for about 30 mins or until doubled in size. At this time you can sprinkle the remaining diced onions on the tops of each roll.
  • While rising, preheat oven to 400 degrees farenheit.
  • Bake about 20-25 mins or until golden brown.
  • Cool and enjoy!
