Number Of Ingredients 5

2 tablespoons red wine vinegar (or any vinegar you like)
1 tablespoon very finely slivered shallots or a couple of very thin onion slices, quartered
1/8 teaspoon cayenne pepper
1/8-1/4 teaspoon salt
6-8 mint leaves, finely chopped (optional)

Steps:

  • Mix all the ingredients together in a small bowl and leave for 30 minutes to steep.

Pork Chops in a Sweet Chili and Onion Sauce with Creamy Cilantro Potato Salad image

2 1/2 pounds russet potatoes (3 medium-large potatoes), peeled and cubed
Coarse salt
4 tablespoons extra-virgin olive oil (EVOO)
4 1 1/2-inch-thick boneless center-cut pork chops
Freshly ground black pepper
1 large red onion, finely chopped
1 heaping tablespoon chili powder (a heaping palmful)
1/2 tablespoon ground cumin (half a palmful)
3 garlic cloves, chopped
2 tablespoons dark brown sugar
2 cups chicken stock or broth
2 tablespoons cold unsalted butter
1/3 cup mayonnaise
1/2 cup fresh cilantro leaves (a couple of handfuls), chopped
2 tablespoons red wine vinegar (eyeball it)
3 celery ribs, finely chopped
2 red bell peppers, cored, seeded, and chopped

Steps:

  • Preheat the oven to 375°F.
  • Place the potatoes in a sauce pot and cover with water. Place over high heat and bring up to a boil, add some salt, and simmer for 10 to 12 minutes, or until just tender. Drain the potatoes and spread out onto a rimmed cookie sheet to cool quickly, about 10 minutes.
  • While the potatoes are working, preheat a large skillet over medium-high heat with 2 tablespoons of the EVOO (twice around the pan). Season the pork chops liberally with salt and pepper. Place the chops in the skillet and sear for about 2 minutes on each side to caramelize. Transfer the chops to a rimmed cookie sheet and place in the oven to finish off, 7 or 8 minutes, until the meat is firm to the touch, but not tough. Remove from the oven and let the chops rest, covered with a piece of aluminum foil, for a few minutes.
  • While the chops bake, return the skillet to the heat and add the remaining 2 tablespoons of EVOO, three quarters of the chopped onions, the chili powder, cumin, two thirds of the chopped garlic, the brown sugar, salt, and pepper. Cook the mixture, stirring frequently, for 2 to 3 minutes. Add the chicken stock and simmer until reduced by half. Once reduced, turn off the heat and whisk in the cold butter.
  • While the sweet chili-onion sauce is cooking, in a large bowl, combine the mayonnaise, cilantro, the remaining chopped onions, the remaining chopped garlic, the red wine vinegar, salt, and pepper. Add to the dressing the chopped celery and red bell peppers. When you are ready to serve, add the cooled potatoes. Stir the potatoes to combine, and check the seasoning.
  • Pour the sweet chili-onion sauce over the rested pork chops; serve the creamy cilantro potato salad alongside.

FRENCH'S FRIED ONION MEATLOAF WITH CHILI SAUCE



French's Fried Onion Meatloaf with Chili Sauce image

This is yummy and I am not a meatloaf fan. Just enough spice to make it interesting.

1 pound(s) ground beef
1/2 pound(s) ground pork
1 medium onion chopped
1 cup(s) french's fried onions crushed
1/2 cup(s) bread crumbs
1 large egg
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper
1/2 teaspoon(s) red pepper flakes
1 jar(s) chili sauce

Steps:

  • Combine all ingredients except chili sauce. Mix well. Shape into loaf.
  • Preheat oven 325 degrees. Place meatloaf in baking pan. Bake 45 minutes.
  • Pour chili sauce over top and return to oven for 15 more minutes.

ONION CHILI SAUCE

This is wonderful on hot dogs and hamburgers, it's even good on sandwiches, and will keep in the fridge for about a week or so. Plan ahead the sauce needs to chill overnight before using. You will really like this! If you love heat, then increase jalapeno peppers and the hot sauce.

Number Of Ingredients 11

1 1/2 lbs sweet onions, halved lenghwise and sliced
1/4 cup cooking oil (you might have to use more than 1/4 cup)
1 medium green bell pepper, cut into strips
2 jalapeno peppers, halved, seeded and thinly sliced (can use more or less)
3/4 cup store-bought chili sauce
2 -4 teaspoons hot sauce (I use President's Choice brand Louisiana hot sauce, it comes in a 6 ounce bottle)
1 tablespoon honey (or to taste)
salt (I use about 1/2 teaspoon)
black pepper
1/2 teaspoon cinnamon
1/8 teaspoon clove

Steps:

  • In a large skillet cook onion, covered in hot oil for about 20 minutes over medium heat, stirring occasionally (reduce heat to medium-low if onions begin to brown).
  • Add in the bell pepper and jalapeno peppers; cover with a lid and cook for 5 minutes, or until peppers are just tender.
  • Add in all remaining ingredients; mix to combine and bring to a boil; reduce the heat and simmer uncovered for about 5 minutes.
  • Cool to room temperature.
  • Refrigerate overnight beofre using.
