ONE-PAN TACO MACARONI AND CHEESE RECIPE BY TASTY

Steps:
- In a 4-quart chicken fryer, heat approximately 1 tablespoon olive oil over medium-high heat and cook the onions until they begin to soften.
- Add garlic and stir for 30 seconds.
- Add the ground beef and 1 tablespoon of taco seasoning. Using your spatula, break up the ground beef and stir until cooked. Drain the excess liquid from the pan.
- Add water, beef stock, pasta, tomatoes, and 1 tablespoon of taco seasoning back to the pan. Stir to combine.
- Cook over low heat for 15 minutes, stirring twice to keep the pasta from sticking to the bottom of the pan.
- Increase heat to medium after 15 minutes, and stir pasta until most of the liquid is gone.
- Turn off heat and add the shredded cheese. Stir until cheese is completely melted.
- Top with green onions.

- Sauté vegetables: Heat oil in a large, deep skillet or large pot over medium heat. Add onion and celery and cook until softened but not browned, about 3-4 minutes.
- Brown beef: Increase heat to medium-high and add the ground beef. Cook until browned, breaking up meat to crumble as it cooks. Stir in taco seasoning, then pour in chciken broth, scraping any browned bits off the bottom of the skillet.
- Add remaining ingredients: Add salsa, pasta, red pepper, corn, salt and pepper to skillet and stir well. Bring to a boil.
- Simmer: Reduce heat to a simmer, cover with a lid and cook until sauce has thickened and pasta is done (about 10-15 minutes, depending on your pasta). Uncover and stir every 2-3 minutes to keep pasta from sticking to bottom. Depending on thickness of your pasta, you may need to add up to ½ extra cup of broth during cooking if it's looking dry. Cook uncovered for final 2-3 minutes.
- Finish: Once pasta is done, take skillet off the heat. Check for seasoning and add salt and pepper, if needed. Stir in cheese and let pasta sit for 1-2 minutes or until cheese has melted. Serve immediately.

- In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
- Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
- Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
- Remove from heat. Sprinkle cheese on top and cover.
- Serve once cheese is melted!

- Bring mixture to a boil.
- Stir, cover and reduce heat to a simmer.
- Cook for about 15 minutes until pasta is tender.
- Turn off heat and stir in cheese.
- Season with additional salt and pepper if needed.
