1 lb ground beef
1 small white onion, diced
1 tablespoon garlic, minced
2 tablespoons taco seasoning, divided
½ lb small macaroni, dry
1 cup water
2 cups beef stock
2 cups shredded white cheddar, yellow cheddar works as well
1 cup tomato, diced
green onion, diced, for garnish

Steps:

  • In a 4-quart chicken fryer, heat approximately 1 tablespoon olive oil over medium-high heat and cook the onions until they begin to soften.
  • Add garlic and stir for 30 seconds.
  • Add the ground beef and 1 tablespoon of taco seasoning. Using your spatula, break up the ground beef and stir until cooked. Drain the excess liquid from the pan.
  • Add water, beef stock, pasta, tomatoes, and 1 tablespoon of taco seasoning back to the pan. Stir to combine.
  • Cook over low heat for 15 minutes, stirring twice to keep the pasta from sticking to the bottom of the pan.
  • Increase heat to medium after 15 minutes, and stir pasta until most of the liquid is gone.
  • Turn off heat and add the shredded cheese. Stir until cheese is completely melted.
  • Top with green onions.
  • Enjoy!

½ tablespoon olive oil
1 pound ground beef
1 onion (chopped)
1 stalk celery (chopped)
1 tablespoon taco seasoning
3 cups chicken broth (or more, depending on your pasta (some kinds need more liquid, but only add more as it cooks and is too dry))
1 cup salsa
1 (12-oz) box small pasta shapes
1 red pepper (chopped)
½ cup sweetcorn
salt & pepper (to taste)
½ cup shredded Mexican blend cheese (or more to taste)

Steps:

  • Sauté vegetables: Heat oil in a large, deep skillet or large pot over medium heat. Add onion and celery and cook until softened but not browned, about 3-4 minutes.
  • Brown beef: Increase heat to medium-high and add the ground beef. Cook until browned, breaking up meat to crumble as it cooks. Stir in taco seasoning, then pour in chciken broth, scraping any browned bits off the bottom of the skillet.
  • Add remaining ingredients: Add salsa, pasta, red pepper, corn, salt and pepper to skillet and stir well. Bring to a boil.
  • Simmer: Reduce heat to a simmer, cover with a lid and cook until sauce has thickened and pasta is done (about 10-15 minutes, depending on your pasta). Uncover and stir every 2-3 minutes to keep pasta from sticking to bottom. Depending on thickness of your pasta, you may need to add up to ½ extra cup of broth during cooking if it's looking dry. Cook uncovered for final 2-3 minutes.
  • Finish: Once pasta is done, take skillet off the heat. Check for seasoning and add salt and pepper, if needed. Stir in cheese and let pasta sit for 1-2 minutes or until cheese has melted. Serve immediately.

1 lb ground beef
1 can tomato, diced (15 oz - 425g)
1 can whole kernel corn, (15 oz - 425g)
1 can tomato sauce, (15 oz - 425g)
2 cups water
1 package taco seasoning
salt, to taste
pepper, to taste
2 cups elbow macaroni, uncooked
1 ½ cups colby jack cheese

Steps:

  • In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
  • Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
  • Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  • Remove from heat. Sprinkle cheese on top and cover.
  • Serve once cheese is melted!

1/2 teaspoon salt
Pinch of black pepper
1 ounce packet taco seasoning (or about 3 1/2 tablespoons homemade taco seasoning)
2 cups water
1 cup jarred mild salsa
8 ounces uncooked rotini pasta
1 1/2 cups shredded Mexican-style cheese
Optional toppings - chopped tomatoes (avocado, crushed tortilla chips, chopped cilantro)

Steps:

  • Preheat a large deep skillet over medium heat.
  • Add ground beef and season with salt and pepper.
  • Cook, stirring occasionally until cooked thoroughly.
  • Drain grease.
  • Stir taco seasoning into ground beef then stir in water, salsa and pasta noodles.
  • Bring mixture to a boil.
  • Stir, cover and reduce heat to a simmer.
  • Cook for about 15 minutes until pasta is tender.
  • Turn off heat and stir in cheese.
  • Season with additional salt and pepper if needed.
  • Serve with optional toppings if desired.
