ONE POT CREAMY CHICKEN AND NOODLES

One Pot Creamy Chicken and Noodles image

Classic chicken and noodles with vegetables in a creamy, cheesy sauce, all cooked in one pot for easy clean up.

Provided by Kristin Maxwell

Categories     Main Course

Time 45m

Number Of Ingredients 15

2 pounds boneless, skinless chicken breasts (cut into 1-inch pieces)
2 tablespoons olive oil
1 small yellow or white onion (diced)
3 medium carrots (peeled and sliced)
2 celery stalks (sliced)
1 tablespoon minced garlic
Salt & Pepper (to taste)
10 ounces cream of chicken soup
1 1/4 cup nonfat milk ((fill the chicken soup can))
2 cups low sodium chicken broth
1 tablespoon dried parsley
1/2 teaspoon dried thyme
1 teaspoon garlic powder
8 ounces dry fettuccine pasta (about 1/2 of a regular box)
1 1/2 cups shredded sharp cheddar cheese (divided)

Steps:

  • Heat olive oil in a 5 quart pot or deep saute pan. Add chopped vegetables and minced garlic. Saute over medium-high heat for about five minutes, or until vegetables are just becoming tender.
  • Add chicken and season with salt and pepper. Continue to saute over medium heat until chicken is no longer pink on the outside. It does not have to be cooked through since it will continue to cook in the sauce.
  • Stir in cream of chicken soup, milk (fill the chicken soup can), chicken broth, pasta and dry seasonings.
  • Bring to a boil, then turn heat down to low. Simmer uncovered for about 20 minutes or until pasta is tender, stirring every five minutes to keep pasta from sticking together.
  • Once pasta is cooked to al dente, remove from heat and stir in 1 cup of cheddar cheese until melted. Sprinkle with remaining cheese. Cover pot and let rest for 5-10 minutes to thicken the sauce.
  • Sprinkle with fresh chopped parsley for garnish.

Yield 6

Number Of Ingredients 13

4 slices bacon
¾ pound chicken breasts, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 medium shallot, finely chopped
1 clove garlic, minced
2 cups water
1 cup whole milk
4 cups elbow macaroni
1 tablespoon ranch dressing mix
3 cups broccoli florets
1 (8 ounce) package shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
  • Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
  • Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.
  • Return chicken to the Dutch oven and add broccoli. Cook until pasta is tender and chicken is cooked through, 3 to 4 minutes. Stir in Cheddar cheese and sour cream to combine. Crumble cooked bacon over the top and serve hot.

EASY ONE POT CHICKEN AND NOODLES

Easy One Pot Chicken and Noodles image

This chicken and noodles recipe is a time-saving family meal that's made all in one pot in just 30 minutes! It has tender chicken and buttery egg noodles all smothered in a creamy sauce.

Provided by Natasha Bull

Categories     Main Course

Time 30m

Number Of Ingredients 10

2 tablespoons butter
1/2 medium onion (chopped)
2 cloves garlic (minced)
2 cups chicken broth
1/2 cup heavy/whipping cream
1 (10.5) ounce can condensed cream of mushroom soup
3 cups egg noodles (extra wide size)
2 cups cooked chicken (I used rotisserie)
Salt & pepper (to taste)
Chopped fresh parsley (optional, to taste)

Steps:

  • In a Dutch oven or pot, sauté the onion in the butter for 4-5 minutes over medium heat.
  • Stir in the garlic and cook for 30 seconds.
  • Add in the chicken broth, heavy cream, and cream of mushroom soup. Stir until combined and increase the heat to high.
  • Once it's boiling, add in the egg noodles. Cook for 10 minutes, uncovered, stirring fairly often. Turn the heat down (to medium or even medium-low) to maintain a rapid simmer (not a furious boil). You don't want the liquid to reduce too much before the pasta has cooked. See notes below for troubleshooting tips.
  • Stir in the chicken and let it warm through, then season with salt & pepper as needed and top with fresh parsley if using. Serve immediately.

Provided by Camille Beckstrand

1 ½ pounds chicken (cut into bite-sized pieces)
1 onion (diced)
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper (to taste)
